These 4th of July Spiral Cookies are perfect for the holiday! An easy sugar cookie dough recipe is rolled with red and blue sugar to look like a firework! Everyone loves these cookies!

1 cup granulated sugar
1 cup unsalted butter (softened)
1/2 teaspoon almond extract
1 large egg
1/2 teaspoon salt
2 1/4 cups all-purpose flour
About 1/4 cup red colored sugar
About 1/4 cup blue colored sugar

Steps:

  • Cream sugar and butter in the bowl of a stand mixer fitted with the paddle attachment. (You can also use a hand mixer.) Add almond extract, salt, and egg and mix until combined, scraping down the sides of the bowl as needed. Slowly stir in your flour and mix until just combined.
  • Divide dough into two pieces. Place one half on wax or plastic wrap spread out on your counter. Cover the top with another sheet of wax paper or plastic wrap. Use your hands or a rolling pin to press the dough into a 8-inch rectangle (oblong is fine). Alternating colors, sprinkle sugars in lines across the dough. Use the bottom sheet of wax paper or plastic wrap to help you roll the dough. Repeat with the second half of dough. Wrap rolls in plastic wrap and place in refrigerator until firm, about 1 hour (overnight is fine).
  • Heat oven to 350°. Slice rolls of cookie dough into 1/4-inch slices. Place on cookie sheets lined with parchment paper or a silpat baking mat.
  • Bake 6-9 minutes until the edges begin to brown. You may want to rotate the cookie sheets halfway through baking. Cool 1 minute on cookie sheet and then remove to a cooling rack. Store in an airtight container for up to 3 days or freeze for up to one month.

CAKE
1 pkg white cake mix
1/2 c buttermilk
1/2 c water or milk
2 large eggs
1/4 c vegetable oil
STRAWBERRY GELATIN
1 c fresh strawberries
1/3 c water
2/3 c sugar
5 tsp strawberry gelatin
BLUEBERRY GELATIN
3/4 c blueberries
1/3 c water
1/2 c sugar
5 tsp berry blue gelatin
WHIPPED TOPPING
2 1/2 c heavy whipping cream
1/3 c powdered sugar
2 tsp vanilla

Steps:

  • 1. Line bottoms of 2 9-inch round baking pans with parchment paper. Spray it with cooking spray. Combine all ingredients for cake in a large bowl and mix on low speed for a minute and then beat for 2 minutes on medium speed. Pour into prepared pans and bake at 350 degrees for 25-30 minutes till toothpick comes out clean. Cool cakes completely in pans on wire racks.
  • 2. For strawberry gelatin, combine strawberries, water and sugar in a small saucepan and bring to a boil. Reduce heat, simmer uncovered for 2-3 minutes or until berries are soft. Strain into a small bowl, pressing berries lightly; discard pulp. Add gelatin to syrup, stirring to dissolve completely. Cool to room temperature. Repeat these steps for blueberry gelatin.
  • 3. Using a chopstick or wooden skewer, pierce the tops of cakes to within 1 inch of edge; twist the skewer gently to make slightly large holes.
  • 4. Gradually pour cooled strawberry mixture over one cake. Make sure to fill each hole. Repeat with blueberry mixture on other cake. Refrigerate for several hours or overnight.
  • 5. Next day, in a large bowl beat cream until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. Remove cakes from refrigerator and run a knife around edges of pans to loosen cakes. Remove cakes from pans and paper.
  • 6. Ice the top of one of your cakes and place the other one on top.
  • 7. Ice the top of one of your cakes and place the other one on top. Now ice the entire cake and decorate to your liking with festive sprinkles or different colored icings. Chill for at least 1 hour before serving.
  • 8. Slice cake & serve with ice cream.

⅓ cup orange juice

12 fresh blackberries

Steps:

  • Place 1 cup blackberries, strawberries, banana, orange juice, and ice into a blender in that order, and blend on high speed until smooth, 30 seconds to 1 minute. Pour into 4 glasses and top each serving with 3 blackberries for garnish.

  • Place red melting chocolate in a small glass or ceramic bowl. Microwave on high for 1 minute 15 seconds. Let sit 2 minutes, then gently shake bowl. Chocolate should lose shape and look melted. If not, place it back in the microwave for another 10-20 seconds.
  • Take a Milano cookie and dip one corner in the red chocolate. Place on a cookie sheet lined with wax or parchment paper to cool. Repeat until all cookies are dipped with red. Gently sprinkle edible gold stars on top. Place in fridge for 5 minutes to cool completely.
  • Repeat process with blue chocolate candy melts, melting, then dipping the other corner of the Milano cookie in to coat. Be sure to leave a stripe of white in the middle of the cookie! Sprinkle with edible gold stars. Place in the fridge until cool.
  • Enjoy! Cookies can be made 2-3 days ahead although they do look best made the same day. Store leftovers in an airtight container in a cool location.
