HONEY-WHEAT YEAST ROLLS



Honey-Wheat Yeast Rolls image

Serve your family with these tasty wheat yeast rolls that are flavored with honey.

Number Of Ingredients 8

1 1/2 cups Gold Medal™ whole wheat flour
2 to 2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1 package regular active dry yeast
1 1/4 cups water
1/2 cup honey
1/2 cup butter or margarine
1 egg

Steps:

  • In large bowl, mix whole wheat flour, 1 cup of the all-purpose flour, the salt and yeast. In 1-quart saucepan, heat water and 6 tablespoons each of the honey and butter until very warm (120°F to 130°F). Beat warm liquid and egg into flour mixture with electric mixer on low speed until moistened, scraping bowl frequently. Beat on medium speed 3 minutes, scraping bowl frequently. Beat in remaining 1 to 1 1/2 cups all-purpose flour until soft, smooth dough forms (dough will be sticky). Cover; refrigerate 8 hours or overnight.
  • Lightly grease 12 regular-size muffin cups with butter. Place dough on floured work surface; gently push fist into dough to deflate. Divide dough into 12 equal pieces; divide each into 3 portions. Shape each portion into a ball, pulling edges under to make a smooth top. Place 3 balls, smooth side up, in each muffin cup. Cover; let rise in warm (80°F to 85°F) place 45 minutes to 1 hour or until doubled in size.
  • Heat oven to 375°F. Uncover dough; bake 18 minutes or until golden brown. Immediately remove from pans to cooling racks. Cool 15 minutes.
  • Meanwhile, in 1-quart saucepan, heat remaining 2 tablespoons each honey and butter until melted. Brush over warm rolls.

1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
1/3 cup canola oil
3 tablespoons sugar
1 teaspoon salt
1-1/2 cups whole wheat flour
1-1/2 to 2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in water. Add the oil, sugar, salt and whole wheat flour. Beat until smooth. Add enough all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down; divide into 12 pieces. Shape into rolls; place 3 in. apart on greased baking sheets. Cover; let rise until doubled, about 30 minutes. , Bake at 375° for 15-20 minutes or until golden. Cool on wire racks.

Number Of Ingredients 10

1-1/2 cups whole wheat flour
3-1/4 cups all-purpose flour, divided
2 packages (1/4 ounce each) active dry yeast
2 teaspoons salt
1/2 teaspoon baking soda
1-1/2 cups plain yogurt
1/2 cup water
3 tablespoons butter
2 tablespoons honey
Additional melted butter, optional

Steps:

  • In a large bowl, combine whole wheat flour, 1/2 cup all-purpose flour, yeast, salt and baking soda. In a saucepan over low heat, heat yogurt, water, butter and honey to 120°-130°. Pour over dry ingredients; blend well. Beat on medium speed for 3 minutes. Add enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into 24 portions. Roll each into a 10-in. rope. Shape each rope into an S, then coil each end until it touches the center. Place 3 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes. Preheat oven to 400°., Bake until golden brown, about 15 minutes. If desired, brush tops with additional butter while warm. Remove from pans to wire racks to cool.

1/4 cup butter, cubed
1 large egg
2 to 2-1/4 cups all-purpose flour
Canola oil, optional

Steps:

  • In a large bowl, combine the whole wheat flour, sugar, yeast and salt; set aside. In a large saucepan, heat milk, water and butter to 120°-130° add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough all-purpose flour to form a soft dough. , Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; shape into 12 balls. Place in a greased 9-in. square baking pan. 1 large egg, room temperature
1/4 cup canola oil

6 to 6-1/2 cups all-purpose flour

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, egg, oil, salt, yeast mixture and 4 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide into four portions. Divide and shape each portion into 12 balls. Roll each ball into an 8-in. rope; tie into a loose knot. Tuck ends under. Place 2 in. apart on greased baking sheets. Cover; let rise in a warm place until doubled, about 30 minutes.   • In a small bowl, beat 2 large eggs and set aside. Also, have 1 cup of flour set aside in a small bowl.
  • Once the yeast is ready, add the room-temperature milk, butter, and honey, 4 1/2 cups of flour, salt, and the beaten eggs to the bowl. Mix on low speed until the dough comes together.
  • Increase the speed to medium-low/medium (speed 3 or 4 on a Kitchen Aid stand mixer), and knead for 5-7 minutes.
