- Preheat oven to 325°F. SWEETNED CONDENSED MILK: Place heavy cream, butter, and sweetener in a medium sized saucepan or skillet over medium heat. The larger and more shallow the pan, the faster your milk will reduce. Bring to a boil, then reduce heat and simmer about 15 to 20 minutes or until reduced by nearly half, stirring several times to prevent scorching. Remove from heat and allow to cool. COOKIES: Mix unsweetened coconut, almonds, and chocolate chips. Add Sweetened Condensed Milk to coconut mixture and stir until combined. Using a small cookie scoop, place on a cookie sheet. With damp fingers, mound into cookie shapes an press down slightly. Bake for 15 minutes or until edges are golden brown. Remove from oven and let cool; cookies will firm up as they cool.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
- Combine flour, baking soda, and salt in a bowl.
- Beat white sugar, brown sugar, and banana together in a separate bowl until smooth and creamy; beat in eggs, 1 at a time, until well mixed. Stir in vanilla extract.
- Stir banana mixture into flour mixture until batter is well mixed; fold in chocolate chips, coconut, and almonds. Drop batter by rounded spoonfuls onto the prepared baking sheets.
- Bake in the preheated oven until edges of cookies are beginning to crisp, 8 to 10 minutes. Cool cookies on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
