ALMOND DELIGHTS
This simple recipe is made with almonds and pantry staple ingredients. They are so tender and have the perfect buttery crumb. I love these bars!

Steps:
- Grease and flour 9 inch cake pan. Preheat oven to 350.
- Toast almonds on a cookie sheet for 3 - 5 minutes while mixing batter.
- Blend melted butter and sugar, and beat in the eggs. Add extracts. Add salt and flour and mix well. Spread into pan. Sprinkle with almonds and 1 tablespoon sugar.
- Bake 30-35 minutes until golden and toothpick comes out clean.

- Beat sugar into the eggs in small amounts, assuring each addition dissolves completely before introducing the next.
- Whisk cream, milk, vanilla extract, and almond extract into the egg mixture; fold almonds into mixture.
- Pour into the container of an ice cream maker; freeze according to the manufacturer's instructions.

Steps:
- Melt butter in cake pan add brown sugar, flour, coconut, almond mix well and bake in oven 350 degrees 15 -20 minutes till brown stirring a few times. Take out and cool. mix pudding and milk till thick than add cool whip until blended. Pour 1/2 pudding mixture into glass 8x12 dish sprinkle 1/2 almond mixture and then repeat finsih with the almond topping and chill.
ALMOND DELIGHT
Steps:
- Mix coconut, slivered almonds, brown sugar, plain flour, and melted butter. Spread out on cookie sheet and brown in 325 degrees F oven for 45 minutes, stirring occasionally.
- Mix vanilla instant pudding mix and sweet milk. Beat until thick. Fold into Cool Whip. Cool.
- Spread 1/2 of browned almond mix in bottom of long Pyrex baking dish or oblong pan (reserve the rest). Pour pudding in and then spread rest of topping on. Chill for 4 hours or longer.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with lightly greased parchment paper.
- Soak dates in hot water until soft, 6 to 10 minutes. Drain.
- Combine dates, almond pulp, oats, almond milk, almond flour, coconut flour, coconut oil, applesauce, vanilla extract, cacao nibs, cinnamon, salt, and nutmeg in a food processor. Process to the consistency of cookie dough, adding water if needed.
- Roll 1 tablespoon of cookie dough with your hands. Pinch sides with your fingers to form a square. Place on the prepared baking sheet and press down with your fingers or a fork to flatten slightly. Repeat with remaining dough.
- Bake in the preheated oven until golden brown, about 20 minutes. Let cool.
- Melt dark chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 2 minutes. Drizzle melted chocolate over cookies.

Steps:
- Cream butter and sugar together.
- Add in egg yolks.
- Whisk egg whites until smooth.
- Fold in sieved flour, ground almonds, egg whites and the melted cooking chocolate.
- Bake in a loaf tin for 350 degrees Fahrenhit or 180 degrees celcius for about 30 minutes.
- For the topping, melt 200g cooking chocolate over hot water and pour onto cake.
- Decorate with almond flakes and cherries.
