GREEK YOGURT BISCUIT RECIPE WITH CHEDDAR
Cheesy biscuits made with yogurt and almond flour--low-carb and grain-free.

Steps:
- Preheat oven to 350˚F.
- Stir first four ingredients together in medium bowl.
- Add butter and cut into almond flour mixture until it resembles coarse oatmeal.
- Combine eggs and smaller amount of yogurt in a separate bowl before adding to dry mixture. Add shredded Cheddar cheese and stir until all flour is lightly moistened. If dough seems dry, add slightly more yogurt.
- Use an ice cream scoop or two spoons to dip biscuit dough onto a greased cookie sheet. With damp fingers, lightly tamp each biscuit to give it a flat top but don't flatten.
- Bake for 15-20 minutes until golden brown.
- Biscuits are somewhat fragile when warm, so give them time to cool.
- These freeze well. Split in half and toast the cut half to make a delicious breakfast sandwich.

- Preheat oven to 350 degrees F. Line 12 muffin tin with parchment paper muffin liners (highly recommended) and spray with cooking spray. Set aside.
- In a large bowl, add eggs, maple syrup, yogurt, vanilla extract, lemon zest, baking powder, baking soda and salt. Whisk very well until combined and no lumps.
- Add almond flour (make sure to level the top with knife and do not pack) and stir gently with spatula until well mixed.
- Using an ice cream scoop, divide batter (each scoop will be heaping) between 12 openings of previously prepared muffin tin. Bake for 22 minutes on the middle rack or until toothpick inserted in the center comes out clean.
- Remove from the oven, let cool for 15 minutes and enjoy.

Fluffy and easy to make, these pancakes have a light texture and a great, slightly nutty taste. I make these pancakes with organic ingredients, but conventional ingredients can be used as well.

- Preheat a non-stick griddle to 375 degrees F (185 degrees C). Lightly grease the cooking surface with butter.
- Sift the flour, baking powder, baking soda, and salt together into a mixing bowl. Mix the almond flour and sugar into the flour mixture until just blended. Stir the yogurt, eggs, and butter together in a separate bowl; add to the flour mixture, stirring only until just incorporated. The batter will be thick and airy.
- Pour about 1/3 cup of the batter onto your preheated cooking surface, leaving space for the pancakes to expand. Cook until dry around the edges and bubbles have formed over the top, 2 to 3 minutes; turn and continue cooking until done in the middle and golden brown, another 1 to 2 minutes.
