Steps:
- Bring water, rice, and olive oil to a boil in a saucepan over high heat. Mix in onion, sazon seasoning, adobo seasoning, garlic, and black pepper. Reduce heat to medium-low; cover and cook for 10 minutes. Add beans and olives and cook until liquid has been absorbed, about 10 minutes. Mix before serving.

- In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
- Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

ADOBO SEASONED CHICKEN AND RICE
Steps:
- Mix together the salt, granulated garlic, cumin, granulated onion, paprika, black pepper, turmeric and oregano in a small bowl. Season both sides of the chicken pieces with salt and pepper and then season with the adobo seasoning mixture.
- Heat 3 tablespoons of oil in a large Dutch oven over high heat. Place the chicken in the oil skin side down, in batches, if necessary, and saute until golden brown. Turn the chicken over and cook until the second side is golden brown. Transfer the chicken to into a separate pot with all cooking juices, cover and allow to cook through over medium heat. Keep warm.
- Place the browning pan with the remaining 2 tablespoons oil back over high heat. Add the onions, green and red peppers and cook until soft. Add the tomato powder, garlic and cook for 1 minute.
- Add the rice to the pan, stir to coat the rice in the mixture and cook for 1 minute. Add the chicken stock, bay leaf, salt and pepper and bring to a boil. Stir well, cover, reduce the heat to medium and cook for 10 minutes.
- After 10 minutes add the peas to the pot, cover and continue cooking until the rice is tender and the chicken is cooked through, about 8 minutes.
- Remove the pot from the heat and let sit 5 minutes covered. Remove the lid, fluff the rice and gently fold in the olives, cilantro, parsley, oregano and squeeze of lime juice. Add the chicken and stir to combine.
ADOBO SHRIMP & BLACK BEANS
Chipotle (yes, the fast food chain) inspired this dish. Our fajita style shrimp and black beans are made even more flavorful with smokey adobo sauce and Latin spices. If you can't find chipotles in adobo sauce, substitute your favorite hot sauce. Paired with lime cilantro rice, you've got a dish that'll easily put Chipotle out of business. Look for canned chipotle peppers in adobo sauce in the ethnic aisle of your grocery store.

- Reheat rice on stovetop or in the microwave. Mix together with cooking oil, lime juice, cilantro, and hot sauce. Season to taste with salt.
- Heat a saute pan over medium-high heat. Add 1 tbs. (15 ml) cooking oil and then shrimp to heated oil. Add in one-third of the tomato / adobo mix and also one-third of the spice mix. Saute until almost done, ~6 minutes. Remove from pan and set aside.
- Return pan to medium-high heat and add another tbs. of cooking oil. Add garlic to heated pan and then onions. Saute until softened, 3 to 5 minutes and then add peppers with beans. Add remainder of the sauce and spice mix, and saute until peppers are tender but still crunchy, 3 to 5 minutes. Return shrimp to pan and toss everything through. Finish with a squeeze of lime juice, and season to taste with more salt, pepper, hot sauce, or any of the spices. Garnish with chopped cilantro.

BLACK BEANS IN CHIPOTLE ADOBO SAUCE

Steps:
- Combine the beans, onion, bay leaf and water in a large saucepan. Bring to a boil, then let boil for 1 minute. Lower the heat to medium and simmer, uncovered, for 40 minutes, until the beans are very tender and about half the water has evaporated. Remove the bay leaf and onion before serving.
- While the beans are cooking, prepare the chipotle adobo sauce: In a heavy bottomed skillet over medium heat, saute the onion and garlic in the olive oil until the onion is very soft, 10 to 12 minutes. Stir in the chipotles and adobo sauce, cook for 30 seconds, and remove from heat.
- Allow to cool a few minutes, empty the sauce into a food processor bowl, and briefly pulse until a chunky sauce forms. You may also use an immersion blender to do this. Serve the sauce drizzled over individual servings of beans.
ADOBO RICE WITH BEANS AND TOMATO
I needed a side dish that would add some interest to an otherwise boring plate. My husband and I both had thirds! Most of the active work happens while the rice cooks. Then it's just easy assembly.

