Maryland Crab Cakes are all about the crab. They are loaded with lump pieces of crab, very little filler so the crab taste shines.

3 tablespoons mayonnaise
1 tablespoon dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon Old Bay Seasoning
2 teaspoons lemon juice
1 egg
1 tablespoon chopped fresh parsley
1 pound lump crab meat (picked over for shells)
1/2 - 3/4 cup panko bread crumbs

Steps:

  • In a small bowl whisk together mayonnaise, dijon, Worcestershire, Old Bay Seasoning, lemon juice, egg and parsley.
  • Add the crab meat and panko. Gently fold them in. Be careful not to break up the crab, you want full pieces of crab in each bite.
  • Scoop about 1/2 cup of mixture into rounds on a parchment lined baking sheet. Refrigerate for at least 1 hour to let them set.
  • Lightly coat a skillet with oil and heat over medium high heat. Add crab cakes and cook 2 - 3 minutes per side or until golden brown and cooked through. Serve hot.

1 (12-ounce) store-bought angel food cake
1/2 cup fat free vanilla yogurt
1 (16-ounce) container lite whipped topping, divided use (recommended: Cool Whip Lite)
1 (8.25-ounce) can peach slices, drained, cut in 1/2 (recommended: - S and W)
1 cup seedless grapes, sliced in 1/2
1/2 cup sugar free apricot preserves (recommended: Smucker's)
1 (11-ounce) can Mandarin orange segments, drained (recommended: Dole)
1 cup plain shredded coconut, plus 1 cup toasted
1 (8-ounce) can pineapple slices, drained and cut in 1/2 (recommended: Dole)
1/4 cup frozen cherries, defrosted

Steps:

  • Cut the cake horizontally into thirds and place the bottom layer on a serving plate. In a small bowl add the yogurt and a 1/2 cup of whipped topping and mix well to blend. Spread on the bottom layer and top with the sliced grapes. Add the middle layer and spread with the preserves and cover with the orange segments. Put the last layer on top and frost entire cake with remaining whipped topping. Toss 1 cup coconut with the toasted coconut and press into sides of cake. Arrange pineapple and cherries on top.
  • Refrigerate until ready to serve. Serve at room temperature.

3 large eggs plus 2 yolks, room temperature
2/3 cup sugar
2 tablespoons cornstarch
2 tablespoons cold unsalted butter
1 tablespoon fresh lemon juice
Pinch fine salt
2 oranges
1 cup whipping cream
1 tablespoon confectioners' sugar
2 teaspoons cream sherry, such as Oloroso
18 soft ladyfingers
1/2 cup sweetened shredded coconut, lightly toasted

Steps:

  • 1. Bring pineapple juice to a simmer in a small saucepan over medium heat. Whisk eggs, yolks, sugar and cornstarch in a small bowl. Slowly pour hot juice into egg mixture, while whisking constantly. Return mixture to pan and cook, stirring constantly, until it boils and coats back of a spoon. Continue cooking about 1 more minute. Remove from heat, stir in butter, lemon juice, and salt. Strain mixture into a small bowl set over ice. Place a piece of plastic wrap directly onto surface of curd and set aside to cool. 2. Finely grate zest from 1 orange and reserve. Trim and discard peel from remaining orange and cut out segments. Chop and toss with zest. Whip cream and confectioners' sugar together until soft peaks form and fold into chopped orange.
  • 3. Juice zested orange into a bowl and stir in sherry. Lightly brush ladyfingers with this liquid and press into bottom and along sides of 6 ramekins. Evenly divide pineapple curd among ramekins. Top each with orange-whipped cream and toasted coconut. Refrigerate until set, at least 2 hours or overnight. Release cakes from ramekins to serve.

