AIR FRYER STUFFED CHICKEN
We stuffed a creamy spinach filling inside these chicken breasts and cooked them to perfection in the air fryer!

Steps:
- Place the chicken breasts on a cutting board and use a sharp knife to cut a pocket into the side of each chicken breast.
- Drizzle both sides of the chicken with oil.
- Add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
- Add cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and remaining 1/2 teaspoon of salt to a small mixing bowl and stir well to combine.
- Stuff the mixture into each chicken breast.
- Place the chicken breasts in a greased air fryer basket in a single layer. You may need to work in batches, depending on the size of your air fryer. Keep cooked chicken in a low oven, covered in foil, while the next batch cooks.
- Air fry at 375 degrees for 15-20 minutes or until a thermometer reads 165 degrees in the thickest portion of the chicken.

AIR FRYER STUFFED CHICKEN BREASTS
Yummy flavors light up these boneless, skinless chicken breasts. Prosciutto, garlic, onion, red bell pepper, spinach and feta go inside the chicken, and a delicious crust goes on the outside. Air fryers do a terrific job with meat, and you don't have to heat up your big oven. Enjoy these stuffed chicken breasts with a simple green salad and a nice, crusty bread, or slice in 1/2-inch slices and use as a hearty appetizer!

Steps:
- Heat olive oil in a small skillet over medium heat until hot. Add onion; cook and stir until softened, about 3 minutes. Add red bell pepper and mushrooms, and cook, stirring occasionally, for an additional 3 minutes. Remove skillet from heat and stir in chopped spinach and garlic. Continue stirring until the spinach is slightly wilted. Season with Italian seasoning, salt, and pepper and allow to cool for 10 minutes.
- Stir in feta cheese crumbles, breaking up any large pieces.
- Pat chicken pieces dry and place on a secure cutting board. Cut a 'pocket' into each breast by inserting a knife in the thickest part of the breast and slicing parallel to the cutting board, leaving about 1 inch at each tip. Be careful not cut all the way through the thinnest edge of the breast.
- Preheat the air fryer to 370 degrees F (190 degrees C) if preheating is recommended by the manufacturer.
- Separate prosciutto slices and place on a clean prep surface. Place 2 tablespoons of vegetable-feta mixture on top and roll around the filling, creating an oblong bundle. Tuck 1 prosciutto-wrapped bundle into each sliced chicken breast, and close the opening with toothpicks.
- Combine Parmesan cheese, breadcrumbs, parsley, salt, and pepper on a plate. Dip each stuffed chicken breast into beaten egg, then dredge in breadcrumb mixture. Spray with avocado oil spray.
- Transfer to the air fryer basket and cook until browned, about 15 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Season your chicken with salt and pepper to taste.
- Combine your filling: cream cheese, mozzarella, parmesan, mayo, garlic, spinach and roasted red peppers.
- Combine your seasonings: paprika, garlic powder, and onion powder.
- Filet your chicken breast lengthwise, without cutting all the way through. Lay your chicken breast open and season with ½ to 1 teaspoon of the seasoning. Then spread about ½ cup of the spinach and cheese mixture on one side. Fold your chicken breast over and then piece toothpicks along the seam to try and keep as much spinach and cheese inside as it cooks. Sprinkle the top of your chicken with additional seasoning.
- Brush olive oil in your air fryer basket, as the nonstick spray is shown to cause your basket to wear faster. Preheat your air fryer at 380 degrees F.
- Then lay two breasts in at a time, cooking in batches if you cannot fit all 3. Cook for 15 to 18 minutes till a meat thermometer reads 165 degrees F.

ASPARAGUS-STUFFED AIR-FRYER CHICKEN ROLLS

- In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry., Flatten chicken to 1/4-in. thickness. Spread mustard over one side of each chicken breast. Down the center of each, place two sage leaves, a cheese slice, ham slice and four asparagus spears. Fold chicken over asparagus; secure with toothpicks., Preheat air fryer to 325°. - Preheat air fryer to 400°. Cut peppers lengthwise in half; remove stems and seeds. In batches, place peppers in a single layer on tray in air-fryer basket. Cook until skin starts to blister and peppers are just tender, 10-15 minutes. Reduce air fryer temperature to 350°., Meanwhile, in a large bowl, combine chicken, rice and pesto. - Preheat an air fryer to 400 degrees F (200 degrees C).
- Cut Swiss cheese into six 2 x 1/2 x 1/2-inch pieces.
- Set up breading station: place bread crumbs, 2 teaspoon sazonador seasoning, and 1 tablespoon flour in a shallow dish, place remaining flour and sazonador seasoning in a second shallow dish, and crack eggs into a third shallow dish. Whip eggs until yellow and frothy. Season eggs with salt and pepper.
- Take each piece of Swiss cheese and lay on top of 1 piece turkey meat. Wrap luncheon meat around Swiss cheese.
- Open up chicken thighs and place a turkey-cheese bundle into the middle of each one. Roll chicken thighs around bundles. Dip each into flour mixture to coat, then shake off excess. Dip into egg, then shake off excess. Finally, dip into bread crumb mixture and press breading into the chicken.
- Place chicken bundles seam-side down into the air fryer. Spray chicken bundles with nonstick spray.
- Reduce air fryer temperature to to 380 degrees F (193 degrees C) and air fry chicken for 15 minutes. Turn bundles over, spray with nonstick spray and drop air fryer temperature to 370 degrees F (187 degrees C). Air fry until chicken is cooked through, an additional 8 minutes. Serve immediately.
