BAKED CURRY PUFFS
I needed something a little different for a party. I wanted something that was baked and not deep fried and came up with this recipe . I served these at a party and got rave reviews about these puffs. Serve them with your favourite dipping sauce. Use vegetables such as carrots, corn, parsnip and peas for your vegetables or use a frozen mix that has been thawed for convenience. A little Chili can be added for an extra kick also. I am guessing the amounts this mixture made but it did make quite a few!

Steps:
- In a wok or pan, heat a little oil and fry chopped garlic until golden add onion and ginger.
- Add in the minced meat and fry for 2 minutes breaking up the meat into small pieces. ( I use a separate pan to fry the meat and drain off excess fats, then add the meat to the onion mixture).
- Add potatoes, cook for further 2-4 minutes.
- Add the curry powder, water, sugar salt and pepper and simmer over a medium low heat stirring occasionally to prevent burning, until the potatoes are almost soft. (About 10 - 15 minutes).
- You may need to add a little extra water if there is no sauce left.
- Add in the mixed vegetables and coriander last and cook for a further 2 - 3 minutes until the vegetables are just starting to soften.
- Remove from heat and cool.
- Cut the puff pastry into 4 inch by 4 inch squares.
- Put some filling onto one half of the square.
- Brush edges with a little water and fold over pastry to make a rectangle or triangle shape.
- Use a fork press the sides together to seal the edges of the puff pastry, and also the makes a nice pattern.
- Brush the puffs with the egg wash (beaten egg).
- Bake in a preheated oven 185°C until a nice golden colour. (about 10 minutes).
- Arrange the curry puffs on a serving platter and serve with dipping sauce.

SRI LANKAN CHICKEN CURRY
Based on a traditional Sri Lankan family recipe, this curry is spicy and full of flavor. Try this recipe and you will love it! Serve with basmati or jasmine rice and any other curried dish.

Steps:
- Cut the chicken into bite-sized pieces. Combine the vinegar, tamarind juice, 1/4 cup curry powder, salt, and pepper in a bowl. Add chicken and toss to coat.
- Heat the coconut oil in a wok or frying pan over medium heat. Cook the sliced onion, green chiles, cardamom pods, cloves, curry leaves, ginger, and cinnamon stick until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Stir in the garlic and cook for an additional minute.
- Add the chicken mixture, water, and tomato paste. Stir and simmer until the chicken is cooked through, about 10 minutes. Add the roasted curry powder and stir until evenly dispersed.
- Gradually stir in the coconut milk and simmer for 2-3 more minutes. (Do not overheat or the coconut milk may curdle.)

- Heat oil in a large pan, add mustard seeds and when the pop add curry leaves and turmeric powder. Stir until fragrant.
- Add onions and fry for 5 minutes or until translucent.
- Add potatoes, peas, garam masala, green chilli, corinander and salt to taste. Mix well. Allow to cool.
- Cut the pastry sheets into 10cm squares and place 1 tablespoon of filling in the middle of each square. Brush the edges with water and fold to form a triangle, pressing the edges with a fork to seal.
- Arrange the triangles on a lined tray, brush with beaten egg and bake at 180C for 15 minutes or until the pastry is golden. Serve hot.

Steps:
- Preheat the oven to 350°F (180°C), or heat a large pot filled halfway with cooking oil to 350°F (180°C). Place a wire rack on top of a baking sheet.
- In large pan, add the vegetable oil, onion, chicken, salt, pepper, cumin, curry powder, and cayenne. Cook for 10 minutes, stirring occasionally, until the onion softens.
- Add the potatoes, peas and carrots, and milk and stir to combine. Cook for 10 minutes, stirring to break up the potatoes, until the curry thickens to the consistency of mashed potatoes. Remove the pan from the heat and let the curry cool for 30 minutes.
- Dust a clean surface with flour and roll out the puff pastry to flatten the seams.
- Using a wine glass, cut out 8 circles from each pastry sheet.
- Scoop 1 tablespoon of the cooled curry filling in the center of a puff pastry circle. Fold the puff pastry in half, press the edges together, and seal the edges in a folding and rolling motion.
- If baking, place the curry puffs on the prepared baking sheet and brush with the egg wash. Bake for 15 minutes, or until golden brown.
- If frying, add the curry puffs to the hot oil in batches and fry for 5 minutes, until golden brown.
- Let cool for 10 minutes before serving.
- Enjoy!

- Combine the potatoes, salt, coconut cream, green chiles, curry leaves, cayenne pepper, saffron powder, garlic, and water in a saucepan. Cook over medium heat, stirring frequently, until the coconut cream thickens, about 15 to 20 minutes.
- Test the potatoes for doneness by piercing them with the tip of a paring knife. When the potatoes are tender, remove the pan from the heat. Let stand for 5 minutes before serving. Serve with plain rice.

- Marinade your beef cubes with Sri Lankan roasted curry powder, black pepper powder, turmeric, and a bit of salt. Leave it on the counter while you prep other ingredients. (about 10mins).
- Heat 2tbsps of coconut oil in a pot. (clay pots and cast iron pots are better as they retain the heat). Add 1/4 tsp cumin seeds, 2 tsp red chili powder, and fry them in oil until the red chili powder become dark and your oil becomes red in color. Then add 3 cloves, 3 cardamoms (crush the pods lightly to open them), curry leaves, pandan leaves, cinnamon stick, fenugreek seeds to the oil, and saute for about 30seconds until you get a really good aroma.
- Now add 4 cloves of garlic chopped and fry for few seconds. Then add your chopped onion and bit of salt and fry in oil until the onions become soft and translucent.
- Add your marinated beef cubes into the oil and fry for about a minute to get a good sear on the outside of the beef pieces.
