SALMON ALFREDO PASTA

A creamy Alfredo pasta tossed with flakes of hot smoked salmon (or plain cooked salmon). Make sure you follow the steps to toss the sauce and pasta with some of the pasta cooking water - it makes all the difference to create a luscious creamy sauce using only 1/2 cup of cream!

8 oz / 250g dried fettuccine
3 tbsp / 50g unsalted butter
1 small shallot ((US) / eschallot (Australia), very finely minced (Note 1))
½ cup / 125 ml heavy cream ((Note 2))
¾ cup / 185 ml freshly grated Parmigiano Reggiano or parmesan ((Notes 3 and 4))
¼ teaspoon salt
Good grind of black pepper
6-7 oz / 180 - 200g hot smoked salmon fillet (, flaked (Note 5))
Fresh parsley ((optional))
Extra Parmigiano Reggiano

Steps:

  • Bring a large pot of salted water to boil. Add the fettuccine and cook until al dente (still firm but just cooked through). (Note 6)
  • Meanwhile, melt the butter in a deep fry pan over medium high heat. (Note 7)
  • Add the shallots and sauté for 2 minutes or until tender.
  • Add the cream and bring to boil. Turn heat down to medium low and simmer for 3 minutes.
  • Remove the fry pan from the heat and stir through the Parmigiano Reggiano, salt and pepper until the sauce is smooth.
  • TAKE OUT 1/2 cup of pasta water PLUS scoop out an extra mug (extra, just in case). Then drain the pasta in a colander.
  • Transfer the pasta and 1/2 cup of reserved pasta water into the fry pan with the sauce. Add salmon. Return the fry pan to the stove over medium heat. Toss very gently to coat the pasta in the sauce and allow the sauce to emulsify (Note 6) for 1 1/2 - 2 minutes, until the sauce coats the pasta - there should be no sauce pooled at the bottom of the skillet. (Note 7)
  • Remove from the stove and serve immediately, garnished with extra Parmigiano Reggiano and fresh parsley, if using.

1/4 packet of spaghetti ((200 g, 7oz))
150 ml double cream ((5 oz))
1 salmon fillet
2 cloves of garlic, minced
1 tsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1 tbs chopped dill
1 tbsp grated parmesan

Steps:

  • Preheat the oven to 200 degrees C/ 390 degrees Fahrenheit.
  • Wrap the salmon fillet in kitchen foil and bake for 15 minutes until cooked through.
  • Meantime, cook the spaghetti according to the packet instructions.
  • Retain one quarter of cup of the cooking water, and drain the rest.
  • In pan, add the double cream and garlic and bring to a boil.
  • Toss the spaghetti to coat, add the cooked water, parmesan, and season with salt and pepper.
  • Remove the salmon from the oven and use a fork to flake it, then add it to the spaghetti together with the lemon juice and mix everything well.
  • Transfer to a plate and garnish with chopped dill.
  • Serve immediately.

This Alfredo sauce recipe is one of my favorites. Actually I think it's just about everyone's favorite pasta recipe. For a special treat you can't beat cream, cheese and pasta together!

2 cups cream (heavy, or 35% cream is best)
1/4 cup butter (cold)
1/4 cup Parmesan cheese (grated)
salt and pepper (ideally white pepper)
pasta (fettucini, penne or tortellini are great, or use a non-wheat pasta for a gluten free recipe)
fresh parsley (chopped for garnish)
1 clove garlic (chopped (optional))
extra parmesan cheese

Steps:

  • Heat a large saucepan over high heat until very hot. Add just enough cold water to cover the bottom of the pan. Let the water evaporate (it will do this quickly) but make sure there are a few drops left in the pan. This will keep the cream from scorching and burning on the bottom of the pan. Remove the pan from the heat.
  • Add the cream to the pan and return it to the heat. When the cream comes to a boil, reduce heat to medium/ medium high and continue to boil until it is reduced by half. During that time, add the garlic.
  • In the meantime, cook pasta in well salted water according to package directions. Drain well when cooked.
  • When the cream is reduced remove it from the heat. Add butter 1 tablespoon at a time and whisk it in. The cream should thicken and turn glossy. Add the cheese and hot pasta to the cream. Season with salt and pepper and garnish with chopped fresh parsley. Serve immediately (with added parmesan cheese for me!).

  • Preheat oven to 400 degrees F (200 degrees C). Heat Alfredo sauce in a medium saucepan over medium heat.
  • Place salmon in a baking dish. Mix the lemon juice and vinegar in a small bowl, and pour over the salmon. Season with basil and parsley.
  • Bake salmon 15 minutes in the preheated oven, until easily flaked with a fork. Remove from heat, and break into bite sized pieces.
  • Bring a large pot of lightly salted water to a boil. Add rotini, and cook 8 to 10 minutes or until al dente. Drain, and place in a large bowl.
  • Gently toss the salmon, pasta, and Alfredo sauce together in the large bowl. Serve with the Parmesan cheese.

3/4 pound salmon fillet
Cajun seasoning
1 tablespoon butter
1 tablespoon flour
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper (or more to taste)
1/2 teaspoon dried cilantro (substitute dried oregano if necessary)
1/4 teaspoon kosher salt
2 cups milk (2% or whole)
1/3 cup Parmesan cheese

Steps:

  • Bring large pot of salted water to a boil.
  • Lightly season salmon with Cajun seasoning. Cook on the stovetop 3-5 minutes per side, or bake in a 400 degree oven for 15-20 minutes, until fish is still slightly rare in the center.
  • Cook pasta according to package directions, drain, and set aside.
  • While pasta and fish cook, melt butter in a large skillet over medium heat. Add flour, and whisk until a smooth paste is formed. Very slowly add the milk, about 1/4 c. at a time, whisking constantly until smooth. (If lumps form, use the back of a fork to crush the lumps and stir into sauce.) Add garlic powder, cayenne, cilantro, and salt and stir. Continue cooking and stirring until sauce gets bubbly and thickens.
  • Add cheese to sauce and reduce heat to medium-low. Stir until cheese is melted.
  • When fish is cooked, shred into about 2" pieces. Add fish to sauce, and very gently stir to combine. Serve over pasta, or add cooked pasta into skillet with sauce and gently toss to coat.
