TUNA TREASURE CHESTS
You can use French rolls, sub rolls, hard rolls, etc., as long as they're the unsliced kind - best if not too soft and not too hard. Those who like their food more on the spicy side may want to throw something in to heat it up a bit. My mom has been making these for as long as I can remember, so I'm not sure what the original source is, but it's a fantastic and delicious comfort food.

ULTIMATE TUNA MELTS
Steps:
- In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.

TASTY TUNA PATTIES
If you're ever pressed for time, start with a couple cans of tuna and you'll have a delicious patty in no time that you can serve a number of different ways. Add them to buns with your favorite toppings for sandwiches, serve them alongside a fresh salad, or make smaller versions of them and serve them as appetizers with tartar sauce on the side. There are a lot of great flavor elements in these easy and versatile patties, but the quantities are small so the flavor still comes out pretty mild. If you're looking for a stronger flavor, increase quantities as you like!

- Combine tuna, eggs, bread crumbs, Parmesan cheese, celery, lemon juice, seafood seasoning, mustard, pepper, and dill in a bowl; stir gently until fully and evenly combined. Shape mixture into 4 patties.
- Heat oil in a nonstick skillet over medium-high heat. When oil is hot, gently lay 2 tuna patties into the skillet. Don't over crowd - only add as many patties as comfortably fit with room to flip them.
- Cook tuna patties until golden brown, 3 to 5 minutes per side, adjusting the heat as needed if they're cooking too quickly. Repeat with remaining patties, adding remaining oil as needed.

TREASURE CHEST
To create this, our crafty kitchen crew started with Almena's temptingly tasty bar cookie recipe to make the treasure chest. Next, our cooks cut up an oatmeal container to form a curved lid, lined it with aluminum foil and frosted it before attaching it to the chest. For the crowning touch, they filled the top of the solid chest with "treasure"-in the form of candy coins and lollipop rings. Serve a Treasure Chest yourself and see if you don't see lots of "jolly Roger" faces.-Almena Hoke, Spring Grove, Pennsylvania
