1 1/4 cups canned pumpkin puree
2 cups oats
2 eggs
1/3 cup maple syrup
2 teaspoons baking powder
pumpkin seeds, and oats for topping

Steps:

  • Preheat oven to 350°F.
  • Line an 8x4" loaf pan with foil and cooking spray. Set aside.
  • Add all ingredients (except toppings) to a blender, and blend until smooth.
  • Pour batter into loaf pan.
  • Sprinkle pumpkin seeds and oats on top of the loaf.
  • Bake 25 minutes, until a toothpick inserted comes out clean.
  • Allow the loaf to cool completely before enjoying. Store in an airtight container in the fridge for 4-5 days.

This recipe comes from Blendtec, but any regular blender could handle this list of ingredients. I love using my blender with recipes like this - just dump everything, blend, and bake! This bread rises well and bakes up moist and yummy!

1/4 cup soymilk (or almond, flax, oat, etc.)
1/3 cup coconut oil, melted
3/4 cup sucanat
1 cup pumpkin puree
1 medium apple, cored and seeded
1 tablespoon gingerroot, peeled
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1/4 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon baking soda
1 cup whole wheat pastry flour

Steps:

  • Preheat oven to 350°F
  • Add first 8 ingredients to blender and secure lid.
  • For Blendtec users: press "Speed Up" to Speed 5 and allow full cycle to run.
  • For other blender users: blend until thoroughly mixed and apple is pureed.
  • Add the remaining ingredients and secure lid. Press "Pulse" 6-8 times to incorporate dry ingredients.
  • Using a spatula, scrape down sides of jar and add batter to a greased 8"x4" loaf pan.
  • Bake for 40-45 minutes until done.

Rich, Moist Secret Ingredient Pumpkin Bread image

This is my favorite pumpkin bread recipe. It is very different from other pumpkin breads because it calls for some unusual ingredients that make it special. I almost always use freshly cooked and mashed pumpkin in this - I like to use a small pie pumpkin, which I cut into quarters, seed, and steam until tender, then remove the peel and mash. But I have used plain canned pumpkin as well - just don't accidentally use pumpkin pie filling - you need the plain puree. Prep time assumes you already have some pumpkin puree handy. The extra loaf freezes well. I have been making this for years, but originally found this in one of the "Best of the Best" series of US regional cookbooks.

2 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 package instant butterscotch pudding mix (4 serving size)
1 package instant lemon pudding mix (4 serving size)
5 large eggs
1 1/2 cups granulated sugar
1 1/2 cups canola oil
2 cups fresh cooked pumpkin, mashed without any seasonings (or use canned puree)
1 tablespoon real vanilla extract (really that much)

Steps:

  • Sift together first 8 ingredients (flour, baking soda, salt, cinnamon, nutmeg, ginger, dry pudding mixes).
  • Beat eggs well in another bowl.
  • Add oil, sugar, pumpkin, and vanilla to the eggs and mix well.
  • Combine wet mixture with flour mixture gently by hand,pressing out any large lumps with your spoon, just until ingredients are moistened- do not overmix.
  • Pour into 2 loaf pans (greased& floured) and bake in a preheated oven at 350F for 1 hour to 1 hr 15 minutes (or when tests done with a toothpick).
  • Cool in pan 10 minutes then let cool completely on wire racks- don't skip of your loaves will fall apart.

½ cup butter, melted
¼ cup vegetable oil
2 tablespoons water
1 teaspoon vanilla extract
3 cups all-purpose flour

1 teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
½ teaspoon ground ginger
2 cups pumpkin puree

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix brown sugar, eggs, melted butter, oil, water, and vanilla extract together in a small bowl.
  • Combine flour, baking powder, baking soda, cinnamon, nutmeg, allspice, cloves, and ginger in a separate bowl. Pour in butter mixture; blend until smooth. Slowly mix in pumpkin puree. Divide batter between 2 loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the middle comes out clean, 35 to 55 minutes.