- Combine rice and chicken stock in a medium saucepan. Bring to a boil, stir once, cover, reduce heat and simmer 45 - 55 minutes or until most liquid has been absorbed. Remove from heat and let stand, covered, 5 - 10 minutes more. Pour off any remaining liquid if necessary.
- Meanwhile, heat oil and butter in a medium skillet and sauté onion and garlic over medium heat until tender and golden. Add beans and tomatoes and cook gently until most tomato liquid is cooked off. Season to taste.
- Combine chipotle and cream cheese. Stir into hot rice until well mixed. Add shredded cheese, sour cream and sautéed vegetables. Check seasoning. Serve hot.

- Finely dice the onion.
- Heat the olive oil in a large saucepan over medium heat. Add the onion and saute for 5 minutes until translucent, stirring occasionally. Add the rice and cook for 2 minutes, stirring occasionally. Add the salsa, adobo sauce, broth, and kosher salt.
- Bring to a boil. Then reduce the heat to low, cover, and simmer for 20 minutes until all the liquid is cooked out. Remove from the heat and allow to stand for 5 minutes to steam.
- Fluff with a fork. Stir in the beans (drained and rinsed), chopped roasted red peppers and cilantro. Serve immediately.

CROCKPOT PORK ADOBO WITH BLACK BEANS
This crockpot pork adobo with black beans is so easy! The garlic, brown sugar, soy sauce, and vinegar make for the BEST flavor.

- Rinse the black beans. Soak overnight. This really helps with the texture of the beans, and they won't take as long to cook. Place the pork in a large bowl with 2 cups soy sauce, 2 tablespoons brown sugar, garlic, bay leaves, and peppercorns. Cover and marinade in the refrigerator overnight. I left the meat whole for the marinating, but you can also cut it into pieces before marinating.
- drain the beans. Discard the pork marinade, reserving the bay leaves, garlic, and peppercorns. Cut the pork into 2-inch pieces. Place the black beans in the crockpot, cover with the pork, garlic, bay leaves, and peppercorns. Pour 1 1/4 cup soy sauce, 3 cups water, and 2 tablespoons brown sugar over the top. Stir once to get the liquid in and around the beans. Cook in the crockpot on low for 8 hours or high for 5-6 hours.
- check on the adobo - the pork should be very tender and some of the pieces might naturally fall apart, there should be enough liquid to keep the whole mixture "saucy", and the beans should be soft. Add the vinegar and cook for another 20-30 minutes. Turn the crockpot off and let the mixture cool for a few minutes before serving.

- In a large pot, boil 10 cups of water, add beans stirring often for two minutes.Remove from heat, cover and let beans sit for 1 hour.Drain beans and rinse them off in water.In the same pot, sweat onions and garlic in oil.(You can save some raw onion for garnish)Add six cups of water, Adobo Seasoning, and your stock cube. - In a gallon sized resealable plastic bag, combine the chicken thighs, chipotle pepper, adobo sauce, lemon juice, orange juice, Adobo seasoning and smoked paprika. Toss to coat chicken well. Refrigerate for 2 to 24 hours.
- Preheat and lightly oil a grill or grill pan over medium heat. Remove the chicken from the marinade and drain off excess. Discard the marinade. Place the thighs on the grill and close the cover. Grill, turning frequently, about 10 to 15 minutes per side, until the thighs are crispy brown on both sides and the chicken is cooked through. Chicken is done when a meat thermometer inserted in the center reaches 180 degrees F. Transfer chicken to a plate and let rest for 5 minutes.
- While the chicken is cooking, grill the whole peppers and onion rounds until tender and charred, about 12 to 14 minutes. Transfer peppers to a cutting board, slice in half lengthwise and remove the seeds.
- To serve, combine the heated kidney beans in sauce with the cooked rice. Spoon Easy Rice and Beans onto a platter. Surround with grilled onions and peppers. Place the Smoky Grilled Chicken thighs on top and garnish with chopped cilantro, if desired.
