2 eggs
½ cup vegetable oil
½ (11 ounce) package chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cake mix, eggs, and vegetable oil together in a bowl until well mixed; fold in chocolate chips. Roll cookie dough into 12 balls and arrange on a baking sheet.
  • Bake in the preheated oven until lightly browned around the edges, 7 to 9 minutes. Cool on the baking sheet 2 to 3 minutes before transferring to a wire rack to cool.

2 tablespoons baking powder

1 1/2 cups plus 2 tablespoons butter or margarine, softened

Steps:

  • master cookie mix Spoon flour into measuring cup and level with spatula. Put in large bowl with at least 4-quart capacity. Measure sugar, baking powder and salt into flour. Stir until thoroughly blended. Add butter and use pastry blender or clean hands to work into dry ingredients until mixture resembles coarse meal. Makes 10 cups. Tips for best results: Store covered in airtight container in refrigerator or freezer. Do not press down. Use mix at room temperature. Mix up this basic mix and you will be able to have cookies whenever you want. I gave a couple examples following the mix recipe to give ideas what can be done!

2 1/2 cups sugar
1 1/2 cups nonfat dry milk powder
5 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1/2 cup butter or 1/2 cup margarine, melted
1 egg, lightly beaten
1 teaspoon vanilla
1/2 cup butter or 1/2 cup margarine, melted
1 egg, lightly beaten
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
1/2 cup coarsely chopped walnuts (optional) or 1/2 cup pecans (optional)

Steps:

  • In a large bowl, combine all the ingredients.
  • Sift the mixture twice.
  • Store in a tightly covered, labeled container for up to 3 months in a cool, dry place.
  • For Sugar Cookies use: Preheat the oven to 350°F.
  • In a large bowl, combine all ingredients.
  • With lightly floured hands, shape the dough into 1" balls; arrange them about 2" apart on 2 lightly greased 13" X 9" baking sheets Bake for 12-15 minutes or until golden.
  • Let cool for 1-2 minutes on the baking sheets; using a spatula, transfer to wire racks to cool completely.
  • The cookies can be stored in a tightly covered container at room temperature for up to 1 wk.
  • For Chocolate Chip Cookies use: Preheat the oven to 350°F.
  • In a large bowl, combine the Basic Cookie Mix, butter, egg, and vanilla.

From one of my favourite cookbooks, Working Woman's Cookbook by Betty Crocker. NOTE: This mixture makes 16 cups, but is easily halved. Cooking time varys slightly depending on the variety baked.

2 tablespoons cold water
1 teaspoon vanilla
sugar, for dipping
1 egg
2 tablespoons cold water
1 teaspoon vanilla
3/4 cup chocolate chips
1/4 cup molasses
1 egg
2 teaspoons ground ginger
1 teaspoon ground allspice
sugar, for dipping

Steps:

  • Basic Mix:.
  • Mix flour, both sugars, baking powder, salt and baking soda in a large bowl.
  • Cut in shortening with a pastry blender until mixture resembles small peas.
  • Store mixture in an airtight container.
  • Will keep fresh for 3 months at room temperature -- if it lasts that long. :).
  • Variations:.
  • Sesame Wafers:.
  • Heat sesame seeds over medium heat stirring, until light brown. Cool.
  • Preheat oven to 375*. Lightly grease a baking sheet or line with parchment paper.
  • Mix sesame seeds and the remaining ingredients together.
  • Drop by rounded teaspoonfuls about 2 inches apart.
  • Flatten with the bottom of a greased glass, dipped in sugar.
  • Bake until golden, 8 - 10 minutes. Cool for 1 minute before removing from the pan.
  • Chocolate Chip:.
  • Mix all ingredients together.
  • Drop by rounded teaspoonfuls about 2 inches apart.
  • Flatten with the bottom of a greased glass.
  • Bake until set, 8 - 10 minutes. Cool for 1 minute before removing from the pan.
  • Gingersnaps:.
  • Mix all ingredients together and chill for at least 1 hour.
  • Shape rounded teaspoonfuls of dough into balls.
  • Dip tops in sugar, and place on the cookie sheet about 3 inches apart.
  • Bake until the edges are set and the center is soft. Approximately 10 - 12 minutes.
  • Remove immediately.
