FULL MONTY BREAKFAST

1 bunch tomatoes on the vine, stalks removed and the base of each scored
4 field mushrooms, peeled and the base of each trimmed
2 black puddings, sliced
8 sausages
Olive oil
Sea salt and freshly ground black pepper
12 large organic eggs
A splash milk
3 1/2 ounces (110 grams) butter
10 rashers dry cured, smoked back bacon
Good white uncut bread, for toast
HP sauce and tomato ketchup, for serving

Steps:

  • Line up tomatoes in a large roasting tray, scored sides up, with the mushrooms, the black pudding and the sausages. Let everything overlap so that the flavours really get in there. Drizzle with olive oil and sprinkle with some salt and pepper, then place under a preheated medium grill.
  • Prepare the scrambled eggs by whisking with the milk. Melt some butter in a non-stick pan and pour in the eggs. Keep the heat low and gently stir to scramble. Remove the tray from under the grill and drape the bacon across the tomatoes and black pudding. Place back under the grill. When the eggs are just about done, season them and serve on some thick slices of toasted bread with a bit of everything else on your plate too!

If you've got a hankering for a Monte Cristo but don't want to be full-figured, here's your compromise. Go whole hog for this version which is packed with protein but lower in fat because it's not deep-fried. A tasty breakfast,lunch or even dinner.

2 eggs
1/3 cup milk
1 tablespoon brandy
1 tablespoon honey
1 1/2 tablespoons prepared mustard
4 slices bread (sourdough is delicious)
non-fat cooking spray
2 slices low-fat ham
2 slices lean turkey breast
2 slices reduced-fat swiss cheese
2 tablespoons powdered sugar
2 -3 tablespoons raspberry preserves

Steps:

  • Stir the honey and mustard together in a small bowl.
  • Make two sandwiches: line up four slices of bread and spread 1/4 of the honey mustard on each slice; on two of the slices, place one piece each of ham, turkey and cheese (trim to fit on top of the bread and not hanging over), then top each meat-covered slice with one of the other slices of bread, honey-mustard side facing into the meat. (O.K., you know how to make a sandwich by instinct - it's easier to do than explain.).
  • Pour the milk in a large measuring cup and add the eggs and brandy; whisk together until the eggs are fully beaten.
  • Place the sandwiches in a rectangular casserole dish; pour the egg mixture over the top of the sandwiches,then flip over the sandwiches - moving them around the dish as necessary so the liquid gets absorbed on both sides.
  • Heat a large skillet or griddle over medium heat, and spray with non-fat cooking spray; cook sandwiches 3-4 minutes on each side or until egg mixture is cooked through and bread is turning golden brown; remove from skillet and turn off heat.
  • Cut each sandwich in half diagonally; dust with powdered sugar and serve with warm raspberry preserves.

¼ cup all-purpose flour
2 ½ pounds lean boneless beef chuck, cut into 1/2 by 2 inch strips
⅔ cup water
⅓ cup tomato paste
2 large onions, finely chopped
3 tablespoons grated fresh ginger
6 cloves garlic, minced
1 (2 inch) piece cinnamon stick
1 teaspoon ground turmeric
1 teaspoon ground paprika
2 tablespoons ground cumin
1 tablespoon ground coriander
1 teaspoon ground cardamom
½ teaspoon ground cloves
½ teaspoon ground cayenne pepper
¼ teaspoon ground nutmeg
salt to taste
⅓ cup chopped fresh cilantro

Steps:

  • Place beef and flour in a large, resealable plastic bag. Shake to coat beef with flour. In a small bowl, mix tomato paste and water.
  • In a large slow cooker, combine onions, ginger, garlic, cinnamon stick, turmeric, and paprika. Place beef on onions, and sprinkle with cumin, coriander, cardamom, cloves, cayenne pepper, and nutmeg. Pour tomato paste mixture over meat. Cover, and cook on LOW setting until beef is very tender, about 8 to 9 hours.
  • When ready to serve, season to taste with salt, and stir in cilantro.
