TWO SISTERS' CHICKEN SALAD

Steps:
- In a large salad bowl blend together chicken, celery, onions, salt, lemon juice, and grapes. Refrigerate 4 hours or overnight.
- Just prior to serving add mayonnaise, oranges, and almonds, tossing gently to avoid breaking the oranges.
- Serve on leaves of Romaine or Boston lettuce or scoop generously into a avocado half.
- Serves 4 large portions or 8 smaller ones.

SOUTHWEST CHICKEN SALAD
Steps:
- In a small bowl, combine Greek yogurt, taco seasoning, garlic powder, onion powder and cumin together.
- In a separate bowl, combine chicken, tomatoes, pepper, onions, corn, and black beans.
- Add salt and pepper, to taste.
- Add wet mixture and mix until well combined.
- Refrigerate for at least an hour and serve cold.
- Serve with tortilla chips.

- In a large bowl, combine mayonnaise, celery, mustard, poppy seeds and salt. Fold in chicken. Cover and chill for 3 to 4 hours. Top with pecans before serving.

Steps:
- Bring a large pot of water to a boil. Add chicken and cook until thoroughly cooked and no longer pink inside, approximately 20 minutes. Drain, cool and chop.
- Meanwhile, place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.
- In a large bowl, mix together the chicken, sliced eggs, apple, onions, relish, mayonnaise, celery, pineapple (with just a little juice for flavor), cilantro, pecans and fajita seasoning to taste.

- Season the chicken with 1/2 teaspoon of salt, some black pepper, and garlic powder. Transfer to a container and drizzle 3 tablespoons of extra virgin olive oil and 3 tablespoons of balsamic vinegar over the chicken, turning them over a few times to coat both sides.
