BIG AL'S CHICKEN
An excellent marinade and basting sauce that will amaze you.

Steps:
- In a jar with a lid, combine the vegetable oil, apple cider vinegar, egg substitute, garlic powder, paprika, poultry seasoning, salt, and pepper. Close the lid, and shake to blend. Place chicken in a shallow glass baking dish. Pour about 3/4 of the marinade over it, and reserve the rest for basting. Cover chicken, and refrigerate 8 hours, or overnight.
- Preheat grill for high heat.
- Lightly oil the grill grate. Place chicken on the grill, and discard marinade from the dish. Cook the chicken for 10 minutes on each side, or until juices run clear. Brush reserved sauce onto chicken just before serving.

- Whisk lime juice, dark rum, olive oil, soy sauce, garlic, cinnamon, ginger, and hot sauce together in a bowl.

Steps:
- Combine all ingredients in small bowl. Place chicken in food storage bag. Pour marinade over chicken. Refrigerate 4 hours or overnight, turning bag once or twice.
- Spray grill with cooking spray. Grill chicken until no longer pink.
RUM CHICA RUM CHICKEN
Steps:
- Whisk the rum, orange juice, orange zest, Worcestershire sauce, ginger, brown sugar, garlic, and cilantro together in a large bowl. Add the chicken pieces, cover with plastic wrap and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and place the chicken on the grill and cook until browned on both sides and the juices run clear, about 10 minutes per side, basting with leftover marinade a few times throughout. Serve sprinkled with cilantro and garnish with the orange slices.

Steps:
- Stir egg and 1 tablespoons water together with a fork.
- Combine flour, salt and pepper and coat each chicken piece, dip into egg mixture and then coat with breadcrumbs making sure to press crumbs in firmly.
- Heat oil and butter in large skillet over medium heat.
- Brown chicken 4 to 5 minutes on each side.
- Place browned chicken on cookie sheet or oven proof platter, top each piece with a slice of ham and slice of cheese.
- Bake at 350 degrees, until cheese melts.
- For the dipping sauce combine mustard and mayonnaise.
