2 Pork Tenderloins (approximately 1-1.5 lbs each)
1 tbsp Olive or Canola Oil
3 tbsp Butter
8 oz Sliced Mushrooms
1/2 cup Chopped Yellow Onion
1 tbsp Minced Garlic
1/4 cup All-Purpose Flour
2 cups Chicken Broth
1 tbsp Worcestershire Sauce
1 tsp Rosemary
1/2 tsp Salt
1/4 tsp Black Pepper
1/4 cup Cold Water
3 tbsp Cornstarch

Steps:

  • Slice both pork tenderloins into equal pieces approximately 2″ wide. Pat each piece dry with a paper towel. Season with salt and pepper.
  • Heat oil in a large cast-iron skillet or large non-stick pan over medium-high heat and add slices of pork to the pan once hot. Cook for 2-3 minutes per side until they are golden brown. Set aside.
  • Melt butter and add onions and mushrooms. Cook for 5-7 minutes until tender. Add minced garlic and cook for 30-60 seconds until fragrant.
  • Add flour and coat onion, mushrooms, and garlic. Slowly add chicken broth while continuously stirring until smooth. Add Worcestershire sauce, and all seasonings and bring to a simmer for 5 minutes.
  • If the gravy does not thicken, add together cornstarch and cold water together in a small dish. Add it to the pan over high heat and stir. Once you have reached the desired consistency, add pork back to the pan and allow it to warm before serving.

1 tablespoon olive oil
1-1/2 teaspoons butter
1 small onion, sliced
1/4 cup sliced fresh mushrooms
1 garlic clove, minced
2 teaspoons all-purpose flour
1/2 cup chicken broth
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried savory
1/4 teaspoon salt

Steps:

  • Slice tenderloin into 1/2-in.-thick medallions. In a skillet, brown pork in oil for about 2 minutes on each side. Remove from skillet and set aside. , In same skillet melt butter. Add the onion, mushrooms and garlic; saute for 1 minute. Stir in flour until blended. Gradually stir in the broth, rosemary, savory, salt and pepper. Bring to a boil; cook and stir for 1 minute or until thickened., Lay pork medallions over mixture. Reduce heat; cover and simmer for 15 minutes or until meat juices run clear. Yes, the title says it all! This recipe was created by mistake. While using another recipe as a guide, I made the mistake of using cocktail sauce instead of chili sauce. 1 cup soy sauce
¾ cup water
½ cup brown sugar
1 tablespoon honey
1 dash lemon juice
4 pork chops
1 cup ketchup
½ cup cocktail sauce
¼ cup brown sugar
2 tablespoons water
1 ½ teaspoons ground dry mustard

Steps:

  • In a saucepan over medium heat, mix the soy sauce, water, brown sugar, honey, and lemon juice. Bring to a boil, remove from heat, and cool.
  • Place the pork chops in a large, resealable plastic bag. Pour the soy sauce mixture into the bag, seal, and marinate in the refrigerator for 3 to 6 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Drain the pork chops, and discard remaining marinade. Arrange the pork chops in a baking dish, cover, and bake 30 minutes in the preheated oven.

Salt to taste
2 tablespoons olive or vegetable oil
1/4 cup cider vinegar
2 teaspoons finely chopped garlic
1 tablespoon chili powder

1 teaspoon dry mustard
1 teaspoon honey
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat a charcoal grill or oven broiler.

2 tablespoons avocado oil, divided(you can also use vegetable oil)
1 pound pork tenderloin, cut into 12 medallions
Salt and freshly ground black pepper, to taste,(I use about a sprinkle of ½ teaspoon kosher salt)
1 teaspoon dried thyme
½ teaspoon sweet paprika, or to taste
¼ teaspoon garlic powder, or to taste
1 tablespoon butter, divided, plus a couple more pats of butter for the sauce
½ cup low sodium chicken broth
chopped fresh parsley, for garnish

Steps:

