2-3/4 cups whole-milk ricotta cheese
1/3 cup cornstarch
1/4 cup amaretto
2 packages (8 ounces each) cream cheese, softened
1-1/2 cups sugar
1 cup sour cream
5 large eggs, room temperature, lightly beaten
TOPPING:
1 cup sour cream
2 tablespoons sugar
2 tablespoons amaretto
GARNISH:
1 tablespoon light corn syrup
1 cup fresh cranberries
1/3 cup sugar
1/2 cup sliced almonds, toasted

Steps:

  • Line a strainer or colander with 4 layers of cheesecloth or 1 coffee filter; place over a bowl. Place ricotta in prepared strainer; cover ricotta with sides of cheesecloth. Refrigerate at least 8 hours or overnight. Remove ricotta from cheesecloth; discard liquid in bowl., Preheat oven to 350°. In a small bowl, mix cornstarch and amaretto. In a large bowl, beat cream cheese, sugar, sour cream and drained ricotta until smooth. Beat in amaretto mixture. Add eggs; beat on low speed just until blended., Pour into a greased 10-in. springform pan. Place on a baking sheet. Bake until center is almost set, 1 to 1-1/4 hours. Let stand 5 minutes on a wire rack., In a small bowl, mix topping ingredients; spread over top of cheesecake. Bake 5 minutes longer., Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled. Remove rim from pan., For garnish, place corn syrup in a small microwave-safe bowl. Microwave, uncovered, until warm, about 10 seconds. Add cranberries; toss to coat. Place sugar in a small bowl; add cranberries and toss to coat. Place on waxed paper and let stand until set, about 1 hour., Top cheesecake with almonds and sugared cranberries.

1 cup graham cracker crumbs
3 tablespoons white sugar
3 tablespoons butter
2 (8 ounce) packages cream cheese
1 ¼ cups white sugar
3 tablespoons cornstarch
1 (16 ounce) container sour cream
1 ½ teaspoons vanilla extract
5 tablespoons amaretto liqueur
½ teaspoon salt
4 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the graham cracker crumbs and the 3 tablespoons white sugar. Add the melted butter and mix well. Press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes, set aside.
  • In a large bowl, combine cream cheese, sugar, and cornstarch, and mix until smooth. Add sour cream, vanilla, amaretto liqueur, and salt. Mix until well blended. On low speed of an electric mixer, add eggs one at a time, mixing well after each addition. Pour batter over crust.
  • Bake in preheated oven for 60 minutes. Remove from oven. Loosen around the edges with a knife and cool on a wire rack while still in pan. Refrigerate, remove from pan when completely chilled.

Asking for different custard recipes, which my dad just loves, I was given this recipe. I have not tried it, but it looks really good!

16 ounces half-and-half
2 1/2 ounces granulated sugar
5 egg yolks
1 pinch salt
1 ounce Amaretto
1/2 teaspoon vanilla flavoring
1/4 teaspoon almond flavoring
1 1/2 ounces almond paste

Steps:

  • Warm Half& Half.
  • Place sugar, egg yolks, salt, Amaretto, vanilla flavor, almond flavor, and almond paste in another bowl, mix well.
  • Mix the Half& Half with egg yolk mixture.
  • Pour mixture through a sieve.
  • Pour mixture into well-buttered and sugared ceramic molds.
  • Bake at 350 degrees in water bath for about 45 minutes or until set.
  • Cool, unmold, and serve with fresh sliced fruit, fruit sauce, caramel sauce, or whipped cream.
  • Yield: four servings.

1 (16-ounce) loaf honey white bread, sliced and divided
1 (8-ounce) package cream cheese, softened
9 large eggs, divided
1/4 cup sugar, plus 2 tablespoons sugar
3 teaspoons vanilla extract, divided
11/4 cups almond filling, plus 2 tablespoons almond filling
1 cup butter, melted and divided
2 1/2 cups half-and-half
Dash salt
1 egg yolk
1/4 cup slivered almonds
Amaretto Cream Sauce, recipe follows
1/2 cup amaretto liqueur
2 tablespoons cornstarch
1 1/2 cups whipping cream
1/2 cup sugar

Steps:

  • Coat a 13 by 9 by 3-inch pan with cooking spray. Arrange 4 1/2 bread slices in bottom of prepared pan, cutting slices, as necessary, to fit pan.
  • Beat cream cheese, 1 egg, 1/4 cup sugar, and 1 teaspoon vanilla with an electric mixer until smooth. Spread half of cream cheese mixture over bread.
  • Whisk together 1 1/4 cups almond filling and 1/2 cup melted butter. Spread half of almond mixture over cream cheese mixture. Repeat layers once, using 4 1/2 bread slices, remaining cream cheese mixture, and remaining almond mixture.
  • Cut remaining bread slices into 1-inch cubes, sprinkle evenly over almond mixture.
  • Whisk together remaining 8 eggs, remaining 2 teaspoons vanilla, half-and-half, and salt; pour over bread cubes. Cover and chill 30 minutes or until most of egg mixture is absorbed.
  • Preheat the oven to 325 degrees F.
  • Whisk together remaining 1/2 cup melted butter, 2 tablespoons almond filling, 2 tablespoons sugar, and egg yolk until blended. Drizzle evenly over bread pudding; sprinkle with almonds.
  • Bake for 1 hour or until set. Serve warm or chilled with Amaretto Cream Sauce.
  • Combine amaretto and cornstarch, stirring until smooth.
  • Cook cream in a heavy saucepan over medium heat, stirring often, just until bubbles appear; gradually stir in amaretto mixture. Bring to a boil over medium heat, and boil, stirring constantly, 30 seconds. Remove from heat; stir in sugar, and let cool completely.

1 tablespoon powdered unflavored gelatin
4 tablespoons water
7 tablespoons sugar
2 cups heavy cream, divided
4 tablespoons Amaretto
4 -5 amaretti cookies

Steps:

  • Sprinkle the gelatin over 4 Tb. water and allow to soften about 15 minutes.
  • In a saucepan, melt the sugar over low heat until caramel color, about 5 minutes. Remove from heat.
  • In another saucepan, heat 1 cup cream to just a simmer. Gradually stir the hot cream into the caramel sugar.
  • Add the amaretto and gelatin. Allow to cool to room temperature.
  • Whip 1 cup of remaining cream until stiff. Gently fold it into the caramel mixture.
  • Spoon the mixture into 6 custard cups and refrigerate about 3 hours.
  • Crumble the amaretti cookies in a food processor.
  • Sprinkle the top of the custard with the crumbs and serve.

A lovely sauce for pasta and chicken (or whatever you may like). Not for dieters, but worth every calorie! I love amaretto and looked high and low for a sauce recipe. I couldn't find any on Zaar that fit the bill so this one was created based on the few that I found from other online sources. It does not have an overwhelmingly amaretto flavour, but you will detect a hint of sweetness. Smells divine! Note: Cook time is approximate and your yield may vary, depending on how much you let it reduce after each addition.

2 tablespoons onions, minced
2 tablespoons olive oil
2 ounces Amaretto (di Saronno, etc)

Steps:

  • In a large frying pan over medium heat, sauté garlic and onion in oil until tender.
  • Add Amaretto, simmer till reduced by half.
  • Add chicken stock, simmer till reduced by half.
  • Add whipping cream, simmer till reduced by half or till desired thickness is reached.
