Hearty Homemade Spaghetti Sauce image

After years of experimenting, my mom has perfected her hearty spaghetti sauce recipe. It's excellent served with a tossed salad and garlic bread. Although the recipe makes more than two servings, it freezes well. -Jennifer Shaw, Fond du Lac, Wisconsin

1 pound lean ground beef (90% lean)
1/2 cup chopped sweet red pepper
1/4 cup chopped green pepper
1/4 cup chopped celery
1/4 cup chopped onion
2 garlic cloves, minced
1/4 pound sliced fresh mushrooms
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (6 ounces) tomato paste
1/2 cup water
1 bay leaf
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
Hot cooked spaghetti
2 tablespoons shredded Parmesan cheese

Steps:

  • In a large skillet, cook the beef, peppers, celery, onion and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Add the mushrooms; cook for 2 minutes. , Stir in the tomatoes, tomato paste, water, bay leaf, sugar, salt, basil, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes, stirring often. Discard bay leaf. Serve sauce over spaghetti. Sprinkle with Parmesan cheese.

Last-Minute Spaghetti Sauce image

Tastes and smells like it was simmering on the stove all day, but ready in less than an hour. Can be doubled or tripled easily.

2 tablespoons olive oil
1 cup onion, chopped
3 garlic cloves, minced
1 lb lean ground beef
salt, to taste
black pepper, to taste
3 cups canned Italian tomatoes, drained
3 tablespoons tomato paste
3/4 cup dry red wine
1/4 teaspoon red pepper flakes
1 tablespoon sugar
1 teaspoon dried basil
1/2 teaspoon dried oregano, crumbled
1/4 teaspoon dried rosemary, crumbled
hot pasta, to serve

Steps:

  • Heat oil in skillet. Add onion and garlic. Cook, stirring, over medium-low heat until soft. Add meat. Cook until meat loses it raw color. Salt and pepper to taste.
  • Blend tomatoes and tomato paste in food processor or blender.
  • Add tomato mixture to meat, along with wine, red pepper flakes, sugar, basil, oregano, and rosemary. Cook, uncovered, over moderately low heat 30 to 45 minutes.
  • Serve over hot pasta.

A mild sweet, super smooth pasta sauce that has become a family favorite! Makes a great sauce for meatballs. I recommend adding them and letting the entire pot simmer and meld. And remember, the bay leaf is lucky!

1 (46 fluid ounce) can tomato juice
1 (6 ounce) can tomato paste
2 tablespoons brown sugar
1 clove garlic, crushed
1 tablespoon dried oregano
¾ teaspoon dried basil
½ teaspoon dried marjoram
1 bay leaf
¾ teaspoon salt

Steps:

  • Combine tomato juice, tomato paste, brown sugar, garlic, oregano, basil, marjoram, bay leaf, and salt in a large pot. Bring to a boil, reduce heat, and cover. Simmer until thickened, about 45 minutes.
