Chorba Hamra bel Frik (Algerian Lamb, Tomato, and Freekeh Soup) image

This traditional Algerian soup is prepared every day during the month of Ramadan by most families. It is usually accompanied by briks or boreks.

1 cup freekeh
water to cover
¾ pound lamb meat, cut into 1 1/2-inch cubes
1 onion, grated
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon ground cinnamon
salt to taste
3 tablespoons vegetable oil
1 bunch fresh cilantro, finely chopped, divided
1 bunch fresh mint, finely chopped, divided
1 stalk celery
½ (14 ounce) can chickpeas, drained
1 tablespoon tomato paste
1 zucchini, diced
1 carrot, diced
3 medium ripe tomatoes
1 potato, diced

Steps:

  • Place freekeh in a bowl and cover with cold water. Set aside.
  • Combine lamb, onion, pepper, paprika, cinnamon, and salt in a pot. Add oil, 1/2 of the cilantro, 1/2 of the mint, and celery and simmer over low heat for 15 minutes. Stir in chickpeas and cover with a little water. Bring to a gentle simmer. Add tomato paste, zucchini, and carrot and mix well.
  • Set a steamer over the pot and add tomatoes. Cover and steam tomatoes until soft, about 5 minutes. Crush tomatoes using a wooden spoon so pulp drips into the soup. Discard leftover tomato peels. Add potato and enough water to cover. Simmer until potato is soft, about 10 minutes.
  • Drain freekeh and add to the soup. Simmer until soft, about 15 minutes. Remove celery stalk. Sprinkle soup with remaining cilantro and mint before serving.

We had this kind of soup in a restaurant at the harbor of Algier, Algeria. Back at home I tried to copy the recipe and came up with this version. Feel free to add more cayenne pepper to increase the heat.

1 kg fish fillet (your choice)
2 large potatoes
2 green bell peppers
1 large carrot
1 fennel bulb
2 onions
1 celery rib
4 tablespoons tomato paste
2 liters water or 2 liters vegetable broth
1 tablespoon cumin
1 teaspoon ras el hanout spice mix (recipes here on zaar)
1 teaspoon coriander
2 bay leaves
1 piece lemon rind
1 tablespoon harissa (or any hot sauce of your choice)
4 tablespoons olive oil

Steps:

  • Dice the onions and let them get golden in the olive oil. Use a large soup pot!
  • Cut the bell peppers, potatoes, carrot, fennel and celery in cubes. The soup will get pureed, no need to cut very small pieces.
  • Put the vegetables in the pot and let it get some colour.
  • Add the tomato paste, fry a few seconds and then add the water, about two litres should be enough.
  • Add the bay leaves, lemon rind and the spices.
  • Let it simmer on low heat for about 20 minutes, until vegetables are soft.
  • Cut the fish fillets in cubes and add them to the soup.
  • Let it simmer for another 15 minutes, until the fish is done.
  • Carefully puree the soup, adding some water or broth if necessary.
  • Check on the seasoning and serve with slices of lemon and fresh baguette bread.
  • Enjoy!

Chorba frik is a variant of a very traditional soup Maghreb consumed in Algeria, Tunisia and Libya, prepared with mutton or lamb.

¾ lb lamb (, cut into pieces)
2 scallions
2 cloves garlic
1 bunch cilantro (, chopped)
1 stalk celery (, with leaves)
3 tomatoes
½ cup chickpeas ((soaked overnight))
1 teaspoon paprika ((and/or chili powder))
½ teaspoon cinnamon
1 teaspoon ground coriander
½ teaspoon ground ginger
1 tablespoon dried mint
2 tablespoons tomato paste
Salt
Pepper
1 cup freekeh (, rinsed and drained)
3 tablespoons olive oil
8 cups water
Pressure cooker

Steps:

  • In a pressure cooker, brown the meat in olive oil.
  • Add the garlic, scallions, tomatoes, and celery to meat. Add half the cilantro leaves and tomato paste. Add the chickpeas, stir and sauté over low heat covered for about 5 minutes, stirring occasionally.
  • Add the spices, salt, bay leaf, mint and hot water. Increase heat to bring to a boil, then reduce heat to medium.
  • Lock the pressure cooker and cook on medium heat for 1 hour.
  • Open the pressure cooker and check the amount of liquid. Add a little boiling water if necessary.
  • Add frik into the pan and cook for 10 to 15 minutes over low to medium heat, stirring regularly to prevent it from sticking to the bottom of the pot.
  • Turn off the heat and add remaining cilantro.

A lovely soup, probably nothing like you would expect, very yummy. I got the recipe from someone else, an Algerian, and have changed it slightly to fit in with the way my family (in-laws) cook algerian food.

4 tablespoons olive oil
1 large Spanish onion (Grated or very very finely chopped, or pulverised in a chopping machine)
3 -4 pressed garlic cloves (According to taste)
1 (10 ounce) can whole tomatoes (or 4-5 very ripe ones grated, chopped finely or pulverised in chopping machine)
1 teaspoon paprika
1 teaspoon ras el hanout spice mix (north african spice mix)
1 pinch of crushed saffron (It tastes much better with this than turmeric)
salt and pepper (Around one tsp each, though maybe less than tsp if using stock cubes)
2 large potatoes (Chopped quite small, but NOT grated or pulverised in chopping machine!)
3 stalks celery, diced (Thinly sliced, but NOT grated or pulverised in chopping machine!!)
2 cups chicken broth (Around two pints)
1 1/2 lbs firm white fish (I used more)

Steps:

  • Heat oil in a large pan and saute onion and garlic until translucent. Add garlic and tomatoes and continue to simmer until most of the liquid has been absorbed. Add spices, potatoes, celery and broth. Simmer for 10 minutes.
  • Add fish and continue to cook until the fish flakes. Simmer over low heat for an additional 10 minutes .

  • Squeeze each chickpea lightly to remove the casing from each bean and discard the skins. Put aside 1/2 of these shelled chickpeas.
  • Put the shelled chickpeas (except for the reserved 1/2 cup) in a blender and blend them. They will turn out crumbly and appear a little dry.
  • Heat oil in a saucepan. Sauté garlic in the oil until fragrant, about 3 minutes. Then add cumin, paprika, harissa (if desired), tomato paste, salt and pepper. Let cook, stirring occasionally, for about 2-3 minutes.
