6 ounces semisweet chocolate
6 tablespoons heavy cream
2 tablespoons unsalted butter
2 tablespoons unsalted butter, softened
2 tablespoons unsweetened cocoa powder
3/4 cup unsalted butter, softened
1 cup granulated sugar
3/4 cup dark brown sugar
4 large eggs
1/2 teaspoon salt
1 teaspoon vanilla extract
3/4 teaspoon baking powder
1/2 cup vegetable oil
1/2 cup mashed banana (about 1 large)
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2/3 cup powdered sugar
3 tablespoons unsweetened cocoa powder
3 tablespoons whole milk
12 dried banana pieces, for decoration

Steps:

  • For the fudge filling:.
  • Finely chop the chocolate and place into a medium heat-proof bowl.
  • Heat the cream and butter in a small pot until the butter has melted and the cream is gently steaming.
  • Pour this over the chocolate in the bowl. Let sit for 5 minutes then gently stir until all the chocolate has melted.
  • Let this mixture cool at room temperature for 45-60 minutes, stirring occasionally, until thickened but still pipeable.
  • Prepare the pan:.
  • Preheat the oven to 350 degrees F.
  • Use the 2 tablespoons of softened butter and a pastry brush to coat a 12-cup bundt pan very well. Add the cocoa powder to the the pan, tilting and tapping the pan to coat as much of the inside as possible. Tap out any excess cocoa powder.
  • For the cake:.
  • In a large bowl, beat the butter, granulated sugar and dark brown sugar together until smooth. Beat in the eggs one at a time until smooth. Add the salt, vanilla, baking powder, vegetable oil and mashed banana and stir together until well-combined.
  • Add the flour and cocoa powder to the bowl and mix until just combined.
  • Scoop 3 cups of the cake batter into the prepared bundt pan. Spread out into an even layer.
  • Transfer the thickened, cooled fudge filling to a piping bag. Pipe the fudge filling in a thick ring all the way around in the centre of the batter.
  • Cover the fudge filling with the remaining cake batter and spread out evenly in the pan.
  • Bake for 35-40 minutes. The cake will look risen and dry on top. You won't be able to test this cake with a toothpick as the centre will still be gooey when the cake is finished baking, so you must ensure your oven is at the correct temperature.
  • Remove the cake from the oven and let cool for 20 minutes in the pan. Loosen the edges of the cake with a small spatula or butter knife, flip the cake out onto a wire rack and leave to cool completely.
  • For the frosting:.
  • In a small bowl, stir together the powdered sugar, cocoa powder and milk until smooth.
  • Spoon over the top of the cooled cake, letting it drip down the sides of the cake. Top with the dried banana chips and leave the icing to set for a few minutes before cutting into the cake.

I also added half a banana for decoration on the cake. Can't wait to bake it again! I adapted a bit this recipe from a R. Reisman recipe.

3 tablespoons margarine or 3 tablespoons butter
1/3 cup granulated sugar
1 egg
1 large ripe banana, mashed
1 teaspoon vanilla
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 cup low-fat yogurt
3 tablespoons margarine or 3 tablespoons butter
3/4 cup brown sugar
1 egg
3 tablespoons cocoa
1/2 cup flour

1/3 cup low-fat yogurt
1 1/2 cups 5% fat ricotta cheese
3/4 cup icing sugar
1/4 cup cocoa
1 banana, sliced thinly

Steps:

  • Preheat oven to 350° F (180° C and spray 2 8-inch round cake pans with vegetable spray.
  • Banana Cake: Combine margarine and sugar in large bowl or food processor; mix until smooth. Add egg, banana and vanilla; mix until well-combined. In small bowl, stir together flour and baking soda; add flour mixture to banana mixture alternately with yogurt and mix just until combined. Pour into prepared pan and bake for 15 to 20 minutes or until cake tester inserted in the center comes out clean.
  • Chocolate Fudge Cake: Combine margarine, sugar and egg in large bowl; mix until well combined (mixture may look curdled). In small bowl, stir together cocoa, flour, baking soda and baking powder; add to the batter alternately with the yogurt. Mix just until combined. Pour into prepared pan and bake for 15 to 20 minutes or until cake tester inserted in the center comes out clean.
  • Frosting: Put ricotta cheese, icing sugar and cocoa in food processor; process until smooth, or beat with electric mixer.
  • Assembly: Put banana cake on serving plate; top with one-quarter of the frosting. Place banana slices over top. Put chocolate cake on top and use remaining frosting to frost sides and top.

