SCRAMBLED EGG AND SAUSAGE BREAKFAST BOWL



Scrambled Egg and Sausage Breakfast Bowl image

I made this dish with random items I had in my apartment. It ended up tasting delicious so I decided I would share it with you. It is like a bowl full of deliciousness. You can customize it to your taste buds by using different cheese flavors such as tomato basil, garlic, and many more! It's super easy and super yummy. Comment if you like it!

3 tablespoons butter, divided
4 eggs
4 spreadable cheese wedges (such as The Laughing Cow®), cut into small pieces
2 smoked sausage links, cut into 1/4-inch slices
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon seasoned salt (such as Morton® Season-All®)
1 cup bread crumbs

Steps:

  • Melt 1 tablespoon butter in a skillet over medium heat. Whisk eggs and cheese together in a small bowl. Pour into the skillet; cook and stir until scrambled and set, 5 to 8 minutes. Remove from heat.
  • Melt remaining 2 tablespoons butter in a separate pan. Add sausage, Worcestershire sauce, soy sauce, brown sugar, and seasoned salt. Cook and stir until sugar is dissolved and sausage is browned, 5 to 8 minutes.
  • Divide scrambled eggs between 2 bowls. Place sausage mixture over the eggs. Drizzle pan drippings on top. Sprinkle bread crumbs over the bowls to create a crust.

1 ½ teaspoons olive oil
2 eggs
1 pinch salt and ground black pepper to taste
¼ teaspoon seasoned salt
¼ teaspoon ground black pepper
1 avocado, diced
2 tablespoons crumbled feta cheese

Steps:

  • Stir water and quinoa together in a rice cooker; cook until quinoa is tender, about 15 minutes.
  • Heat olive oil in a skillet over medium heat and cook eggs to desired doneness; season with seasoned salt and pepper.
  • Combine quinoa and eggs in a bowl; top with avocado and feta cheese.

Potato tots topped with spicy eggs scrambled with green onions and bell pepper are then topped with Cheddar cheese. I usually cook for one, so this egg bowl recipe is small. It can easily be doubled or tripled for more servings. I enjoy it with ketchup.

12 frozen bite-size potato nuggets (such as Tater Tots®)
2 eggs
1 ½ tablespoons salsa
1 tablespoon milk
cooking spray
¼ cup chopped green onion
¼ cup chopped green bell pepper
1 ounce grated Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Spread potato nuggets on a baking sheet.
  • Bake in the preheated oven for 8 minutes. Turn potato nuggets and bake until crispy, 8 minutes more.
  • While potatoes bake, combine eggs, salsa, and milk in a bowl and whisk to combine.
  • Heat a skillet over medium heat and coat with cooking spray. Add egg mixture. Scramble until partially set, about 2 minutes. Add green onion and bell pepper. Cook until eggs are set, about 5 minutes more. Transfer eggs to a plate.
  • Place cooked potato nuggets in a large bowl and top with scrambled eggs and grated Cheddar cheese. Add salt and pepper.

12 slices bacon
1 (10 3/4 ounce) can cream of chicken soup
1 tablespoon hot salsa
1/2 cup onion
1 cup mushroom
1 cup extra-sharp cheddar cheese
8 large eggs
1/2 cup milk
4 English muffins, toasted

Steps:

  • Fry bacon and drain on paper towels.
  • Pour off all but 1 1/2 tbsp of the drippings and sauté the mushrooms and onions in the skillet until just soft.
  • Stir in the soup, milk and salsa and heat until it begins to bubble. Stir in the cheese until it melts.
  • Spray Pam on a 9x13" pan and pour the mixture into the pan.
  • Break the eggs over top of the sauce.
  • Crumble and sprinkle on the bacon.
  • Bake at 350°F for 20 minutes.
  • Spoon 1 egg and sauce on toasted muffin half.
  • Repeat with other muffins.
