AIR FRYER BREADED SEA SCALLOPS
Steps:
- Preheat the air fryer to 390 degrees F (198 degrees C).
- Mix cracker crumbs, garlic powder, and seafood seasoning together in a shallow bowl. Place melted butter in a second shallow bowl.
- Dip each scallop in the melted butter and then roll in the breading until completely coated. Set on a plate and repeat with the remaining scallops.
- Lightly spray the air fryer basket with cooking spray. Arrange scallops in the prepared basket so that they are not touching each other; you may need to work in batches.
- Cook in the preheated air fryer for 2 minutes. Turn scallops over gently with a small spatula and cook until opaque, about 2 more minutes.

Steps:
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Combine bay scallops, smoked paprika, chili powder, olive oil, garlic powder, pepper, and cayenne pepper in a bowl; stir until evenly combined. Transfer to the air fryer basket.
- Air fry until scallops are cooked through, about 8 minutes, shaking basket halfway through the cooking time.

- Preheat air fryer to 400°. In a shallow bowl, lightly beat egg. In another bowl, toss potato flakes, bread crumbs, salt and pepper. In a third bowl, toss scallops with flour to coat lightly. Dip in egg, then in potato mixture, patting to adhere. , Arrange scallops in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 3-4 minutes. Turn; spritz with cooking spray. Cook until breading is golden brown and scallops are firm and opaque, 3-4 minutes longer.

AIR FRYER CRUSTY SEA SCALLOPS
From Taste of Home, by Martina Preston, with some slight changes. These were so easy to make, and air frying eliminates sauteing or frying. While the recipe specifies seasoned bread crumbs, you can use plain ones and add your own seasonings. I cannot wait for my herbs to come in this spring to try those. These were posted as a main dish, but would also make a lovely appetizer.

- Note: My scallops were rather smaller, so I reduced the cooking time by a couple of minutes. You will need to experiment with this. Whatever you do, buy only dry scallops - that is, scallops that have not been treated with chemicals.
- Dry the scallops and season with salt and pepper.
- Beat the egg in a small bowl. Put flour on a plate (I used rice flour because it was handy, and it worked quite well.
- Combine potato flakes and seasoned breadcrumbs on a plate. (I used plain breadcrumbs - panko - and seasoned with a variety of things at hand).
- Dredge scallops in the flour, dip in the beaten egg and let excess drip off, then coat with the potato/breadcrumb mix. Make sure each scallop is thoroughly covered.
- Preheat air fryer to 400 deg F. Spray the basket with oil. Arrange scallops in a single layer, spray with oil, and cook for 3 or 4 minutes.
- Turn over, spray the second side, and cook for another 3 to 4 minutes. You may need to adjust the cooking time, depending on size. Scallops should be golden brown and opaque.
- My scallops totaled about 6-7 ounces, so this was a single serving for me. Serve with cocktail sauce, tartar sauce, or a lemon butter sauce.
