ANY FLAVOR CAKE MIX COOKIES
Very simple recipe to turn your favorite flavor cake mix into perfect cookies! (You know, the kind with a nice cracked pattern on top, and a tiny bit of almost under done center). We went on a diet so I no longer keep white flour in the house, however a single cake mix managed to elude me. I found it when I was looking for something to bring to church. Now I keep a cake mix for bringing cookies, it's a lot less dangerous than a bag of flour! (Its best with a mix that has pudding in it for chewiness; you can also use the dry ingredients from your favorite from scratch recipe).

Steps:
- Toss all ingredients into a bowl, using enough Crisco to form a stiff dough. (I found it to take less time than pulling my mixer out, so I mix by hand).
- Form into little balls, place on a baking sheet 2 inches apart, gently flatten the balls, and bake at 350°F for 8-10 minutes, till puffy, and just barely golden around the edges. (They do spread a little while baking).
- Remove from heat, cool 5 minutes before removing to a rack to cool. (Okay, I didn't use a rack the second time, they still turned out great!) They will shrink down a little in height and form a perfect cookie!

These cookies are easy to make and take only 5 ingredients but can be made to be any flavour and still taste great!

Steps:
- Cream together the sugar (50g) and butter/margarine (100g) until light and fluffy.
- Add the vanilla extract (1 tsp) and combine.
- Fold in the flour (150g) to create a dough.
- Fold in the favouring (50g).
- Separate into 12 balls of dough (each around 30g) and flatten with a wooden spoon on a non-stick baking tray.
- Bake at 170°C (fan)/200°C/gas mark 5 for 13-14 minutes or until a light golden brown.
ANY-FLAVOUR COOKIES
You can use any kind of (sweet) liquid to make these - fruit juice, iced tea (or other infusion)... even a smoothie; for a more grown up taste, try some liqueur or coffee. They work up really quickly, are dense and chewy, and are vegan.

- Cream margarine and vanilla with sugar.
- Mix salt and baking powder with flour.
- Incorporate into margarine mixture, alternating with the liquid. If they are too dry, add a little bit of liquid.
- Preheat oven to 350°F.
- Roll into 1-inch balls and place on a cookie sheet; flatten slightly with a fork.
- Bake 25-30 minutes, until bottoms are nice and golden.
