The Easiest and Best Caramel Corn I've Ever Made image

Oh LORD, have mercy! LOL! This stuff is the kind-of snack you sit down in front of the tv with and you look down and it's all gone! The best part about this recipe is (other than the end product) the fact no candy thermometer is necessary.

2/3 cup unpopped popcorn
2 tablespoons oil (for popping)
1 cup butter
2 cups brown sugar
1 teaspoon salt
1/2 cup corn syrup
1 teaspoon baking soda

Steps:

  • Preheat the oven to 200°.
  • Spray your largest cookie sheets.
  • Pop the popcorn in the oil and set aside. I do this in two batches. Place in a very large bowl. (Plastic bowls work really well because the caramel won't stick; you could also spray the bowl with a bit of Pam).
  • Over medium heat in a heavy saucepan, melt butter and stir in brown sugar, salt and syrup. Bring to a rolling boil.
  • When it starts to boil, boil a full 5 minutes stirring constantly with a wooden spoon. (I used a plastic spatula and ended up sacrificing it)
  • Remove from the heat and add the soda. Pour caramel directly on the popcorn and stir to coat completely.
  • Pour popcorn onto the sheets and bake for 1 hour, stirring every 15-20 minutes. Allow to cool and break into pieces. Store in zip-top bags.

This recipe comes from an Amish family who package this treat for gifts to friends and neighbors every Christmas. It is truly the tastiest, easiest, and most foolproof caramel corn recipe you'll ever find!

7 quarts plain popped popcorn
2 cups dry roasted peanuts
2 cups brown sugar
½ cup light corn syrup
1 teaspoon salt
1 cup margarine
½ teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Place the popped popcorn into two shallow greased baking pans. You may use roasting pans, jelly roll pans, or disposable roasting pans. Add the peanuts to the popped corn if using. Set aside.
  • Preheat the oven to 250 degrees F (120 degrees C). Combine the brown sugar, corn syrup, margarine and salt in a saucepan. Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
  • Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy. Immediately pour over the popcorn in the pans, and stir to coat. Don't worry too much at this point about getting all of the corn coated.
  • Bake for 1 hour, removing the pans, and giving them each a good stir every 15 minutes. Line the counter top with waxed paper. Dump the corn out onto the waxed paper and separate the pieces. Allow to cool completely, then store in airtight containers or resealable bags.

½ cup corn syrup
1 teaspoon salt
½ teaspoon baking soda
1 teaspoon vanilla extract
5 quarts popped popcorn

Steps:

  • Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
  • In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
  • Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

3 packages (3-1/2 ounces each) microwave popcorn
1 cup salted peanuts
1 cup salted roasted almonds
1 cup packed brown sugar
3/4 cup butter, cubed
3/4 cup corn syrup
3/4 cup peanut butter
1/2 cup molasses
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 cup pecan halves

Steps:

  • Pop popcorn according to manufacturer's directions. Meanwhile, in a large heavy saucepan, combine the peanuts, almonds, brown sugar, butter, corn syrup, peanut butter and molasses. Bring to a boil over medium heat; cook and stir for 5 minutes. , Remove from the heat; stir in vanilla and baking soda (mixture will foam). In a very large bowl, combine popcorn and pecans. 15 cups popped popcorn
1/2 cup margarine
1 cup brown sugar
1/4 cup corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda

Steps:

  • Mix margarine, sugar, syrup, and salt in pot. Bring to boil on medium heat, and boil for 5 minutes, stirring occasionally. Remove from heat, and add baking soda. Stir until foamy throughout.
  • Pour over popcorn, and mix well.
  • Spread evenly on cookie sheet, and bake at slow 200°F oven for 1 hour. This last baking step ensures crispy popcorn. Enjoy!

1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1/2 teaspoon baking soda
1 teaspoon vanilla extract
3 bags of popcorn (popped)

Steps:

  • Preheat oven to 250 degrees F (95 degrees C). Place popped popcorn in a very large bowl.
  • Melt the butter in a large saucepan over medium heat. Then stir in the brown sugar, corn syrup and salt. Bring this mixture to a boil, stirring constantly. Then boil without stirring for approximately 4 minutes. Remove from the heat and then stir in the baking soda and vanilla extract.
  • Then pour the caramel sauce over the popcorn and stir it to coat all the popcorn with the caramel sauce.
  • Then place the popcorn in two large shallow baking dishes/ or pans and bake in preheated oven, for approximately 40 minutes (stirring half way through).
  • Remove from oven and let cool completely before breaking into pieces.
  • Store in an airtight container. I placed them in gallon size ziplock bags.
