SUPER-THICK HOT CHOCOLATE

Steps:

• In a saucepan, combine the whole milk, evaporated milk and vanilla and warm up over low heat.
• Combine the cocoa powder, sugar, cornstarch and cinnamon in a bowl. Whisk the cocoa mixture into the warm milk mixture until smooth. Bring to a boil, whisking frequently to prevent it from scorching.
• Remove the hot chocolate from the heat just after it has come to a boil. The mixture should be super rich and thick!

SUPERB HOT CHOCOLATE

Steps:

• Melt chocolate bits in a double boiler over hot water and stir in the cream. Heat just to boiling point, stirring constantly. Add the cinnamon and serve in 8-ounce chocolate cups topped with flavored whipped cream.
• For mint flavored chocolate, place a mint patty in the bottom of each cup before pouring in the hot chocolate.
• For a less rich drink, use half milk and half cream, or plain whole milk in place of the heavy cream.
• To vary the drink and make it slightly alcoholic, use 1 to 2 dashes Grand Marnier instead of cinnamon.

HOMEMADE HOT CHOCOLATE

Steps:

• Heat the milk, cocoa, sugar and chocolate in a small pan over a medium heat until steaming and the chocolate has melted. Whisk to dissolve the cocoa.
• Pour into a mug, then add the cream to float on top. Grate over a little more chocolate to serve.
