SPICY PASTA WITH TILAPIA



Spicy Pasta With Tilapia image

1/2 pound tilapia fillets, cut into small chunks
2 tablespoons extra-virgin olive oil
3 cloves garlic, chopped
1/2 to 3/4 teaspoon red pepper flakes
1/2 cup dry white wine
1 28-ounce can San Marzano tomatoes, crushed by hand
1/2 cup chopped fresh basil, plus more for topping
Kosher salt
10 ounces multigrain spaghetti
2 tablespoons chopped fresh parsley

Steps:

  • Toss the tilapia, 1 tablespoon olive oil, 1 teaspoon of the garlic and 1/4 teaspoon red pepper flakes in a medium bowl. Cover and refrigerate.
  • Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the remaining garlic and 1/4 to 1/2 teaspoon red pepper flakes and cook, stirring, until the garlic starts to soften, about 30 seconds. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes, 1/4 cup basil and 1/2 cup water. Bring to a boil and cook, stirring occasionally, until the sauce is slightly thickened, about 12 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs.
  • When the pasta is almost done, add the tilapia to the skillet with the tomato sauce and simmer, stirring gently, until just cooked through, about 3 minutes. Stir in the parsley and the remaining 1/4 cup basil; season with salt. Drain the pasta and add it to the sauce. Divide among bowls and top with more basil.

Mizithra Browned Butter Pasta image

A Greek cheese made with the whey from Feta and Kefalotiri, along with sheep and cow's milk, which is used to enrich the cheese. It is sold both fresh and aged. Fresh Mizithra is soft, resembling cottage cheese and the aged is shaped like a large egg and is firm with a pungent aroma and mild flavor. The aged cheese, known as Xinomyzithra, makes a perfect grating cheese. Mizithra is also spelled Myzithra. If fresh mizithra is not available, ricotta can be used for a similar texture.

1 lb pasta
1/2-1 cup butter or 1/2-1 cup olive oil
3 garlic cloves, minced
1/2 cup mizithra cheese, grated
1/2 cup parmesan cheese, freshly grated
1/4 cup chopped fresh parsley
1 teaspoon chopped fresh Greek oregano

Steps:

  • Cook pasta in large pot of salted, boiling water until al dente. Drain.
  • When pasta is almost done, start slowly melting butter over medium heat until golden and bubbles subside. Saute garlic and toss pasta with butter garlic mixture. Sprinkle with cheese & herbs to taste. Sprinkle some fresh cracked black pepper. Enjoy!

1 tilapia fillet
½ cup cherry tomatoes
1 portobello mushroom cap, chopped
1 ½ teaspoons ground black pepper
½ lemon
2 cloves garlic, chopped
½ cup torn romaine lettuce
¼ cup grated Mizithra cheese

Steps:

  • Bring a saucepan of lightly salted water to a boil. Add spaghetti, and cook until tender, about 8 minutes. Drain.
  • Meanwhile, heat the oil in a skillet over medium heat. Place the tilapia fillet in the center, and add the tomatoes and mushroom. Season with pepper, and then squeeze the lemon juice over everything. Place the squeezed lemon half into the skillet.
  • Cover, and cook for about 10 minutes, turning the fish once, or until fish flakes easily with a fork. Toss with pasta and romaine lettuce. Serve over spaghetti, and garnish with Mizithra cheese.
