CHOCOLATE HONEY ALMOND TARTLETS



Chocolate Honey Almond Tartlets image

5 graham crackers (2 3/4 ounces)
1 tablespoon slivered almonds
2 tablespoons (1 ounce) unsalted butter, cut into 1/2-inch pieces, room temperature
1/3 cup heavy cream
2 tablespoons honey
1 cup (5 ounces) semi-sweet chocolate chips, such as Ghirardelli

Steps:

  • Preheat the oven to 350 degrees F. Line a mini-muffin tin with mini-cupcake liners.
  • Place the graham crackers and the almonds in the bowl of a food processor and process to fine crumbs, 15 to 20 seconds. Add the butter and pulse until incorporated. Add 1 tablespoon of the crumb mixture to each muffin cup, gently pressing it into the bottom of the cup with your fingers or a shot glass. Bake for 8 minutes, or until the crusts are firm, rotating the tin halfway through.
  • In a small saucepan over low heat, whisk the cream and honey together until the honey has dissolved. Raise the heat to medium and bring the mixture to just below the boil. Place the chocolate chips in a medium bowl. Pour the hot cream over the chocolate and whisk until smooth. Pour 1 tablespoon of the chocolate filling into each prepared muffin cup. Refrigerate for at least 2 hours before serving.

1/3 cup sugar
1 tablespoon cornstarch
1/2 cup reduced-fat sour cream
3 large egg yolks, room temperature
1 tablespoon butter
1 teaspoon vanilla extract
1/2 teaspoon almond extract
CAKE:
4 large egg whites, room temperature
1/3 cup butter, softened
1-1/2 cups sugar, divided
2 large egg yolks, room temperature
1/3 cup fat-free milk
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup cake flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup sliced almonds
1/2 teaspoon ground cinnamon

Steps:

  • In a double boiler or metal bowl over simmering water, constantly whisk the sugar, cornstarch, sour cream and egg yolks until mixture reaches 160° or is thick enough to coat the back of a spoon. , Remove from the heat; stir in butter and extracts until blended. Press waxed paper onto surface of custard. Refrigerate for several hours or overnight., Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Line two 8-in. round baking pans with waxed paper. Coat sides and paper with cooking spray; sprinkle with flour and set aside., In a large bowl, beat butter and 1/2 cup sugar until blended, about 2 minutes. Add egg yolks; mix well. Beat in the milk, applesauce and vanilla (mixture may appear curdled). Combine the flour, baking powder and salt; add to butter mixture. Transfer to prepared pans; set aside., Using clean beaters, beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 2 tablespoons at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread evenly over batter; sprinkle with almonds and cinnamon., Bake at 350° for 25-30 minutes or until meringue is lightly browned. Cool in pans on wire racks for 10 minutes (meringue will crack). Loosen edges of cakes from pans with a knife. Using 2 large spatulas, carefully remove 1 cake to a serving plate, meringue side up; remove remaining cake to a wire rack, meringue side up. Cool cakes completely., Carefully spread custard over cake on serving plate; top with remaining cake. Store in the refrigerator.

Moira Hodgson rooted this classic out of Claudia Roden's terrific cookbook, "Everything Tastes Better Outdoors," and brought it to The Times in 1987: a flourless orange and almond cake that goes beautifully with blueberries or peaches, and is the perfect thing to carry along on a picnic. Extremely moist, it consists of two seeded oranges (peel and all), ground almonds, sugar and eggs - and no flour. Baked in a hot oven, it will be done in just about an hour or so, longer if the orange pulp is extremely wet. Opening the oven door to check will not harm it.

6 eggs
1/2 pound ground almonds
1/2 pound sugar
1 teaspoon baking powder

Steps:

  • Wash the oranges and simmer them, unpeeled, in water to cover for 2 hours. Cool, cut them open and remove the seeds. Puree the oranges, including the peel, in a food processor.
  • Heat oven to 400 degrees. Beat the eggs in a food processor or large bowl. Add the remaining ingredients, including the orange puree, and mix thoroughly. Pour into a buttered and floured cake tin, with a removable base if possible.
  • Bake for 45 minutes to 1 hour, or until a knife inserted in the center comes out clean. Cool in the pan before turning out.

This tart is filled with summer flavors and is so much easier than it looks.

Number Of Ingredients 11

240 g flour
2 egg yolks
2 tbsp cold water
125 g butter
30 g sugar
500 g redcurrants
3 egg whites
30 g sugar
1 tsp cornstarch
10 tbsp ground almonds
2 tbsp icing sugar

Steps:

  • Pulse together flour, sugar and butter in a food processor.
  • Whisk together egg yolks and water, pour inn i food processor, pulse all together.
  • Butter the tart pan and press dough evenly onto bottom and up sides of tart pan and prick the dough.
  • Chill crust until firm, about 30 minutes.
  • Strip redcurrants from stalks, wash and drain.
  • Beat the egg whites until stiff then beat in the sugar and cornstarch.
  • Stir in 7 tbsp ground almonds and fold redcurrants into the filling.
  • Heat oven to 180C/fan 160C/gas 4.
  • Bake the crust in middle of oven until center and edges are golden, for about 15 minutes.
  • Scatter the crust with almonds and pour inn redcurrant filling.
  • Heat oven to 150C and bake the tart in middle of oven for about 50 minutes.
  • Allow to cool then dredge with icing sugar before serving.

2 large eggs
2 egg whites
1/3 cup sugar
1/8 teaspoon salt
3 red tea bags
1/2 teaspoon grated orange peel (orange part only)
whole almond (to garnish)

Steps:

  • Preheat oven to 325 degrees F. Bring almond milk to a boil; steep tea 4-5 minutes or until a desired tea flavor is reached.
  • Meanwhile, whisk together eggs, whites, sugar and salt in a medium bowl until blended. Very gradually whisk hot milk mixture into egg mixture and stir until sugar is dissolved. If lumps appear, strain mixture through a fine sieve into a bowl or pitcher. Stir in orange zest.
  • Divide mixture between 6 ramekins or tea cups and bake in a water bath until set but still a bit jiggly when shaken, 50-60 minutes. Let cool, then wrap and chill for at least 4 hours. Garnish with almonds and serve.
