2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (or to taste)
1 teaspoon granulated garlic
1/2 teaspoon onion powder
1/4 cup Whole Greek yogurt OR honey

Steps:

  • Season the lamb with salt, black pepper, cayenne pepper, granulated garlic and onion powder
  • Coat the lamb with 1/4 cup of honey OR 1/4 cup of plain Greek yogurt
  • Grill or Air Fry the lamb for 4 to 7 minutes depending on the type of air fryer you have. Turn if necessary

600 grams lamb cutlets (approx. 6-8)
juice of half a lemon
1 teaspoon dried oregano
1 tablespoon olive oil
pinch of salt
pinch of pepper

Steps:

  • Combine the lamb cutlets, lemon juice, oregano, olive oil, salt and pepper in a large mixing bowl and mix well.
  • Allow to rest for 5 minutes or so, or longer in the fridge if you have time. Meanwhile preheat the air fryer to 190 Degrees Celsius/375 Fahrenheit.
  • Place lamb cutlets in the air fryer basket and cook for 10-15 minutes at 190 degrees Celsius/375 Fahrenheit, or according to the manufacturers instructions.
  • Remove the air fryer basket and turn the lamb cutlets.
  • Return the air fryer basket and cook for a further 5 - 10 minutes, or until cooked to your liking.
  • When cooked, remove the lamb cutlets from the air fryer basket and rest for a couple of minutes prior to serving.

Steps:

1.25 lbs. rack of lamb (, about 7-8 chops)
3 Tablespoons olive oil
2 Tablespoons chopped fresh rosemary
1 teaspoon garlic powder ( or 3 cloves garlic, minced)
1 teaspoon salt (, or to taste)
1/2 teaspoon black pepper (, or to taste)

Steps:

  • Pat dry the lamb rack. Remove silver skin from underside of ribs if needed. Cut into individual chops.
  • In a large bowl, combine olive oil, rosemary, garlic, salt, & pepper. Add the lamb and gently toss to coat in marinade. Cover and marinate for about 1 hour or up to overnight.
  • Preheat the Air Fryer at 380°F/195°C for 4 minutes. Spray air fryer basket/tray with oil spray and place lamb chops in a single layer, making sure not to overlap the meat.
  • Air Fry at 380°F/195°C for 8 minutes, flip and air fry for another 3-6 minutes, or to your preferred doneness. Serve warm.

1 ea lamb chop (about 1/3 lb and 1" thick)
salt and pepper
1/2 Tb dijon mustard
1/2 Tb extra virgin olive oil
1 Tb chopped fresh herbs (any combination of parsley, marjoram, thyme, chives, rosemary, mint, etc. )

Steps:

  • Season lamb chops with a liberal amount of salt and pepper.
  • Mix together marinade ingredients and brush onto both sides of the lamb chop.
  • Cook in airfryer for 5 minutes at 375 degrees F per side or 4 minutes at 400 degrees F per side for extra browning.
  • The internal temp should be 135 degrees F for medium or 145 degrees F for medium well. when you touch the meat it should spring back.
  • Decrease the time by 1-2 minutes per side for medium rare and increase the cooking time by 1-2 minutes for medium well. Depending on how thick your lamb chop is, the cooking time will vary.

1/4 cup extra virgin olive oil
1/4 cup dry red wine
1 TBS fresh thyme leaves (1-1/2 tsps dried)
1 TBS chopped fresh rosemary leaves (1-1/2 tsps dried)
1 TBS chopped fresh oregano or mint leaves (1-1/2 tsps dried)
2 cloves garlic, finely chopped
1/2 tsp kosher salt
4 lamb shoulder chops (3/4" thick)
4 lemon wedges for serving

Steps:

  • In a small mixing bowl, whisk together the oil and wine. Stir in the thyme, rosemary, oregano or mint, and salt.
  • Place the lamb chops in a glass or ceramic baking dish or in a large sealable plastic bag. Pour the marinade all over the chops. Cover the dish or seal the bag well. Place the lamb in the refrigerator for 8 to 12 hours.
  • Remove the lamb from the refrigerator 30 minutes prior to cooking.
  • Preheat the air fryer at 390°F for 5 minutes.
  • Drain the excess marinade from the lamb chops. Discard the marinade. Place 2 chops on the crisper plate or in the basket of the air fryer. Cook for 3 minutes. Flip the chops over and continue to cook for another 3 minutes until the internal temperature reads 130 - 140°F when checked with a digital meat thermometer.
  • Remove the cooked lamb chops to a platter and tent with foil. Repeat with the other 2 chops.
  • Serve the lamb with lemon wedges and a bitter greens salad.
