1 lb about 3-4 large day-old everything bagel, cubed
6 slices bacon, thick-cut, diced
1 medium yellow onion, diced
3 celery ribs, diced
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large eggs
1/2 cup whipped cream cheese, plus 1 cup for serving
2 cups chicken stock
6 tablespoons thinly sliced scallions, divided
1 -2 tablespoon everything bagel seasoning

Steps:

  • Preheat oven to 350 degrees F. Grease two jumbo doughnut pans and set aside.
  • Place the bagel cubes on a baking sheet in an even layer and bake until golden brown and the bread pieces have dried out a bit, about 20 minutes. Give them a toss halfway for even browning. Remove from the oven and let cool.
  • Place a large skillet over medium-high heat. Add the bacon and cook, stirring often, until crispy. Using a slotted spoon, remove the bacon from the pan.
  • Drain all but 1 tablespoon of fat and then stir in the onion and celery. Cook until tender about 5 minutes. Season with salt and pepper.
  • In a large mixing bowl, whisk together the chicken stock, eggs, and 1/2 cup cream cheese until well combined. Add in the toasted bagel pieces, the cooked onions and celery, 3 tablespoons scallions and most of the bacon and mix until well combined and bread is well coated.
  • Divide the mixture evenly between the two pans and sprinkle with bagel seasoning. Bake until golden brown, 25 to 30 minutes. Remove from oven and let cool slightly.
  • Serve with a dollop of whipped cream cheese and garnish with remaining scallions and bacon.

2 cups blanched almond flour (I use this brand)
1 tablespoon baking powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon Italian seasoning (I use this brand of spices)
3 large eggs, divided
3 cups low fat, part skim shredded mozzarella
5 tablespoons cream cheese
1/4 cup Everything Bagel Seasoning (get the recipe here)
6 ounces cream cheese, cold

Steps:

  • Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  • In a medium mixing bowl, combine the almond flour, baking powder, garlic powder, onion powder, and dried Italian seasoning. Mix until well combined. I like to put the mixture through a flour sifter to ensure that all the baking powder gets mixed in with the rest of the ingredients.
  • Crack one of the eggs into a small bowl and fork whisk. This will be the egg wash for the top of the bagels. The other two eggs will go in the dough.
  • In a large microwave safe mixing bowl, combine the mozzarella cheese and cream cheese. Microwave for 1 minute and 30 seconds. Remove from microwave and stir to combine. Return to microwave for 1 additional minute. Mix until well combined.
  • To the mixing bowl, add the remaining 2 eggs and the almond flour mixture. Mix until all ingredients are well incorporated. If the dough gets too stringy and unworkable, simply put it back in the microwave for 30 seconds to soften and continue mixing.
  • Roll the dough into 24 even sized balls. Cut the block of cream cheese into 24 equal sized squares.
  • Take each dough ball and gently press your thumb into the center of it to create a pocket. Put a piece of cream cheese inside the pocket and shape the dough around it to seal the cream cheese into the center.
  • Pour the bagel seasoning into a shallow bowl.
  • Brush egg wash over each bagel bite and then roll it in the bagel seasoning.
  • Place the coated bagel bites in a single layer across the baking sheet. Bake for 10 to 12 minutes or until the dough is golden brown on the outside and cooked through.

1/4 c. chopped chives, plus more for serving
1 tbsp. freshly chopped sage

1/2 c. sour cream
3 c. low-sodium vegetable broth, divided
4 tbsp. butter, cut into 1/2" pieces
For the everything bagel sprinkle
1/2 c. vegetable oil
5 cloves garlic, thinly sliced
1 large shallot, thinly sliced
2 tsp. poppy seeds
2 tsp. Toasted sesame seeds

Steps:

  • Preheat oven to 350°. Lightly oil a 3-quart baking dish and set aside.
  • In a large skillet over medium-high heat, heat 2 tablespoons oil. Add onions and celery and season with salt and pepper. Cook, stirring often, until vegetables are tender, 6 to 8 minutes. Add vinegar and cook, scraping up any brown bits, until evaporated, about 1 minute.
  • Transfer vegetables to a large bowl, then add bagel pieces, chives, and sage and toss to combine.
  • In a separate medium bowl, whisk together eggs, sour cream, and 2 cups broth. Pour over bread mixture and toss until evenly moistened, adding more broth ¼ cup at a time until bagel pieces seem hydrated (you might not use it all).
  • Transfer mixture to prepared baking dish and dot top with butter. Cover dish with foil and bake until a knife inserted in the center of the stuffing comes out warm, 30 to 35 minutes. Increase heat to 425° and continue baking until top is deeply golden, 10 to 15 minutes more. Let rest 10 minutes before serving.
  • Meanwhile, in a small skillet over medium heat, heat vegetable oil. Add garlic and cook until golden brown, 2 to 3 minutes. Transfer to paper towels using a slotted spoon. Add shallot to oil and cook until golden, 4 to 6 minutes. Transfer to paper towels using a slotted spoon. 3 ½ cups bread flour

