Steps:
- In a high speed blender, blend the frozen banana slices until they form a thick cream, similar to ice cream.
- Add in the protein powder and blend, then add in the almond milk, a little at a time, until the bananas return to a smooth and creamy consistency. You might not need all the milk!
- Stir in the chocolate chunks and walnuts. Serve immediately, or spread in a 9x5 loaf pan, and store in the freezer for later. Enjoy!

- Cover the cashews in boiling water and set aside to soak for at least half an hour then drain. (You can also soak them in cold water overnight instead).
- Place the soaked cashews in a blender along with the 250ml of milk and blend until very smooth.
- Add the full fat coconut milk, sugar, bananas, xanthan gum, cornflour, vanilla extract and salt and continue to blend until the mixture is completely smooth. There should be no hint of grittiness if you rub some of the mixture between your fingers.
- Pour the mixture into a saucepan and place it over a low heat. Whisk until it comes up to the boil and thickens then remove from the heat and pour into a bowl. Don't let it boil for more than a minute. Skip this step if you did not add cornflour/cornstarch.

- In a blender combine bananas, almond milk, vanilla extract, and sweetener of choice mixing until very smooth. Transfer into a shallow dish, cover it in plastic wrap, and place it in the refrigerator to chill for at least 2 hours. Alternatively, you can place in in the freezer for 30 minutes, until chilled all the way through.
- Meanwhile, make the chocolate by combining all the ingredients in a small bowl. Transfer to a shallow container and freeze. Once frozen remove chocolate and cut into small chunks.
- Add the chilled ice cream base into your ice cream maker and process according to manufacturer's instructions. Once done place ice cream in a bowl and stir in walnuts and chocolate chunks by hand. Transfer to an airtight container and return to freezer. Allow ice cream 4-5 hours to harden completely.
