White Chicken Enchilada Slow-Cooker Casserole image

An easy, creamy chicken enchilada casserole. Slow cooking gently melds together the flavors of chicken thigh meat, cream of chicken soup, sour cream, and green chiles.

15 boneless, skinless chicken thighs or breasts
1 (26 ounce) can condensed cream of chicken soup
2 cloves garlic, chopped
1 (16 ounce) container sour cream
1 (7 ounce) can diced green chile peppers
15 flour tortillas
3 ½ cups shredded Monterey Jack cheese
1 (10 ounce) can sliced black olives
1 bunch chives for garnish
black pepper to taste

Steps:

  • Place chicken in a pot, cover with water, and bring to a boil over high heat. Continue to boil until the chicken is done, about 10 minutes. Drain, allow chicken to cool, and cut into small pieces.
  • Place chicken pieces in a large bowl. Stir in soup, garlic, sour cream, and green chiles.
  • Spray the inside of slow cooker lightly with non-stick cooking spray.
  • Tear tortillas into pieces, and arrange half of the pieces in one overlapping layer across the bottom of the slow cooker. Arrange half of the chicken, half of the soup, and half of the cheese on top. Repeat with remaining tortillas, chicken, soup, and cheese. Top with black olives.
  • Cook on Low setting for 3 to 4 hours. Top with chives.

4 boneless, skinless chicken breasts (cooked and diced)
10.75 ounces cream of chicken soup
8 ounces diced green chilies (2 (4 ounce cans), drained)
16 ounces sour cream
½ onion (finely diced)
½ cup milk
½ teaspoon garlic salt
salt and pepper to taste
10 ounces tortilla chips
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1 cup shredded lettuce (optional topping)
2 tomatoes (diced, optional topping)
2 avocados (diced, optional topping)
½ cup Hot Sauce (optional topping)

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl combine the cooked diced chicken, cream of chicken soup, chilis, sour cream, diced onion, milk, garlic salt, salt, and pepper. Set aside.
  • Spray a 9 x 13 inch baking pan with non-stick cooking spray.
  • Place chips in the bottom of the baking pan and spoon chicken mixture over chips.
  • Top with grated cheese and bake for 30 minutes or until hot and bubbly.
  • Serve with your favorite toppings (lettuce, tomato, salsa, avocado, hot sauce).

Stir in the milk, cumin, cayenne pepper, onion powder, chopped chiles and salt. Continue cooking until thickened. Remove from the heat and stir in the sour cream.
  • In a 7-qt slow cooker, line the bottom of the slow cooker insert with a layer of tortillas so that it is completely covered. Spoon 1/4 of the sauce over the tortillas. Layer 1/3 of the chicken on the sauce and sprinkle 1/4 of the cheese over the chicken. Repeat with remaining ingredients with the final layer being tortillas, sauce and cheese.
  • Place the lid on the slow cooker and turn on high. Cook for 3-4 hours. (Alternatively, you can cook the casserole on low for 6 hours). Serve with chopped avocado, sliced jalapeños, chopped cilantro and sour cream, if desired.
