1 cup flax seed
6 cups hot water
1 -2 tablespoon honey, to taste

Steps:

  • Heat a cast-iron skillet over low heat. Add the flaxseed and dry roast it in the skillet, stirring, for about 5-10 minutes. Remove from heat and set aside to cool.
  • Place the toasted flaxseed in a spice grinder and grind to a powder. Sift through a medium-mesh sieve into a bowl.
  • Add the hot water to the flaxseed, stir and let set for about 10-20 minutes to allow solids to settle out.
  • Strain into a pitcher, add honey and chill before serving.

  • Toasted, unhulled barley and sunflower seeds are sometimes added to telba for additional flavor.

1 cup white flour
1/2 cup whole wheat flour
1/2 cup flax seed meal (flaxseeds ground in a coffee grinder)
1/2 cup quick oats
2 teaspoons baking powder
1/2 teaspoon baking soda
2 eggs or 1/2 cup egg substitute
1 cup low-fat buttermilk
4 tablespoons honey
2/3 cup raisins

Steps:

  • Mix all dry ingredients (except the raisins) in a large bowl.
  • Combine liquid ingredients in a separate bowl.
  • Stir liquid ingredients into the dry ingredients all at once.
  • Add raisins. Stir until thoroughly moistened but lumpy.
  • Fill muffin tins, lined with paper or foil cups, to about 2/3 full.
  • Bake at 400°F for 15 to 20 minutes.

1 liter whole milk
100 g sugar
100 g icing sugar
1 cinnamon stick (about 6 cm or 2.5 inches long)
1 lemon peel
4 egg whites
cinnamon, for garnish
3 drops lemon juice
1 small pinch salt

Steps:

  • Pour the milk into a saucepan together with the cinnamon stick, lemon peel and normal sugar. Turn the hob on and let it simmer for 5 minutes while you stir it with a wooden spoon to dissolve the sugar. Then pour it in a bowl and let it cool down.
  • When the milk is at room temperature remove the lemon peel and the cinnamon stick and place the bowl in the freezer until the mixture is very cold but not frozen.
  • Now place the egg whites in a bowl with a few drops of lemon juice and a very small pinch of salt (both of the last ingredients help the egg whites to rise), then mix them until they are snowy (punto de nieve). Then add the icing sugar little by little while continuing to mix.
  • Take out the mixture from the freezer and add the meringue little by little, gently folding it into the milk to get the appropriate consistency. Now keep it in the fridge, and put it in the freezer 15 to 20 minutes before serving to improve the consistency even further. If you keep it in the freezer until it freezes, then you will need to put it through the blender before serving.
  • Serve it in tall cocktail glasses with plenty of cinnamon powder sprinkled on top.
