THE PUFFY CHOCOLATE CHIP COOKIE
Steps:
- Heat oven to 375ºF. Line 4 half-sheet pans with parchment paper and set aside.
- Combine the shortening, sugar, and brown sugar in the work bowl of a stand mixer fitted with the paddle attachment. Cream together on high speed until light and fluffy, 3 to 4 minutes. Sift together the cake flour, salt, and baking powder in a medium mixing bowl and set aside.
- Add the eggs, one at a time, to the creamed mixture, increasing the speed between each addition. Then add the vanilla. Increase the speed to high until thoroughly incorporated.
- Decrease the speed to low and add the dry ingredients to the mixer in three installments. Be sure to stop the mixture and scrape down the sides of the work bowl between each addition. Stir in the chocolate chips.
- Chill the dough completely, approximately 1 hour. Scoop the dough into 1 1/2 ounce portions onto the prepared half-sheet pans, 6 cookies per sheet. For most even doneness, bake one sheet at a time for 13 minutes, rotating the pan halfway through. Bake two pans at a time for 14 minutes, checking the cookies after 5 minutes. Rotate the half-sheet pans for more even browning.
- Move the finished cookies to a wire rack. Cool completely and store in an airtight container.

If there's one thing you can never have too many of, it's cookie recipes. Imagine: Your favorite chocolate chip cookie stuffed with anything from caramel to peanut butter and topped with potato chips, pretzels, marshmallows, and sprinkles galore.

- In a medium saucepan over medium heat, melt the butter and toast for about 5 minutes until it turns brown and smells nutty. Pour the brown butter into a large bowl. Let sit for 30 minutes to cool before starting to make the dough.
- To the bowl with the cooled butter, add the granulated sugar, brown sugar, vanilla, and yogurt. Using an electric hand mixer or stand mixer, beat for 2-3 minutes until fluffy.
- Add the egg and egg yolk and beat again until fluffy and well-combined.
- In a separate large bowl, whisk together the flour, baking soda, and salt. Sift ⅓ of the dry ingredients at a time into the wet ingredients. Beat just until incorporated, then scrape down the sides of the bowl with a rubber spatula between each addition. Make sure not to overmix.
- Add the chocolate chips and mini chocolate chips to the dough and gently fold just to incorporate. Cover the bowl with plastic wrap and chill in the refrigerator for 2 hours. You can also store the stuffings in the fridge so they're easier to work with later.
- Preheat the oven to 350˚F (180˚C). Line a baking sheet (or 2) with parchment paper.
- Using an ice cream scooper, scoop out 3 tablespoons of chilled dough and flatten out into a ¼-inch (6 mm) thick circle.
- Add 1 tablespoon of your stuffing of choice, such as caramel, cookie butter, chocolate hazelnut spread, or peanut butter, to the center of the dough round, and fold the edges of the dough around the stuffing. Seal tightly and roll into a ball. Repeat with the rest of the dough and stuffings.
- To the outside of the cookie dough balls, add your choice of toppings, such as mini marshmallows, chopped candy bar, chocolate chips, crushed chocolate sandwich cookies, white chocolate chips, rainbow sprinkles, pretzel pieces, or crushed potato chips. Press the toppings firmly into the dough, so they don't fall off. Repeat with the remaining stuffed cookie dough balls.
- Place the stuffed and decorated cookie dough balls onto the prepared baking sheet approximately 3 inches (7 cm) apart, so the cookies don't spread into one another. You may need to use 2 baking sheets.
- Bake for 11-14 minutes, or until the cookies are golden brown and evenly spread.
- Cool on a cooling rack for 10 minutes before devouring!

These are like little peanut butter and chocolate balls. You basically mix it all up together. It is a perfect recipe to do at a sleepover or for parties. JIFFY COOKIES
These are so yummy. My aunt submitted them to our family cookbook her story is as follows; "These cookies were served in the cafeteria when I was in elementary school. My daughter Leeann made these and entered them in the county fair and received a blue ribbon!!! The reason I chose this recipe is because they are my favorites!" I love these as well, and you can leave out the cocoa for a peanut butter jiffy rather than peanut butter and chocolate.

- Add another Egg Yolk. Adding in an egg yolk is a great way to give your cookie more fluffiness, as an egg yolk is going to help add moisture, structure, and puff.
- Substitute 1 Cup Oat Bran with 1 Cup Flour. Some bakers swear by making some substitutions when it comes to flour to help you make puffy cookies. Substitute one cup of flour with one cup of oat bran is a way to end up with a puffier, chewier cookie than normal.
- Increase the Amount of Flour. If you are sticking with flour for your cookies, you can two a couple of other things including increasing the amount of flour.
- Don’t Use Melted Butter. Never use melted butter in a puffy cookie recipe. Part of what makes a cookie puffy is using chilled butter (after putting the dough in the fridge), as it means that it takes longer for the butter to get to its melting point, which leaves you with a taller cookie that hasn’t spread as much.
- Make Sure Baking Sheet is Cool. Warm baking sheets are going to promote cookie spread, which can easily ruin a puffy cookie and turn it into a pancake.
