This delicious Ambrosia Salad is so easy to make and always a big hit with kids and adults alike! Made in just one bowl, this classic dessert salad is the perfection addition to your next gathering!

8 oz Cool Whip (, lite is fine)
1/2 cup sour cream (, light is fine)
11 oz mandarin oranges (drained)
20 oz crushed pineapple (drained)
10 oz maraschino cherries (drained, halved, and patted dry)
1 cup sweetened coconut flakes
2 cups miniature marshmallows
3/4 cup chopped nuts (pecans, walnuts, cashews optional)

Steps:

  • Fold sour cream into Cool Whip in a large serving bowl.
  • Fold in remaining ingredients making sure the pineapple, oranges, and cherries have been properly drained.
  • Serve immediately or refrigerate until serving.

Glorified Rice is an old fashioned dessert salad consisting of white rice, mini marshmallows, pineapple, maraschino cherries and Cool Whip. Served cold, this vintage recipe is perfect for summer.

1 cup white rice, cooked and cooled
1/3 cup sugar
20 ounces crushed pineapple, drained
1/2 teaspoon vanilla extract
1/3 cup mini marshmallows
2 Tablespoons maraschino cherries, drained and chopped
1 cup Cool Whip or Whipped Heavy Whipping Cream

Steps:

  • Mix together rice, sugar, pineapple, and vanilla.
  • Stir in marshmallows and chopped cherries.
  • Fold in Cool Whip.
  • Cover and chill until ready to serve.

Number Of Ingredients 8

1/2 cup pecans
3/4 cup heavy cream
1/3 cup sour cream
3 cups mini marshmallows
1 1/2 cups diced pineapple (1/2-inch dice)
1 cup sweetened shredded coconut
One 11-ounce can mandarin oranges in light syrup, drained well
One 10-ounce jar maraschino cherries, stems removed and halved

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
  • Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
  • Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

1 cup light coconut milk
1 cup vanilla-flavored Greek yogurt
1 cup diced fresh pineapple
1 cup strawberries, sliced
1/2 cup blueberries
1/2 cup coconut flakes, toasted

Steps:

  • This fresh and light version of ambrosia salad includes fluffy and fragrant Minute® Instant Jasmine Rice simmered in smooth coconut milk, and mixed with creamy Greek vanilla yogurt. It's then topped with diced pineapple and lots of sweet berries for a refreshing treat. Step 1
  • Prepare rice according to package directions substituting light coconut milk for water. Let cool completely. Step 2
  • Fold Greek yogurt into rice. In a medium serving bowl, combine rice/yogurt mixture, pineapple, strawberries and blueberries. Sprinkle coconut flakes over top. Serve at room temperature, or chilled, if desired. Recipe Tips
  • Stir in 1 cup of mini marshmallows along with the fruit, if desired. For a lighter version, substitute coconut water for the coconut milk.

  • OPEN and DRAIN the cans of fruit. No need to rinse, but you do need to drain. If you have time, drain the fruit in a strainer for 30 minutes.
  • REMOVE the maraschino cherry stems if they are still attached. CUT the cherries in half. Reserve a few whole cherries to place on top of the salad.
  • WHIP the heavy cream. Pour the heavy cream into a cold bowl and whip using a hand mixer with a wire whip attachment for 4 to 5 minutes, or until the cream is whipped to soft to medium peaks.