On a more practical note: It's important to make sure the whipped cream cheese is truly at room temperature before you use it. 3/4 cup unsalted butter, softened
2 cups sugar
3 large eggs
1-1/2 cups mashed ripe bananas (2 to 3 large)
1-1/2 teaspoons vanilla extract
3 cups all-purpose flour

1 teaspoon salt
3/4 cup buttermilk
3/4 cup chopped unsalted pistachios, toasted
CREAM CHEESE FROSTING:
2 containers (8 ounces each) whipped cream cheese, room temperature
1/2 cup butter, softened
1/2 cup baking cocoa
4-1/2 cups confectioners' sugar
2 teaspoons vanilla extract
Additional chopped unsalted pistachios, toasted, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in 3/4 cup pistachios., Transfer to two greased and floured 8-in. round baking pans. Bake 45-55 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, beat cream cheese and butter until smooth. Add cocoa; mix until blended. Add confectioners' sugar and vanilla; beat until creamy., Place one cake layer on a serving plate; spread top with 1 cup frosting. Top with remaining cake. Spread top and sides with 2 cups frosting. Press pistachios into sides of cake if desired., Cut a small hole in the corner of a large pastry or plastic bag; insert #127 petal pastry tip. Fill the bag with remaining frosting. Pipe concentric circles of frosting over top of cake. Refrigerate for at least 1 hour or until frosting is set.

1 1/2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup granulated sugar
1 cup butter or margarine, softened
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
1 cup mashed bananas (about 2 large)
1 cup granulated sugar
1/2 cup unsweetened baking cocoa
1/2 cup milk
1/4 cup butter or margarine
2 tablespoons light corn syrup
1 to 1 1/2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In medium bowl, mix flour, baking soda, cinnamon and salt; set aside.
  • In large bowl, beat 1 cup sugar and 1 cup butter with electric mixer on high speed, scraping bowl occasionally, until fluffy. Beat in eggs and 1 teaspoon vanilla. Gradually beat in flour mixture alternately with buttermilk until smooth. Stir in bananas. Pour into pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center of cake comes out clean. Cool completely, about 1 hour.
  • Meanwhile, in 2-quart saucepan, mix 1 cup granulated sugar and the cocoa. Stir in milk, 1/4 cup butter and the corn syrup. Heat to boiling, stirring frequently. Boil 3 minutes, stirring occasionally; remove from heat. Beat in powdered sugar and 1 teaspoom vanilla with spoon until smooth and spreadable. Spread Fudge Frosting on cooled cake.

1 cup mashed banana
1 lb powdered sugar (10X)
1/2 cup cocoa

Steps:

  • Cream together butter, sugar, eggs and vanilla on high speed of electric mixer for 1 1/2 minutes.
  • Add buttermilk.
  • Mix together flour, baking powder, baking soda and salt.
  • Add flour mixture alternately with mashed banana.
  • Beat only enough to blend, about 2 minutes.
  • Pour battered into 2 greased and floured 9 inch round cake pans and bake in preheated 350 degree (Fahrenheit) oven for 30 to 35 minutes.
  • Cool cake then prepare frosting.
  • Mix together powdered sugar, cocoa and salt.
  • Add gradually to butter, beating with electric mixer, adding just enough milk so that mixture is not stiff (If you add too much it will get too thin when you continue beating).
  • After all ingredients are blended, mix on high speed of your mixer for 3 to 4 minutes, carefully adding small amounts of milk if too thick.
  • Fill and frost cooled layers.

Everyone calls my daughter Anna Banana, and she happens to adore bananas! I made this cake in the shape of a heart. I wrote Happy Birthday in bright yellow on the chocolate fudge icing and made little perfect marzipan bananas for decorations.

1/2 cup unsalted butter
3/4 cup granulated sugar
2 eggs
1 teaspoon pure vanilla extract
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/4 cup sour cream (preferably Astro)
4 ounces bittersweet chocolate or 4 ounces semisweet chocolate
2 tablespoons cocoa (preferably Dutch processed)
1/3 cup milk
1/4 cup unsalted butter
1 1/2 cups sifted icing sugar (more if needed)
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350°F.
  • Butter a 9-inch springform pan (or heart-shaped pan.) Cream 1/2 cup butter until light.
  • Gradually beat in the granulated sugar.
  • Add the eggs one at a time and beat after each addition.
  • Beat in 1 teaspoon vanilla and the mashed bananas.
  • Sift or mix together the dry ingredients and add to the batter alternately with the sour cream.
  • Spoon the batter into the prepared pan evenly and bake for 30 to 40 minutes or until the cake springs back when gently pressed in the centre.
  • Cool for 10 minutes and invert.
  • Cool on a wire rack.
  • For the icing, melt the chocolate, cocoa, milk and 1/4 cup butter in the top of a double boiler.
  • Cook until smooth and cool slightly.
  • Beat in the icing sugar and 1 teaspoon vanilla.
  • Place the bowl over a larger bowl of ice and water and stir until the icing is spreadable.
  • Ice the cake and decorate as you wish.
