Steps:
- Preheat the oven to 350ºF. Cut the butternut squash in half lengthwise and scoop out all of the seeds. Place it in a baking dish, cut side down. Fill the dish with about 1/2" of hot water. Bake, uncovered, for 45 minutes.
- Drain the water from the dish and turn the squash cut side up. Return to the oven and continue to bake until soft, 10-15 minutes. Remove from the oven and allow to cool slightly. Scoop the flesh out of the squash and place in a bowl. Mash, and then set aside.
- Melt the butter in a sauté pan. Add the onion and cook until soft. Stir in the croutons, salt, poultry seasoning and pepper. Stir and cook for 2-3 minutes. Stir in the turkey, chicken broth, and reserved squash and cook until heated through.
- Grease a 1 1/2 to 2 quart baking dish. Transfer the squash mixture to the dish and bake uncovered for 20 minutes. Sprinkle the top with the cheese, then return to the oven to bake until the edges are bubbling and the cheese is melted, 5 to 10 more minutes.

Steps:
- Preheat oven to 375°F. Cut the spaghetti squash in half lengthwise and remove the seeds. Rub the inside of each half with a drizzle of olive oil and season with ½ teaspoon salt and freshly ground black pepper to taste. Arrange cut-side down on a parchment-lined baking sheet and bake for 30 to 45 minutes until tender. DO NOT OVEROOK! Test them by inserting a fork between the flesh and the skin and try to rake the strands. Set aside cut-side up until they are cool enough to handle. Leave oven on if baking casserole immediately and RAISE TEMP TO 400°F.
- Spread a few spoonfuls of sauce on the bottom of the baking dish.
- Warm a large skillet over medium heat, and add the sausage and sauté, breaking up the meat into small pieces. Sauté until cooked through and browned slightly, about 5-6 minutes. Add the remaining tomato sauce (use less or more depending on your taste) and bring to a simmer.
- Using a fork, pull the strands of squash crosswise from the peel so that it resembles spaghetti.
- Toss squash strands with the beaten eggs (or arrowroot) and then the turkey sauce and transfer to an 11 x 7 (thicker casserole) or 13 x 9 (thinner casserole) baking dish. Sprinkle with grated cheese if desired. Bake until firm and not mushy or watery, about 45-50 minutes. If you want to brown the top a little, you can broil it for a minute. This is a great make-ahead meal and even freezes well.
BARLEY, TURKEY AND BUTTERNUT SQUASH CASSEROLE
Barley's nutty flavor goes well with onions, mushrooms, or peas. Butternut squash also is a good complement. This large, pear-shaped winter squash has sweet, orange flesh. With onion, green pepper and sage, you'll be glad you had turkey leftovers.

- Place a rack in the center of your oven and preheat the oven to 400 degrees F. Roast the spaghetti squash according to this recipe for Roasted Spaghetti Squash. When cool enough to handle, pull the squash strings out of the squash's center with a fork and transfer to a large mixing bowl. The squash strings should look like spaghetti.
- Reduce the oven temperature to 350 degrees F. Heat the olive oil in a large, deep skillet over medium high. Add the turkey, onion, bell pepper, salt, and black pepper. Cook, breaking apart the meat, until meat is browned and the vegetables are tender, about 8 minutes. Add the drained tomatoes, garlic, Italian seasoning, and red pepper flakes. Let cook until most of the liquid from the tomatoes has cooked off, about 4 minutes, and then add the reserved squash. Cook and stir until most of the remaining liquid has cooked off, about 1 to 2 minutes more, increasing the heat if needed. Stir in 1/2 cup of the shredded cheese. There may be some liquid remaining in the pan.
- Lightly coat a deep 8x8-inch baking dish or 2-quart casserole dish with nonstick spray. With a slotted spoon, scoop the squash mixture into the pan in an even layer, discarding any excess liquid (some in the pan is OK—just not too much). Bake, uncovered, for 20 minutes. Remove from the oven and sprinkle with the remaining 1/2 cup cheese, and then return to the oven and bake until the cheese melts, about 5 to 10 additional minutes. For an extra-golden-brown top, place the casserole under the broiler for a few minutes. Remove from the oven, sprinkle with parsley and/or basil, and let rest 5 minutes. Serve hot.

- Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. Cut spaghetti squash in half, scoop out the seeds, and sprinkle the flesh with a little oil and salt and pepper. Place flesh side down on the baking sheet and roast 35-40 minutes until the skin gives a little when touched.
- When the spaghetti squash has about 15 minutes left, make the turkey kale mixture. Heat a large well-seasoned cast-iron or saute pan over medium heat. If needed, add about 1/2 tablespoon oil and let it get hot. Add onion and salt and pepper and cook for 2-3 minutes until softened. Add turkey and break it up with the back of a spoon. Cook for 3-5 minutes until slightly browned. Add chopped kale and cook for another 2 minutes until wilted and everything is cooked through. Stir in garlic powder, onion powder, dried parsley, dried dill, and salt and pepper to taste.
- Grease a 7x11 baking dish (or something similar). When spaghetti squash is done, remove from oven and thread flesh with a fork to make spaghetti (you should have around 5 cups cooked). Add to the greased pan. Add turkey mixture, eggs, ranch, and salt and pepper, and mix until well combined, making sure the eggs are evenly distributed. If needed, you can mix in a bowl, but I don't like to dirty any more dishes than needed.
- Bake for 45-50 minutes until browned and cooked through. Let cool for a few minutes and then top with optional toppings. Enjoy!

- 1. ROASTEDRoasting spaghetti squash is my favorite way to cook spaghetti squash, acorn squash and butternut squash because it brings out a natural sweetness from the fruit (crazy it is a fruit, right?!). To roast, preheat the oven 400 degrees F. Slice the squash in half, scoop out the seeds with a spoon and toss in a bit of olive oil then place on a large baking sheet face down. Pour a dash of water on the baking sheet. Roast for 35-45 minutes until it is soft when poked with a fork. Let the spaghetti squash cool slightly before handling and flip over and with a fork “fluff” and scrape gently out the noodles.2. MICROWAVEPlace the spaghetti squash on a microwaveable dish whole (poked first with a knife for air) or as halves and cook on high for 9-12 minutes (for halves) and about 12-15 minutes (for a whole squash) until the large center is soft when poked with a knife. Remove and let it cool slightly until it is able to be handled then cut the squash in half (if it is not already) and r
