Curry Mayonnaise image

This is great for French fries, a base for chicken or shrimp salad, or to just dip vegetables or chips. We use it as a dip for shrimp cocktail instead of cocktail sauce. Let chill for 15 minutes before serving.

3/4 cup mayonnaise
1 teaspoon curry powder
1/2 teaspoon yellow mustard powder
1 teaspoon water
1 teaspoon vinegar
1/4 teaspoon black pepper

Steps:

  • Stir together until all ingredients are incorporated.
  • Chill 15 minutes.

Cold Chicken With Curry Mayonnaise image

A make-ahead dish, which can be served to guests. The curry isn't overwhelming - it's in the sauce and adds flavour. A good dish for a hot day. Thanks to Annette Human's Microwave Winners. I prefer to roast the chicken conventionally. The cooking time does not include the chilling time.

10 chicken thighs
salt and pepper
3 large onions
25 ml curry powder
50 ml smooth apricot jam
25 ml vinegar
12 1/2 ml cornflour
250 ml mayonnaise

Steps:

  • Season the chicken thighs with salt and pepper. Place in a deep dish and microwave for 22-25 minutes on 100% power, or until cooked. Turn over from time to time. Remove the chicken from the dish and allow to cool. Skim the fat from the liquid in the dish.
  • Peel and slice the onions in rings. Place them in the cooking liquid and microwave, uncovered for 5 minutes on 100% power.
  • Combine the apricot jam, curry powder, vinegar and cornflour. Stir into the onion mixture. Microwave the mixture, uncovered, for about 4 minutes on 100% power, or until thick; stir halfway through this time. Allow to cool. Stir the mayonnaise into the cold onion mixture. Arrange the cold chicken thighs on a serving platter and spoon the curried mayonnaise over them. Chill well.

An excellent dish for a picnic as you serve this cold. Comes from my handwritten book of tried and tested recipes, this is a firm family favourite in summer and is always requested, especially when we go on a picnic. Whilst the recipe states to use whole chicken pieces I find breaking the chicken into smaller pieces allows the sauce to penetrate each piece with a very tasty mild, curry mayonnaise flavour.

8 skinless chicken thighs or 8 skinless chicken breasts
2 large onions, sliced into rings
5 ml salt
25 ml oil
15 ml curry powder
15 ml vinegar
30 ml apricot jam
250 ml mayonnaise
75 ml water

Steps:

  • Season the chicken with salt.
  • place in a saucepan with the water and cook till done.
  • Set the chicken aside to cool off.
  • Saute the onions in the oil until soft.
  • Add the curry powder and vinegar and cook for 1 minute.
  • Add the apricot jam and simmer for about 5 minutes.
  • Remove from cooktop and set aside to cool off.
  • Arrange the chicken in a serving dish (or break into smaller pieces first).
  • Mix the mayonnaise with the cooled curry mixture and pour over the chicken.
  • Place in the refrigerator to chill.
  • Note: the flavour develops even better when you chill this overnight. Cooling time is not included in the timings.

I got this recipe from an Iraqi family after the Persian Gulf War when me and my family were camping in northern Michigan. They had left Iraq after the invasion of Kuwait, and I was lucky to be strolling thru the park when I smelt this meal cooking in their cabin. They warmly shared their meal and gave us the recipe. The slow-simmering smells wonderful and the flavor is fantastic. This is not a spicy curry as curries go, so even my kids will eat it. I suppose when our troops start coming home, they just might inundate us with the flavors and recipes they've experienced over there and will want to have them again, just like our ancestors have after coming home from successfully liberating the oppressed countries of the past century. Hope you try this and think of our troops.

3 lbs roasting chickens, cut up
3 tablespoons vegetable oil
3 large onions, slivered
2 garlic cloves, minced
6 potatoes, peeled and diced
2 cups chicken broth
1 tablespoon curry powder
1 teaspoon thyme
1/4 teaspoon cayenne pepper
3 cinnamon sticks
2 bay leaves
1 (13 ounce) can coconut milk
salt and pepper, to taste (wait until dish is complete before adding s or p as the broth reduces and would intensify the saltin)

Steps:

  • Heat a Dutch oven over medium heat and add the oil.
  • Add the chicken pieces and cook gently until browned on all sides.
  • Add the remaining ingredients and bring to a boil.
  • Reduce heat and simmer, uncovered, for 3 hours, stirring occasionally.
  • Yes, this is a long simmer for a chicken, but these are the instructions I was given, and when I tried it at home it tasted just like our meal at the camp. The potatoes should just about disintegrate, which thickens the stock, now turned sauce.
  • Note that the fat and bones from the chicken will disengage from the meat - not very palatable for our tastes, but the Iraqi family seemed to have just ate around them. (I remove them and the cinnamon sticks before serving.).
  • Serve over rice. We like to add cooked or steamed vegetables over the rice before drowning it with the curry. Box of frozen broccoli works for us. Oh - they also served whole pita breads with this, which they tore and passed on to one another to tear and pass and use as scoops. Neat!
