VANILLA BUTTER CAKE

Number Of Ingredients 12

Nonstick baking spray
75 grams (2/3 cup) all-purpose flour, plus more for dusting
12 ounces (1 1/2 cups) buttermilk, at room temperature
4 large eggs
3 ounces vegetable oil
1 tablespoon pure vanilla extract or vanilla bean paste
425 grams (2 cups plus 2 tablespoons) granulated sugar
250 grams (2 cups) cake flour
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon table salt
6 ounces (12 tablespoons) unsalted butter, softened

Steps:

  • Preheat your oven to 350 degrees F. Grease and lightly flour three 8-inch round pans.
  • Combine the buttermilk, eggs, vegetable oil and vanilla in a bowl or large measuring cup and whisk until smooth.
  • Combine the sugar, cake flour, all-purpose flour, baking powder, baking soda and salt in the bowl of your stand mixer. Whisk to combine the dry ingredients.
  • Place the mixer bowl on the mixer fitted with the paddle attachment. With the mixer on low, begin adding chunks of softened butter and continue blending until the mixture is sandy and no visible chunks of butter remain. Add 1/4 of the liquid ingredients to the dry ingredients and blend on low to combine. Raise the mixer to medium-high speed and beat for 2 minutes, scraping the bowl and beater halfway through beating. Add half of the remaining liquid ingredients to the bowl, blend on low to combine and then scrape the bowl. Add the remaining liquid ingredients and continue to blend on the lowest speed for 2 minutes.
  • Divide the batter into the prepared pans and bake until a toothpick inserted into the center of the cakes comes out with a few most crumbs stuck to it, 25 to 30 minutes.
  • Cool the layers in their pans for 15 minutes, then turn them onto a cooling rack and carefully wrap them in plastic wrap while they cool completely.

1c Butter, softened
1.5c Brown Sugar
4 Eggs
2T Vanilla
2c Flour
1t Baking Soda
1t Baking Powder
.5t Salt
1c Milk

Steps:

  • Beat butter and brown sugar 3 minutes on high in large bowl of electric mixer, until light and fluffy. Beat in eggs, 1 at a time, and extract.
  • Stir together flour, baking soda, baking powder, and salt. On low, beat half of dry mixture into butter mixture until blended; slowly add milk and beat until blended. Add remaining flour mixture and beat until well blended.
  • spread into greased and floured (or use non-stick spray with flour) into pan.
  • Bake at 350, 30 minutes in a 9 inch pan.

3/4 cup unsalted butter, room temperature
1 1/4 cups sugar
1/4 teaspoon salt
1 teaspoon vanilla paste
8 egg yolks, room temperature
3 teaspoons baking flour
1 1/4 cups all-purpose flour
3/4 cup milk
Swiss Buttercream, recipe follows
24 egg whites
6 cups sugar
2 tablespoons vanilla bean paste
14 cups butter

Steps:

  • Preheat oven to 350 degrees F.
  • In the bowl of a stand mixer, beat the butter, sugar, salt, and vanilla paste until creamed. Add room temperature yolks and combine well. Combine the baking flour and all-purpose flour. Beat in half the flour and half the milk then add remaining milk and flour and combine well. Then transfer batter to parchment lined sheet pan or 13-inch round cake pan. Bake about 45 minutes to 1 hour, or until a toothpick inserted in the center of the cake comes out clean. Assemble cake using the Swiss Buttercream.
  • Whisk whites and sugar over a double boiler until 140 degrees F. Transfer egg mixture to mixer with whisk and whip on high until room temperature. Add vanilla and butter then whip until fluffy.