1/3 cup mayonnaise
2 tablespoons Dijon mustard
1 egg
1 egg yolk
2 teaspoons lemon zest
2 teaspoons lemon juice
2 cups ground almond meal, plus 2/3 cup for dredging
4 scallions, finely chopped
1 tablespoon chopped dill
1 tablespoon chopped tarragon
1 tablespoon chopped cilantro
1 pound lump crab meat, picked over
1/2 teaspoon salt
1/4 teaspoon white pepper
1/3 cup yellow cornmeal
1/2 to 3/4 cup canola or grapeseed oil for frying
2 egg yolks
2 teaspoons Dijon mustard
1 clove garlic, crushed
1/2 teaspoon lemon zest
2 teaspoons lemon juice
2/3 to 1 cup grapeseed oil
Salt and pepper to taste

Steps:

  • Make the crab cakes: Whisk together mayonnaise, mustard, egg, egg yolk and lemon zest and juice in a large bowl. Mix in 2 cups of almond meal, scallions and herbs until thoroughly combined. Gently fold in crab. Season with salt and white pepper, cover with plastic wrap and chill for 30 minutes.
  • Meanwhile, make the aioli: Combine egg yolks, mustard, garlic and lemon zest and juice in a blender or food processor and purée until smooth. With machine running, slowly drizzle in the grapeseed oil a few drops at a time until the mixture begins to thicken. Gradually increase the oil to a thin, steady stream, blending to a uniform creamy consistency. If aioli breaks, drizzle in a little lukewarm water a few drops at a time until consistency is reached again. Season with salt and pepper to taste. Will keep 2 days or more in an airtight container in the refrigerator.
  • Mix remaining 2/3 cup almond meal and cornmeal in a pie plate and season lightly with salt and pepper. Divide crab mixture into 12 equal portions and form into 2-inch patties. Coat in almond-cornmeal mixture.
  • Heat 1/4 cup canola or grapeseed oil in a 12-inch skillet over medium-high heat until the oil is hot but not smoking, about 2 minutes. Cook crab cakes in batches, 3 to 4 minutes per side until deep golden brown and crisp, wiping out the skillet and adding fresh oil between the batches. Transfer to a paper-towel-lined tray. Crab cakes can be kept warm in a 200-degree oven for up to 30 minutes.

1/2 cup vegetable oil
1 (11 ounce) can mandarin oranges, undrained
4 eggs
1 (20 ounce) can crushed pineapple, undrained
1 (6 ounce) package vanilla instant pudding mix
1 (8 ounce) carton Cool Whip, thawed

Steps:

  • CAKE: In a large mixing bowl, blend on low speed for 30 seconds: cake mix, oil, mandarin oranges and eggs.
  • Beat on medium speed for 2 minutes.
  • Pour into greased and floured 9 x 13 inch pan.
  • Bake at 350 degrees for 40 minutes.
  • TOPPING: Combine pineapple and pudding mix.
  • Let stand for 5 minutes.
  • Add Cool Whip.

Ambrosia is a food of the Gods - it's a heavenly treat! I love being able to prepare it ahead of time because the cooking time is quick. The very best crab cakes have a lot of wonderful crabmeat and very little else. It takes you to paradise by way of Key West!

1 lb lump crabmeat, check for shells
1 egg
1 tablespoon chives, shaved fine
1/2 tablespoon stone ground mustard
2 tablespoons mayonnaise
1 tablespoon dried red pepper flakes, minced fine
1/2 tablespoon Old Bay Seasoning
1/2 cup breadcrumbs
2 tablespoons butter
1 cup mayonnaise
1/4 cup chili sauce
2 tablespoons minced green onions
2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon bottled horseradish
salt and pepper

Steps:

  • Try not to break lumps but make sure there are no shell fragments.
  • Combine egg, mustard, mayo, chives, red pepper, Old Bay in bowl and mix well Place crab meat in separate bowl adding bread crumbs and then mayo mixture, toss gently, be careful not to overmix.
  • Let flavors blend 1/2 hour in the refrigerator.
  • Portion and form to a patty shape 1/2 to 1" thick.
  • Cover with plastic and chill until ready to cook.
  • Saute in very hot pan with whole butter, when first side is browned, turn over and put in 350 degree oven for five minutes.
  • Take out and put on paper towel to absorb excess butter.
  • Enjoy with the Louis sauce or your favorite seafood sauce and lemon wedges.
  • Another sauce that is great is a hollandaise with roasted red peppers blended altogether- it's a beautiful color and an excellent taste drizzled or served on the side.
