This Fresh Ginger and Honey Dressing is sweet, tangy, and zesty, and will make you love salad! It's so easy to make a big batch, and will last for a month in the fridge. Alternatively, use as a marinade for grilled chicken or veggies.

2 tablespoons fresh grated ginger ((from about a 2" piece))
1/4 cup honey
2 teaspoons kosher salt
1 teaspoon black pepper
1/3 cup rice vinegar (see notes)
1 cup extra-virgin olive oil

Steps:

  • Mince ginger in a food processor (you can also do this by hand).
  • Add to the food processor the honey (1/4 cup), salt (2 teaspoons), pepper (1 teaspoon), and rice vinegar (1/3 cup); pulse to combine (if not using a food processor, whisk these ingredients together in a bowl).
  • While food processor is running, add oil gradually (or add oil to bowl while whisking), in order to emulsify the dressing.
  • Store in an airtight container or jar for up to one month in the fridge.

½ cup extra-virgin olive oil
2 tablespoons apple cider vinegar, to taste
2 tablespoons Dijon mustard
1 tablespoon maple syrup or honey, to taste
2 teaspoons finely grated fresh ginger
½ teaspoon fine sea salt
About 20 twists of freshly ground black pepper

Steps:

  • In a jar or small bowl, whisk together all of the ingredients until fully blended. Sometimes, if your mustard is cold, it will need a few minutes to warm up before it fully incorporates.
  • Taste, and adjust if necessary-for more tartness, add another teaspoon of apple cider vinegar, or for more sweetness/balance, add another teaspoon or two of maple syrup (I usually add one).
  • This salad dressing will keep well in the refrigerator for up to 10 days. Real olive oil can solidify slightly when cold; if that happens, simple let it warm to room temperature for a few minutes or microwave it in a microwave-safe jar for no more than 15 to 30 seconds.

1 cup sweet onion, such as Vidalia, chopped
6 tablespoons grated fresh ginger *see tip in Notes below
¼ cup celery, chopped
½ cup carrots, chopped
1 teaspoon fresh garlic minced
2/3 cup rice vinegar
¼ cup water
2 tablespoons ketchup
2 ½ tablespoons soy sauce
¼ cup agave nectar
1 ½ tablespoons lemon juice
1 teaspoon kosher salt
½ teaspoon white pepper
1 tablespoon white miso paste, optional but recommended
1 cup good quality peanut oil

Steps:

  • In a food processor place the onion, grated ginger, celery, carrots and garlic and puree until the vegetables are fine and grainy but not pureed.
  • Add the vinegar, water, ketchup, soy sauce, agave, lemon juice, salt, pepper and optional miso paste. Pulse a few times to mix the ingredients.
  • With the processor running, add the oil in a steady stream then stop. The mixture should be loose but be a bit grainy.
  • Enjoy over a simple iceberg and tomato salad.

I have been to MANY a Japanese restaurant and I have had yet to find a dressing I enjoy as much as this one....most are too sweet and cloying for my taste. I think this recipe is pretty close to the original (which if you haven't tasted it, it is hard to appreciate how close it really is). I hope you enjoy it!
