1 (9 ounce) bag fresh spinach leaves
1 pound boneless skinless chicken breasts, cut into bite-sized pieces
1 teaspoon dried basil leaves
1 (14.5 ounce) can diced tomatoes, drained
1 (14 ounce) jar spaghetti sauce
2 ounces PHILADELPHIA Neufchatel cheese, cubed
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese, divided
2 tablespoons KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 375 degrees F.
  • Cook pasta in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute.
  • Meanwhile, cook and stir chicken and basil in large nonstick skillet sprayed with cooking spray on medium-high heat 3 min. Stir in tomatoes and spaghetti sauce; bring to boil. Simmer on low heat 3 min. or until chicken is done, stirring occasionally. Stir in Neufchatel.
  • Drain pasta mixture; return to pan. Stir in chicken mixture and 1/2 cup mozzarella; pour into 2-qt. casserole sprayed with cooking spray.
  • Bake 20 min. or until heated through; top with remaining cheeses. Bake 3 min. or until mozzarella is melted.

This is a recipe that I came up with; measurements can be varied depending on your taste, i.e. if you want more cheese add more cheese, if you want less use less, you really can't hurt it. And you really can't mess it up as long as you use this recipe as a foundation.

½ cup dried bread crumbs
½ cup grated Parmesan cheese
2 teaspoons Italian seasoning
1 egg, beaten
5 skinless, boneless chicken breasts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl mix together the bread crumbs, Italian seasoning and Parmesan cheese. Dip chicken breasts in egg, then in bread crumb mixture to coat. Place coated chicken in a 9x13 inch baking dish.

2 cups spinach
½ cup ricotta cheese
¼ cup parmesan cheese
4 chicken breasts, thinly sliced
2 eggs, beaten
1 cup seasoned breadcrumbs
1 cup marinara sauce
4 slices mozzarella cheese
fresh basil, chopped
salt, to taste
pepper, to taste

Steps:

  • Sauté the garlic and spinach in oil until the spinach wilts. Add the ricotta, parmesan, salt, and pepper, and stir until heated.
  • Preheat oven to 450°F (230°C).
  • Salt and pepper the chicken breasts, add the cheese mixture, and roll 'em up.
  • Dip each chicken breast roll-up in the egg, then the breadcrumbs, and place in a 8×8 (20 x 20 cm) or 9×9 (22 x 22 cm) baking dish seam side down.
  • Bake for 25 minutes.
  • Remove from oven and top with marinara sauce and mozzarella. Bake an additional 5 minutes. Remove from oven and top with basil.

3 tablespoons butter
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 jar (8 ounces) sliced mushrooms, drained
1 jar (2 ounces) diced pimientos, drained
1/2 teaspoon dried basil
1 package (8 ounces) noodles, cooked and drained
3 cups diced cooked chicken
2 cups ricotta cheese
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup buttered bread crumbs

Steps:

  • In a large skillet, saute onion and green pepper in butter until tender. Remove from the heat. Stir in the soup, mushrooms, pimientos and basil; set aside. , In a large bowl, combine the noodles, chicken and cheeses; add mushroom sauce and mix well. Transfer to a greased 13x9-in. baking dish. , Bake, uncovered, at 350° for 40-45 minutes or until bubbly. Sprinkle with crumbs. Bake 15 minutes longer or until browned. 2 large boneless skinless chicken breasts
1/2 teaspoon black pepper (to taste)
1 large egg
1 cup breadcrumbs
1 cup parmesan cheese, grated (divided)
1/2 tablespoon italian seasoning
1 tablespoon unbleached all-purpose flour
4 tablespoons olive oil (for frying)
1/4 cup tomato paste (or as needed)
2 tablespoons mozzarella cheese, thinly sliced
1/4 cup asiago cheese, grated
1 teaspoon dried basil (or as needed)
1/2 teaspoon red pepper flakes (or to taste)

Steps:

  • Preheat oven to 400ºF. Place chicken breasts between two sheets of plastic wrap and firmly pound chicken with a meat mallet to a thickness of ½"; season chicken thoroughly with pepper.
  • Beat egg in a shallow bowl and set aside. Mix breadcrumbs, ½ cup Parmesan and Italian seasoning in a separate bowl; set aside. Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.
  • Dip flour coated chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each breast. Set aside breaded chicken breasts for about 15 minutes.
  • Heat olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 1 ½ minutes on each side (chicken will finish cooking in oven).
  • Place chicken on a baking sheet lined with foil and sprayed with Pam®. Spread evenly each breast with tomato paste. Layer each chicken breast with equal amounts of Mozzarella cheese and sprinkle with basil. Top with Parmesan and asiago cheese and add red pepper flakes to taste.
  • Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 12 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165ºF. Serve with pasta or greens.
