- Make the Japanese carrot-ginger dressing: Place the carrot chunks, ginger, shallot or onion, rice vinegar, canola oil, sesame oil, and sugar in a food processor fitted with the metal blade. Pulse until well combined. Add the miso and mirin, if using, and 1⁄4 cup of water and puree until nicely blended and fairly smooth. If you want your dressing a little thinner, you can add another tablespoon or two of water and puree again.
- Make the salad: Place the lettuce, shredded carrots, cucumber, tomatoes, and broccoli, if using, in a large serving bowl and drizzle about 1⁄2 cup of the dressing on top, or more if desired. Toss the salad and serve.

UBIQUITOUS JAPANESE SALAD DRESSING
You find this type of salad dressing in many Japanese restaurants in the U.S. I used to see people requesting something similar often, so I created this around mid to late 90's. If this dressing is too tart for your taste (it will water down with salad greens) add 1-2 T water to the dressing.

MAKOTO-STYLE JAPANESE SALAD DRESSING
This recipe is kind of a copy cat of a dressing from a local restaurant that, in the last few years has been available by the bottle in local supermarkets. I have been to MANY a Japanese restaurant and I have had yet to find a dressing I enjoy as much as this one....most are too sweet and cloying for my taste. I think this recipe is pretty close to the original (which if you haven't tasted it, it is hard to appreciate how close it really is). I hope you enjoy it!
