2 teaspoons butter, or as needed
8 slices white bread, cut into cubes
1 (16 ounce) package bulk spicy breakfast sausage
2 green onions, minced
1 (10.75 ounce) can cream of mushroom soup
½ cup milk
6 eggs, beaten
1 cup milk
½ cup shredded Gruyere cheese
½ cup shredded extra-sharp Cheddar cheese

Steps:

  • Grease an 8 1/2x11-inch baking dish with butter. Place the bread cubes in the baking dish.
  • Break the sausage into small pieces into a large skillet over medium heat. Cook and stir sausage until completely browned, 5 to 7 minutes. Add green onions; toss once and remove skillet from heat. Drain as much grease as possible from the skillet. Spread sausage and green onion mixture over bread cubes.
  • Stir cream of mushroom soup and 1/2 cup milk together in a bowl; pour over the layer of sausage in the baking dish.
  • Whisk eggs and milk together in a bowl; pour over the sausage. Top with Gruyere and Cheddar cheese. Cover the dish with aluminum foil and refrigerate 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake uncovered in preheated oven until the middle is set, about 1 hour.

12 good-quality sausages
250g thick or medium egg noodle
4 tbsp soy sauce
2 tbsp clear honey
juice 1 large orange
2 tbsp groundnut or vegetable oil
2 garlic cloves , crushed
finger-length piece fresh root ginger , peeled and finely chopped
2 red chillies , deseeded and finely chopped
4 large carrots , cut into matchsticks
2 red peppers , deseeded and thinly sliced
1 yellow pepper , deseeded and thinly sliced
200g pack sugar snap peas
1 bunch spring onions , shredded lengthways
2 tbsp sesame seed , toasted

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Squeeze the sausagemeat from the skins into a large bowl. Then, using your hands, roll the meat into meatballs, getting about three from each sausage. Place on a roasting tray, then cook for 10-12 mins until golden and cooked through. Can be made up to a day ahead. Reheat in the oven for 5 mins until piping hot.
  • Meanwhile, cook the noodles according to pack instructions. In a small bowl, mix together the soy sauce, honey and orangejuice. (If you want to get ahead, boil the noodles, cool under cold water, drain, toss with a little oil, then set aside until needed).
  • Heat a large non-stick wok or frying pan and add the oil. Add the garlic, ginger and chilli then fry for 1 min. Add the carrot and peppers, stir-fry for 3 mins, then add the sugar snaps and spring onions for the final min of cooking.
  • Drain the noodles, then add to the vegetables, along with the soy sauce mixture. Toss well, season, then scatter with the sesame seeds. Serve in warm bowls and top with the sausage meatballs.

1 lb raw shrimp, peeled and deveined
2 teaspoons chesapeake bay seasoning
6 oz sausage
½ cup water
½ yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 zucchini, chopped
½ cup corn
1 carrot, diced
2 cloves garlic, minced
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
fresh parsley, chopped, for serving
rice, cooked, for serving

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add shrimp to skillet and season with Chesapeake Bay seasoning.
  • Cook shrimp 3-4 minutes, or until opaque. Remove from skillet and set aside.
  • Heat oil in a large skillet over medium-high heat.
  • Add sausage to skillet.
  • Cook until browned, turning links frequently.
  • Reduce heat to medium-low and add water to skillet.
  • Cover and simmer for 12 minutes. Remove from skillet and set aside.
  • Add onions and bell peppers to the same skillet and cook for 2 minutes.
  • Add chopped sausage, zucchini, corn, and carrot and cook for additional 2 minutes.
  • Stir in shrimp and garlic.
  • Pour chicken stock into pan and stir until well-incorporated.
  • Add salt and pepper.
  • Remove from heat.
  • Top with parsley and serve over rice if desired.

2 cups sliced smoked sausage
2 small zucchini
1/2 green bell pepper
1/2 red bell pepper
1/2 yellow bell pepper
1 medium leek, white parts only
1 sharp cooking apple
4 ounces baby corn
1 tablespoon oil
1 tablespoon butter
1/2 teaspoon cayenne, to taste
salt
black pepper, to taste
1/2 cup hard alcoholic cider
1 tablespoon cornstarch

Steps:

  • Cut the smoked sausage into 1/2-inch slices.
  • Slice the zucchinis, dice the peppers, wash and cut the leek into 1/2-inch squares (white and light green parts only).
  • Wash the apple well, buffing the skin with towel to remove any residue; core and cut the apple into 1/2-inch pieces, leaving the skin on.
  • Trim and cut the baby corn into halves or quarters.
  • Heat the oil and butter in a wok or large frying pan, add the sausages and stir-fry for 5 minutes, or until browned.
  • Add the vegetables, apple, and cayenne and stir-fry for another 5 minutes or until desired texture is achieved; season to taste with salt and pepper.
  • Whisk the hard cider and cornstarch together, pour into the pan and stir until the sauce has thickened and the sausages are coated.
  • Serve with rice.
  • You can use any smoked sausage with this, made from beef, pork, chicken, or turkey - whichever is your favorite!

1 medium green pepper, chopped
1 medium onion, chopped
1/2 cup water
5 bacon strips, cooked and crumbled
3 tablespoons brown sugar
2 tablespoons cider vinegar
3 garlic cloves, minced
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
1/4 teaspoon cayenne pepper
Hot cooked rice

Steps:

  • In a large skillet, brown the sausage. Transfer to a 4-qt. slow cooker; add the beans, tomato sauce, green pepper, onion, water, bacon, brown sugar, vinegar, garlic, thyme, marjoram and cayenne.
