MUSTARD TURKEY CUTLETS

Steps:
- In a small saucepan, combine the cornstarch, 1/4 teaspoon salt and 1/8 teaspoon pepper. Gradually whisk in the concentrate, mustard and rosemary until blended. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Set aside 1/4 cup sauce., Brush turkey with oil; sprinkle with remaining salt and pepper. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. , Grill, covered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until no longer pink, basting occasionally with remaining sauce. Brush with reserved sauce before serving.

SAUTEED TURKEY CUTLETS WITH AVOCADO SAUCE
Steps:
- For the sauce: Combine all ingredients in a blender and process until smooth; set aside until ready to use. If the sauce is too thick, add a little more water. (Can be made up to 1 day ahead and stored, covered tightly in a refrigerator until ready to use.)
- For the turkey: Combine flour, zest, salt, and pepper in a shallow dish or a resealable plastic bag and mix thoroughly. Add half of cutlets and coat well. Remove, shaking off excess flour, and repeat with remaining cutlets.
- Heat 1 tablespoon oil in a large frying pan over medium heat. When it shimmers, add 2 to 3 cutlets and cook until browned, about 3 minutes total. Transfer to a plate and repeat with remaining cutlets.
- To serve, place turkey on platter, top with sauce, and garnish with a few slices of avocado and torn basil leaves.
TENDER BREADED TURKEY CUTLETS
I came up with this thinking of a different way to serve the turkey breast. The sour cream seals in the moisture and no one would ever guess that it's in there. A great new way to try turkey. This is my husband's new favorite turkey dish.

- Mix the bread crumbs and cheese in a shallow dish. Spread both sides of turkey with sour cream and press into the bread crumb mixture to coat.
- Heat the oil in a skillet over medium heat. Place turkey in the skillet and cook 5 to 7 minutes on each side, until lightly browned and cooked through.

- Preheat oven to 425 degrees. On a rimmed baking sheet, toss carrots with 1 teaspoon oil; season with salt and pepper. Push carrots to edges of baking sheet; place turkey in center, skin side up. Coat top of turkey with mustard; season with salt and pepper. Roast until beginning to brown, 20 to 25 minutes.
- In a large bowl, toss broccoli with remaining 2 teaspoons oil. Season with salt and pepper; toss broccoli with carrots on baking sheet. Continue roasting, tossing vegetables once, until turkey is browned and an instant-read thermometer inserted in center registers 165 degrees, 30 to 40 minutes.
- Transfer turkey to a cutting board; tent loosely with aluminum foil, and let rest, 5 to 10 minutes. Slice turkey, and serve with vegetables, accompanied by mustard, if desired.

TURKEY CUTLETS WITH ALMOND CRUST

- 1. Put the turkey on a plate and rub all over with 1 tablespoon of the lime juice and the garlic. On another plate, mix the chopped nuts, cumin, and 1/2 teaspoon of the salt. Coat the turkey pieces, one at a time, on one side with the nut mixture, pressing with palm of your hand to help the nuts adhere to the meat. Let stand, nut side up, about 10 minutes. 2. Meanwhile, in a medium bowl, gently stir together the tomatoes, avocado, onion, serrano, remaining lime juice, and remaining salt. Adjust seasoning. Set aside. 3. In a large nonstick skillet, heat the oil and butter over medium heat. Cook the cutlets, nut side down, until golden brown on the bottom, about 4 minutes. Using a wide spatula, carefully turn the cutlets and cook the second side until browned and no longer pink inside, 3 to 4 minutes. Place 1 cutlet, nut side up on each of 4 plates. - Heat oven to 375 degrees.
- Mix turkey, bread crumbs, salt, pepper, onions, egg and fresh herbs.
- Shape into 4 patties.
- Coat both sides of patties with almonds.
- Place patties on rack in broiler pan.
- Bake about 30 minutes or until patties are no longer pink in the center.
- These can also be grilled on foil.

ALMOND CRUSTED TURKEY TENDERLOIN
If you have difficulty finding turkey tenderloins, substitute boneless, skinless chicken breasts. This is a recipe I found in my Cuisine at Home Magazine and posting for safe keeping.

- Preheat oven to 250 degrees.
- Pulse 1/3 cup almonds in mini food processor until finely ground. Transfer to a shallow dish and stir in panko. Roll tenderloins in almond-panko mixture to coat.
- Heat oil in a saute pan over medium-high heat, 2 minutes. Sear tenderloins until golden, about 5 minutes. Flip and saute until meat registers 160 degrees on an instant read thermometer, about 5-8 minutes more. Remove tenderloins from pan, transfer to a baking sheet, and keep them warm in the oven. Return pan to heat.
- Whisk sherry and flour together to form a slurry.
- Deglaze pan with broth, scraping up browned bits from bottom. Stir in slurry, whisking constantly to prevent lumps. Boil 1 minute to eliminate flour taste, then simmer to thicken slightly. Stir in butter until melted, then add almonds. Season to taste with salt and pepper. Garnish with parsley.

ALMOND-CRUSTED TURKEY CUTLETS WITH MUSTARD CREAM

- Set a rack on a sheet pan. Mix the almond meal, garlic salt, and poultry seasoning on a large sheet of plastic wrap or wax paper. Mix the sour cream and mustard in a small bowl. Brush a turkey cutlet with a thin coat of the sour cream mixture. Dredge in the almond mixture until thoroughly coated and place on the rack to rest. Repeat with all of the cutlets.Heat the oil in a large, nonstick skillet over medium heat. Brown the cutlets on both sides, reduce the heat, and cook on medium-low until the cutlets are firm to the touch, 5 to 8 minutes (depending on the thickness), turning twice during cooking. Remove the cutlets to a serving platter, and drain off any oil left in the pan. Add the broth to the skillet and heat to simmering. Stir in the remaining sour cream mixture and heat through (don't boil, or the sour cream will split). Pour over the cutlets, and serve.From Homemade In A Hurry.
