SOUTHERN-STYLE SWEET TEA
A shady front porch and a glass of this iconic Southern beverage are the perfect combination for a warm summer afternoon.

Steps:
- Heat 4 cups of the water to boiling. In large heatproof bowl, place tea bags; pour boiling water over tea bags. Cover with foil; let steep 15 to 20 minutes. Remove and discard tea bags.
- Add sugar to tea; stir until sugar is dissolved. Pour into large heatproof pitcher. Stir in remaining 4 cups cold water. Refrigerate until chilled.
- Serve tea well chilled over ice, garnished with lemon and/or mint.

A SECRET INGREDIENT TO SOUTHERN STYLE "SWEET TEA"
This is another recipe that I got from my southern gentleman friend. He said this is how is mother and grandmother have always made it, he was from Georgia, so if that's not southern then I don't know what is. He says the secret is to use the earl gray tea with the regular tea, and add the sugar while it's cooking/brewing. It really tasted like the real thing, it wasn't just plain tea with sugar added to it. He just did this real quick on the stove top. I can't quite remember how much sugar he used (I don't think he measured), just taste as you go until you achieve your desired sweetness. These amounts are approximate, so tweak it until you get it the way you like it.

Steps:
- On your stove top bring water to boil, with the tea bags.
- Once it reaches a boil, remove from heat & let stand to brew for a few minutes.
- Remove bags.
- Add sugar, (add gradually, taste until you have it the way you like it).
- Return to heat until sugar is completely dissolved (just a minute or so).
- Add ice, put into container, pour, (or put into container, then add ice, then poor lol).
- Enjoy!

- Sprinkle baking soda into a 1 gallon pitcher.
- Add tea bags.
- Pour boiling water over tea bags.
- Cover and steep 15 minutes.
- Remove tea bags (I hope you compost them).
- Add cool water.
- Refrigerate until cold and you are ready to drink it.
- Serve over ice.

- Using an electric coffee maker, Place the 3 tea bags in the strainer basket (not in the pot). Brew the tea as you would coffee. Pour the sugar in a gallon pitcher. Pour in the hot tea. Continue to run coffee maker with the tea bags until you have enough tea to fill the pitcher. Allow to cool completely at room temperature, then refrigerate.

REAL SOUTHERN SWEET TEA
If I'm working, which is to say I'm not drinking anything strong because I'm focused on winning a competition, I don't drink anything besides sweet tea. I love sweet tea, truly. It's the drink of the South, the drink of my home. Here's how we do it.
Yield makes 2 quarts

Steps:
- Bring 1 quart of water room-temperature to a boil in a saucepan. Pour the boiling water into a pitcher or large bowl, add the loose tea, and let steep for 5 to 10 minutes.
- In the meantime, fill a large pitcher (large enough to hold at least 2 quarts of liquid) with the remaining 1 quart room-temperature water.
- Strain the brewed tea into the pitcher containing the room-temperature water. Discard the tea leaves. Set the pitcher aside.
- In a small nonreactive pot, combine the sugar and cold water. Bring to a boil over medium heat, stirring to dissolve the sugar. Add the lemons and remove from the heat. Allow to cool for 10 minutes. Strain the lemon-sugar syrup into the pitcher. Discard the lemon slices. Refrigerate the sweet tea until serving time.
