SIZZLING SWORDFISH FAJITAS



Sizzling Swordfish Fajitas image

Broiled swordfish steaks and a fresh spicy salsa make these seafood wraps sizzle with flavor.

2 medium tomatoes, finely chopped (1 1/2 cups)
8 medium green onions, sliced (1/2 cup)
2 cloves garlic, finely chopped
1 small fresh jalapeño chile, finely chopped
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice
1/2 teaspoon ground cumin
2 tablespoons lime juice
1 teaspoon vegetable oil
1/2 teaspoon coarsely ground pepper
1 lb swordfish or other firm texture fish steaks
6 Old El Paso™ flour tortillas (8 inches in diameter), warmed
1 1/2 cups shredded lettuce (1/2 head)
1 small red bell pepper, finely chopped (1/2 cup)

Steps:

  • In glass or plastic bowl, mix all salsa ingredients until well blended. Cover; refrigerate until serving time.
  • Set oven control to broil. Spray broiler pan rack with cooking spray. In small bowl, mix lime juice, oil and pepper; brush on fish. Place fish on rack in broiler pan. Broil with tops about 4 inches from heat 10 to 15 minutes, turning after 5 minutes, until fish flakes easily with fork.
  • Break fish into bite size pieces. Spoon 1/3 cup fish onto center of each tortilla. Top with lettuce, bell pepper and salsa. Fold one end of each tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold down remaining end.

1/4 cup extra-virgin olive oil
2 onions (1/2 chopped, 1 1/2 thickly sliced)
1 15-ounce can pinto beans, drained and rinsed
1/2 cup spicy tomato salsa
Kosher salt
2 bell peppers (1 red, 1 yellow), thickly sliced
1 1/2 teaspoons ground cumin
1 1/2 teaspoons chili powder
1 pound skinless halibut or snapper fillets, cut into 2-inch chunks
1 cup fresh cilantro
8 corn tortillas, warmed
Guacamole and lime wedges, for serving

Steps:

  • Preheat the broiler. Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened, 3 minutes. Add the beans, salsa and 1/2 cup water. Cook over low heat, stirring occasionally, until thickened, about 8 minutes; season with salt.
  • Meanwhile, toss the bell peppers and sliced onions with 2 tablespoons olive oil, 1 teaspoon cumin, 1 teaspoon chili powder and 1/2 teaspoon salt on a rimmed baking sheet. Broil, without stirring, until the vegetables are browned around the edges, 4 to 6 minutes.
  • Toss the fish with the remaining 1 tablespoon olive oil and 1/2 teaspoon each cumin and chili powder; season generously with salt. Scatter over the roasted vegetables and broil until the fish is just cooked through, 3 to 4 minutes.
  • Stir the cilantro into the beans and divide among plates. Serve with the fish, roasted vegetables, tortillas, guacamole and lime wedges.

1/4 cup orange juice
1/4 cup white vinegar
4 garlic cloves, minced
1 teaspoon seasoned salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 pound beef top sirloin steak, cut into 1/4-inch strips
1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 medium sweet red pepper, thinly sliced
2 tablespoons canola oil, divided
6 flour tortillas (10 inches)
Optional: Shredded cheddar cheese, picante sauce and sour cream

Steps:

  • In a large bowl, combine the orange juice, vinegar, garlic and seasonings; add the beef. Turn to coat; set aside. In a skillet, saute onion and peppers in 1 tablespoon oil until crisp-tender; remove and set aside., Drain and discard marinade. In the same skillet, cook beef in remaining 1 tablespoon oil until it reaches desired doneness, 2-4 minutes. Return vegetables to pan; heat through. Spoon meat and vegetables onto tortillas. If desired, top with cheese and serve with picante sauce and sour cream.

1 pound uncooked shrimp (16-20 per pound), peeled and deveined
2 tablespoons fajita seasoning mix
1 cup quick-cooking grits
4 cups boiling water
1-1/2 cups shredded Mexican cheese blend
3 tablespoons 2% milk
2 tablespoons canola oil
3 medium sweet peppers, seeded and cut into 1-inch strips
1 medium sweet onion, cut into 1-inch strips
1 jar (15-1/2 to 16 ounces) chunky medium salsa
1/4 cup orange juice
1/4 cup plus 1 tablespoon fresh cilantro leaves, divided

Steps:

  • Sprinkle shrimp with fajita seasoning; toss to coat. Set aside., Slowly stir grits into boiling water. Reduce heat to medium; cook, covered, stirring occasionally, until thickened, 5-7 minutes. Remove from heat. Stir in cheese until melted; stir in milk. Keep warm., In a large skillet, heat oil over medium-high heat. Add peppers and onion; cook and stir until tender and pepper edges are slightly charred. Add salsa, orange juice and shrimp. Cook, stirring constantly, until shrimp turn pink, 4-6 minutes. 1 ear corn, shucked
2 ripe mangoes, peeled and cut into large wedges
2 limes, peeled, segmented and diced plus juice of 1/2 lime
1/4 cup small diced red onion
1/2 habanero chile, minced
1/4 cup fresh cilantro, minced, plus extra leaves for garnish
1 avocado, small diced
Kosher salt
1 teaspoon ancho chile powder
1 teaspoon ground coriander
Four 6-ounce swordfish steaks
1/4 cup extra-virgin olive oil, plus more for drizzling

Steps:

  • Preheat a grill to medium-high.
  • Grill the corn, rotating occasionally, until charred, about 10 minutes. Cut the kernels from the cob. Meanwhile, grill the mangoes on each side until charred, about 2 minutes per side. Place the mangoes on a cutting board and let cool slightly, then rough chop and combine in a bowl with the corn, limes, lime juice, red onion, habanero, cilantro, avocado and salt.
  • Combine the ancho chile powder, coriander and salt in a bowl. Brush the fish on both sides with the olive oil. Sprinkle the swordfish with the spice rub. Grill the swordfish until the outside is nicely charred and the interior is cooked through, about 4 minutes a side, depending on the thickness.
  • Place the swordfish on plates, then season with salt and pepper and divide the salsa among them. Garnish with a drizzle of olive oil and some additional cilantro.

1 tablespoon chili powder
1 tablespoon olive oil
1 tablespoon lime juice
1 teaspoon garlic salt
1 pound medium shrimp - peeled, deveined, and tails removed
1 nonstick cooking spray
1 medium red bell pepper, thinly sliced
1 medium orange bell pepper, thinly sliced
1 medium red onion, thinly sliced
1 (8 ounce) package fajita-size flour tortillas, warmed

Steps:

  • Whisk chili powder, olive oil, lime juice, and garlic salt together in a medium bowl. Add shrimp and toss to coat. Let marinate for 10 minutes.
  • While shrimp marinates, heat a large skillet or griddle over medium-high heat. Spray with cooking spray. Add bell peppers and onion; saute until tender, 7 to 8 minutes. Transfer to a bowl and cover with foil to keep warm.
  • Pour shrimp and the marinade into the same skillet. Cook shrimp until they are bright pink on the outside and the meat is opaque, about 2 minutes per side.
  • Serve shrimp, onion, and peppers in flour tortillas.
