Vegan Almond-Vanilla Pudding image

I love the way vanilla beans add so much flavor and this is the case with this vegan pudding. The little black seeds scraped from a vanilla bean add not only taste but a nice visual appeal.

1 ¼ cups unsweetened almond milk (such as Silk®), divided
2 tablespoons cornstarch
¼ cup agave nectar
½ vanilla bean, scraped
1 ½ teaspoons coconut oil
2 tablespoons vegan whipped cream (such as So Delicious Coco Whip®)

Steps:

  • Combine 1/4 cup almond milk and cornstarch in a small bowl and stir until completely blended.
  • Heat remaining 1 cup almond milk and agave nectar in a saucepan over medium-low heat until mixture barely starts to boil. Stir in cornstarch mixture. Continue cooking and stirring at a slow boil until thickened, 7 to 9 minutes. Remove from heat and stir in vanilla seeds and coconut oil.
  • Pour into two pudding dishes and refrigerate, 8 hours to overnight. Serve topped with vegan whipped cream.

6 croissants
8 eggs
3 cups milk
2 cups sugar
2 teaspoons vanilla extract
1 teaspoon almond extract
1/4 cup almond paste, cut into small cubes
1/2 cup chopped almonds
STRAWBERRY CARAMEL SAUCE:
2 cups sugar
2 cups heavy whipping cream
1/2 cup frozen sweetened sliced strawberries, thawed

Steps:

  • Cut croissants into 1/2-in. pieces; place in a greased 13x9-in. baking dish. In a large bowl, combine the eggs, milk, sugar and extracts. Pour over croissants; let stand for 10 minutes. Dot with almond paste; sprinkle with almonds (dish will be full). , Bake at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. , Meanwhile, in a heavy saucepan over medium heat, cook and stir sugar with a wooden spoon until sugar has melted and turned a deep amber color, about 20 minutes. , Add 1 cup cream (mixture will bubble). Stir in remaining cream; cook 10-15 minutes longer or until caramelized sugar is completely dissolved. Remove from the heat; stir in strawberries. Serve with bread pudding.

Steps:

  • In a small saucepan, whisk together cornstarch, sugar, and salt.
  • Whisk in almond milk until no lumps remain (do NOT add vanilla yet!).
  • Bring mixture to a boil over medium heat, stirring occasionally.
  • Whisk the boiling mixture constantly for 2 (count 'em -- 2) minutes.

⅓ cup cornstarch
¼ teaspoon salt
3 cups unsweetened almond milk
1 teaspoon butter
1 teaspoon vanilla extract

Steps:

  • Mix sugar, cocoa powder, cornstarch, and salt together in a saucepan; whisk in 1/4 cup almond milk until foamy and smooth. Continue adding almond milk, 1/4 cup at a time, to cocoa mixture until mixture is smooth and foamy each time. Place saucepan over medium-high heat and cook, stirring constantly, until mixture comes to a simmer and starts to thicken, about 5 minutes.

1 cup thawed COOL WHIP Whipped Topping
1 cup mixed fresh fruit (blueberries, raspberries, blackberries, halved strawberries, sliced kiwi)

Steps:

  • Reserve 1 Tbsp. nuts. Finely chop remaining nuts; mix with wafer crumbs and butter. Press onto bottom and up side of 9-inch tart pan or pie plate.
  • Beat pudding mix and milk with whisk 2 min. Stir in COOL WHIP. Spoon into crust.
  • Refrigerate 3 hours or until firm. Top with fruit and reserved nuts just before serving.