2 qt water
2 teaspoons salt

egg wash, as needed
onion, to taste
poppy seed, to taste
sesame seed, to taste
garlic, to taste
cream cheese, frozen in 1 tbsp. balls to taste

Steps:

  • Start by activating the yeast. Add yeast and malt syrup to warm water, stir until dissolved. Once the yeast mix starts bubbling, you'll know the yeast is active.
  • Combine the dry ingredients in a large mixing bowl. Add the activated yeast mix and form a loose dough in the bowl.
  • Turn dough out onto your surface and knead until everything comes together nicely. (If it's too dry, add more water a little bit at a time.) Transfer dough to an oiled bowl, cover and let the dough rest for 45 minutes.
  • While the dough is resting, prep your cream cheese. Freeze cream cheese into 1 tbsp. balls.
  • Punch down dough after 45 minutes, knead the dough a few times. Pull a handful of dough, form into a ball then flatten and wrap around a frozen cream cheese ball. Repeat with the rest of the dough. Place bagel balls on a parchment paper, cover and let it rest for 20 minutes.
  • While the bagel balls are resting, bring your poaching liquid ingredients to a boil over medium heat.
  • Take the rested bagel balls and boil in the poaching liquid for 15-20 seconds. Remove and place on parchment paper.
  • Brush with egg wash and sprinkle desired bagel toppings.
  • Bake in 325°F (160°C) preheated oven for 20 - 30 minutes until top is golden brown.

Everything Bagel Seasoning to taste

Steps:

  • Step 1 Preheat oven to 375 degrees
  • Step 2 Line a baking sheet with parchment paper then spray with cooking spray
  • Step 3 In a medium bowl, combine flour, baking powder and salt. Use a fork to stir in yogurt until mixture begins to form a crumbly, dough like mixture
  • Step 4 Lightly flour a clean work surface and your hands then move your dough onto the surface and knead a few times until you have one ball of dough
  • Step 5 Separate dough into 8 equal pieces
  • Step 6 In a small bowl, combine cream cheese and chopped scallion, divide into 8 equal portions
  • Step 7 Flatten each section of dough, place 1 portion of cream cheese mixture in the center then roll into a ball shape with the cream cheese fully concealed in the center
  • Step 8 Repeat until all cream cheese and dough are used, you should have 8 stuffed bagel bites on your prepared baking sheet
  • Step 9 Brush each bite with olive oil and roll in Everything Bagel Seasoning until covered to your preference
  • Step 10 Bake in preheated oven for 25 minutes, dough should have risen and become very lightly golden

8 ounces cream cheese, at room temperature
8 large eggs
2 1/2 cups milk
1/4 cup grated parmesan cheese
Kosher salt and freshly ground pepper
1/4 cup chopped fresh dill
1 teaspoon grated lemon zest
5 day-old everything bagels, halved horizontally and cut into bite-size pieces
2 tablespoons capers
2 tablespoons chopped fresh dill
1 pint cherry or grape tomatoes, halved
1/2 small red onion, finely diced
Kosher salt and freshly ground pepper
4 ounces smoked salmon, thinly sliced

Steps:

  • Make the strata: Butter a 9-by-13-inch baking dish. Combine the cream cheese and eggs in a blender and blend until smooth. Add the milk and parmesan and blend until smooth. Season with salt and pepper. Add the dill and blend a few seconds, then blend in the lemon zest.
  • Transfer the custard to a large bowl. Add the bagel pieces and mix to coat, pressing on the bagels to totally submerge them in the custard. Transfer the mixture to the prepared baking dish. Cover and refrigerate overnight, pressing on the bagels a few times.
  • Preheat the oven to 350˚. While it heats, remove the strata from the refrigerator, uncover and place on a baking sheet. Bake until puffed and lightly golden brown around the edges and just set in the center, about 40 minutes. Let sit for 15 minutes.
  • Make the caper relish: Combine the capers, dill, tomatoes and onion in a bowl. Season with a touch of salt and pepper. Let sit at room temperature for 15 minutes.
  • To serve, cut the strata into large round circles (like a bagel!) and place on plates. Top with the smoked salmon and relish.