  • In a 12-inch skillet, heat 1 tablespoon of oil over medium-high heat.
  • Make 12 slices of pork tenderloin.
  • Combine salt, pepper, thyme, paprika, and garlic powder in a small mixing bowl.
  • Season each pork medallion with salt and pepper; push down on the medallions to secure the seasoning and flatten them to an equal thickness.
  • Cook for 3 minutes with half of the pork medallions in the pan. DO NOT overcrowd the pan as this may cause the meat to steam.
  • Cook for 3 to 4 minutes more, or until the pork medallions are done, on the other side. When the internal temperature of the pork reaches 145 degrees Fahrenheit, it is done. The amount of time required to cook the medallions will also be determined by their thickness.
  • Remove the pork medallions from the pan and place them on a plate.
  • Rep with the remaining medallions; remove the second batch of pork from the skillet and put it aside.
  • Return the skillet to the heat and carefully pour in the chicken broth, being cautious of the smoke.
  • Continue to fry for 1 minute over medium-high heat, whisking to scrape up all the browned pieces from the bottom of the pan.
  • Add a couple of pats of butter and gently swirl to melt; you only need enough butter to slightly thicken the sauce.
  • Return the medallions to the skillet and heat through, spooning the sauce over the medallions.
  • Turn off the heat.
  • Serve garnished with parsley.

1 1/4 lbs pork tenderloin, trimmed of all silverskin, cut on the diagonal into 1/2 medallions
1 lb napa cabbage, thinly sliced (6 C)
1 cup grated carrot (about 2 medium carrots)
1 red bell pepper, cut in fine julienne
4 scallions (both white and green parts)
1 tablespoon canola oil
1 teaspoon salt
2 tablespoons rice vinegar
1 tablespoon light brown sugar
1/2 tablespoon sesame oil
1 teaspoon Asian chili sauce (like Sriracha)
chopped roasted peanuts
chopped cilantro

Steps:

  • To make slaw: Toss the cabbage, carrots, red bell pepper and half of the scallions with the dressing. Let sit for 15 minutes, toss again and transfer to a large serving platter.
  • For pork: Mix together marinade ingredients (listed with pork). Toss the pork with 1/2 C of the sauce. Reserve the rest. Marinate for up to 2 hours in the refrigerator or 25 minutes at room temperature.
  • Heat 2 T canola oil in a heavy 12" skillet over a med-high flame until shimmering hot. Remove the pork from the marinade, shaking off the excess, and transfer the pork to a clean plate. Discard the marinade and add half of the pork medallions to the skillet, spacing them evenly. Cook them without touching until well browned, about 2 minutes. Flip and cook until the pork is just cooked through, about 2 more minutes. Set the pork on top of the slaw. Pour out the oil and wipe the pan with paper towels (if the drippings on the bottom of the pan look like they may burn, wash the pan). Return the pan to medium-high heat. Add the remaining 2 T canola oil and cook the remaining medallions in the same manner. Top the slaw with the remaining pork and pour the reserved sauce on top. Serve immediately, sprinkled with the rest of the sliced scallions, and your choice of garnish.

600g pork medallions
2 tbsp unsalted butter
2 banana shallots , thinly sliced
250g chestnut mushrooms , sliced
1 garlic clove , crushed
1 tbsp plain flour
100ml madeira or sherry
400ml chicken stock
4 sprigs thyme
½ tbsp wholegrain mustard
100ml double cream
mashed potato and wilted greens, to serve

Steps:

  • Heat the oil in a large non-stick frying pan and fry the pork on each side for 2-3 mins until golden brown. Set aside on a plate.
  • Melt the butter in the pan and, when foaming, fry the shallots and mushrooms over a medium heat for 10 mins. Add the garlic and cook for another 1 min. Stir through the flour and cook for another 2 mins. Whisk through the madeira and boil for 2 mins. Gradually stir through the stock until the sauce is lump free. Add the thyme and mustard and season to taste.
  • Return the pork to the pan and simmer uncovered for 5-7 mins or until the pork is cooked through. Stir through the cream and heat again until simmering. Serve with creamy mashed potatoes and wilted greens.
