MUM'S TUESDAY NIGHT SPARE-RIBS (REVISED)

Mum's Tuesday Night Spare-Ribs (Revised) image

I loved my Mum's spare-ribs. We didn't bbq so this is how she made them :) Now we bbq year round and it's our main source for cooking. Saves on hydro both summer and winter and just tastes better. My husband doesn't care for them done my Mum's way so this is what he came up with. They are very good, but NOT good for you. ...

Provided by Sue Fitzpatrick

Categories     Ribs

Time 2h5m

Number Of Ingredients 6

3 strips of pork spare ribs (sweet & sour style)
pepper
1/4 c vh medium garlic sauce for spare-ribs
1/4 c vh honey garlic sauce for spare-ribs
MUM'S VERSION
1 large can of regular tomato sauce (instead of vh sauces)

Steps:

  • 1. Pre-heat oven to 350F. Rinse ribs under cold water to remove any bone shards
  • 2. Cut individual ribs between the bones and place in a dutch oven. Liberally shake pepper over them and mix the ribs around to get full coverage. Cover the pot and put them in your pre-heated oven.
  • 3. You have 45 minutes to go do something :) How about stepping outside with a coffee and taking pictures of the gorgeous day!
  • 4. After 45 minutes, reduce heat to 325F and remove pot from oven and drain any grease that has accumulated. Recover and put back in oven. *Old coffee cans are great grease catchers.
  • 5. This is what I like about this recipe. Another 45 minutes to fill. You are not a slave to the kitchen for 2 solid hours :)
  • 6. After another 45 minutes, remove pot from oven and drain grease again, if necessary.
  • 7. Pour VH sauces over ribs in pot and mix around to coat ribs. Put pot back in oven (uncovered) for 1/2 hour. To make Mum's original ribs, this is where you would pour the can of tomato sauce on the ribs and follow the recipe to the end. Potatoes go better with this method than rice. I think so anyway :)
  • 8. Use this time to prepare your side of rice or potatoes. Give the ribs a stir in the oven after about 15 minutes and turn the oven off. Leave the ribs in the oven to take advantage of the last of the heat. They will be perfect by the time your side is ready.
  • 9. When your side is ready, remove ribs from oven and spoon them onto your rice or beside your potato and use the sauce in the pot to drizzle over everything. It is a sweet sauce, so don't overdo it.

2 tablespoons (30ml) peanut oil or olive oil
6 cloves (20g) garlic (, minced)
¼ cup (63ml) honey
2 - 3 tablespoons (30ml - 45ml) regular soy sauce
½ teaspoon (2.5ml) dark soy sauce ((optional))
Ground black pepper
1 tablespoon (15ml) regular soy sauce
¼ teaspoon (2g) fine salt
¼ teaspoon (1.25ml) sesame oil
1 tablespoon (15ml) Shaoxing wine ((optional - can substitute with water))
1 teaspoon (3.28g) garlic powder ((optional))

Steps:

  • Marinate Baby Back Ribs: Mix ¼ tsp (2g) fine salt, ¼ tsp (1.25ml) sesame oil, 1 tsp (3.2g) garlic powder, 1 tbsp (15ml) regular soy sauce, and 1 tbsp (15ml) Shaoxing wine in a large Ziploc bag or Instant Pot. Add in 1 rack of baby back ribs, then marinate for at least 30 minutes in the fridge. *Optimal Marinating Time: 1 - 2 hours
  • Make Honey Garlic Sauce: While the ribs are marinating, heat up the Instant Pot using "Saute Normal" function. When the indicator says "HOT" (~8 minutes), add 2 tbsp (30ml) peanut oil or olive oil to the Instant Pot. Add in minced garlic, then saute for 45 seconds to 1 minute. Pour in 2 tbsp (30ml) regular soy sauce, a pinch of ground black pepper, ¼ cup (63ml) honey, and ½ tsp (2.5ml) dark soy sauce. Stir to reduce & thicken the sauce a bit for 2 - 3 minutes. *Pro Tip: You may need an extra tbsp of regular soy sauce depending on how salty is your soy sauce. Set aside the honey garlic sauce in a container, then let it cool.
  • Pressure Cook Baby Back Ribs: Place 1 cup (250ml) of cold water and trivet in Instant Pot. Place the marinated ribs on the trivet. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 16 minutes (Tender with a bit of chew) to 25 minutes (Fall off the bone) + 10 minutes Natural Release. Open the lid carefully.
  • Apply Sauce & Broil in Oven/Air Fryer: Set the ribs on an oven tray, then generously apply the honey garlic sauce over the ribs on all sides. *Pro Tip: It's best to broil the ribs before cutting it into serving size.*Note: You can use an oven, Instant Pot Duo Crisp's "Air Fry" function or Air Fryer Lid for this step. Option 1 - Oven: Place the Ribs on an oven tray under the "Broil" function (or the highest temperature setting) for a few minutes until the honey garlic sauce is caramelized.Option 2 - Air Fryer Lid: Place the air fryer basket with the tray on the middle rack in Instant Pot. Layer the ribs on the air fryer tray. Place the air fryer lid on the Instant Pot. Press the "Broil" button, set the Temperature to 400°F and Cooking Time to 15 minutes. Air fry the second batch of ribs. *Pro Tip: It takes ~8 - 11 minutes + preheat time. You can open the lid to check the progress.
  • Serve: Chop up ribs to serving sizes. We recommend brushing a bit more honey or maple syrup on the ribs before serving. Serve & enjoy these finger-licking sticky honey garlic ribs~ :)

BAKED HONEY GARLIC SPARERIBS

Baked Honey Garlic Spareribs image

Succulent pork spareribs are baked with a honey and garlic sauce mixture. Serve this easy rib recipe with baked potatoes or beans and a salad.

Provided by Diana Rattray

Categories     Entree     Appetizer

Time 1h45m

Yield 4

Number Of Ingredients 8

4 pounds pork spare ribs
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
1/2 cup honey
3 tablespoons cider vinegar
1/4 cup soy sauce
3 cloves garlic ( finely minced )

Steps:

  • Gather the ingredients.
  • Preheat the oven to 325 F / 165 C / Gas Mark 3 and line a large baking pan or roasting pan with foil.
  • If it hasn't already been done, the silverskin (aka membrane) needs to be removed from the bone side of the racks of ribs. To do this, ease a butter knife or narrow metal spatula under the skin at one end.
  • Then grasp the loosened skin with a paper towel or cloth towel (the towel will keep your hand from slipping) and pull the skin. It should peel off in one sheet. (If not, use the knife to loosen the opposite end of the membrane and try pulling again.)
  • Cut the ribs into 1-rib pieces or serving size portions.
  • Season the spareribs with salt, pepper, and garlic powder.
  • Arrange the ribs in the prepared baking pan.
  • Cover the pan tightly with foil and bake in the preheated oven for 1 hour, or until tender.
  • Drain off all of the excess fat and liquids.
  • In a small saucepan, combine the honey, vinegar, soy sauce, and garlic. Bring to a boil.
  • Reduce the heat to low and simmer for about 5 minutes.
  • Increase the oven temperature to 350 F / 180 C / Gas Mark 4. Drizzle or brush the honey and garlic sauce mixture over the spareribs.
  • Continue baking uncovered for 30 minutes, basting frequently. Serve and enjoy.
