CHUNKY TURKEY VEGETABLE CHILI (CROCK POT)

Chunky Turkey Vegetable Chili (Crock Pot) image

This is a combination (and adaptation) of 2 kinds of chilis from Easy Home Cooking's All New Slow Cooker cookbook. It's not a very liquidy chili and it sticks to your ribs. The ground turkey helps make it a little more healthy too. This recipe is very forgiving, so you may adjust the heating time to high (for a shorter period) or a combination of high and low.

TRADITIONAL CHILI WITH GROUND TURKEY

Traditional Chili with Ground Turkey image

A traditional style chili that can be made with ground turkey or ground beef. I have made this recipe with ground beef and ground turkey, and they both have a similar flavor. Delicious with sweet corn bread and shredded Cheddar cheese. After the initial cooking on the stove, you can easily transfer this to a slow cooker.

TURKEY CHILI

Turkey Chili image

You might not think of chili as an easy weeknight dish, but this turkey version from Pierre Franey will change your mind. It's fabulous, it's healthy and it can be ready in about a half hour. A combination of dark and white meat really adds depth and richness of flavor, so try to find a mix, but all white meat (or a mixture of ground beef and turkey) will yield a stellar batch too.

Provided by Pierre Franey

1 tablespoon olive oil
2 pounds ground turkey, white and dark combined

I like cutting my veggies pretty small, so they get nice and tender, but feel free to chop them larger if you prefer crunchy veggies. Do people like crunchy veggies in their soup? You can place the onion, celery, peppers, carrots, and garlic into one bowl after they're chopped, but keep the zucchini separate, because you add that to the soup later!
  • Now that the veggies are chopped, measure out your oil, butter, spices, chicken broth, tomato paste, crushed tomatoes, beans and corn.
