AMANDA'S PARMESAN CHICKEN
This recipe is delicious and very easy to make. Great to make for a large group. We made this recipe for the dinner party that we had for a group of my daughter and her friends for Homecoming 2008. It is so good. We looked for recipes all over Zaar and the Internet. This recipe came from Simple Recipes.

Steps:
- Preheat oven to 450 degrees F.
- Combine the minced garlic with the melted butter in a bowl.
- In another bowl combine bread crumbs, parmesan, parsley, garlic powder, italian seasoning, and pepper.
- Dip chicken pcs into garlic butter, then into crumb mixture to coat.
- Place coated chicken pieces on to a 9x13 baking dish.
- Try to leave a little room between each piece.
- Drizzle with remaining garlic butter.
- Bake uncovered 15 minutes, or until chicken is cooked through and juices run clear.
- The chicken will be much more browned on the bottom than on the top.

CHICKEN PARMESAN
My version of chicken Parmesan is a little different than what they do in the restaurants, with less sauce and a crispier crust.

Steps:
- Preheat an oven to 450 degrees F (230 degrees C).
- Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.
- Beat eggs in a shallow bowl and set aside.
- Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
- Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.
- Dip a flour-coated chicken breast in beaten eggs. Transfer breast to the bread crumb mixture, pressing crumbs into both sides. Repeat for each breast. Let chicken rest for 10 to 15 minutes.
- Heat 1/2 inch olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken in the hot oil until golden, about 2 minutes per side. The chicken will finish cooking in the oven.
- Transfer chicken to a baking dish. Top each breast with 2 tablespoons tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle remaining Parmesan over top and drizzle each with 1/2 teaspoon olive oil.
- Bake in the preheated oven until cheese is browned and bubbly and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:
- Heat oven to 400 degrees. Grease baking pan, should be at least 13x9x2.
- Melt butter. Mix together all dry ingredients.
- Glide each half of garlic clove over chicken parts until covered. Throw garlic away.
- Dip chicken into butter, then coat with cheese mixture.
- Arrange chicken skin side down in pan. Pour remaining butter on top of chicken. Bake uncovered 30 minutes.
- Turn chicken; bake uncovered 20 minutes (or until done, 160 degrees internally.).
- Serve with asparagus and potato salad.

- Preheat oven to 425 degrees. In a small bowl, combine breadcrumbs, grated parmesan, paprika, salt, pepper, garlic powder and basil.
- Press each chicken thigh/breast into the bread crumb mixture on each side. Line a baking sheet with parchment paper. Lay each piece of chicken onto the sheet. Bake for 15 minutes then flip chicken over and cook for another 15 minutes. When chicken is done, juices will run clear, internal temp will be about 170 degrees.
- Place a slice of mozzarella cheese on top of the chicken and place back in the oven until cheese is melted, about 2-3 minutes. Remove from oven.
