1 cup sugar (turbinado works great)
1 (18 1/4 ounce) package white cake mix
1/2 cup light margarine, melted (may sub butter)
1 cup toasted walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Spread apple pie filling on bottom of 9 x13 baking dish.
  • In a bowl, mix together blueberries and 3/4 cup sugar; spoon over apple pie filling in pan.
  • Sprinkle cake mix evenly over the fruit then drizzle with melted butter.
  • Sprinkle with walnuts and remaining 1/4 cup sugar.
  • Bake 45-50 minutes, or until golden and bubbly.

3 ½ cups peeled and sliced apples
1 ½ cups blueberries
1 tablespoon lemon juice
¼ cup white sugar
2 tablespoons cornstarch
1 cup cold water
1 teaspoon vanilla extract

Steps:

  • Grease a microwave-safe 2-quart casserole dish.
  • Mix flour, brown sugar, oats, graham cracker crumbs, and cinnamon together in a bowl; stir in butter until well mixed. Press 1/2 the oat mixture into the prepared casserole dish. Spread apples and blueberries over oat mixture; drizzle with lemon juice.
  • Stir white sugar and cornstarch together in a microwave-safe bowl; mix in water and vanilla extract until smooth. Heat sugar mixture in the microwave, stirring every 45 seconds, until sauce is thick and nearly clear, 2 to 4 minutes. Pour sauce over fruit layer and sprinkle remaining oat mixture over top.
  • Heat in microwave at 70 percent power until fruit is tender and juice is bubbling, 8 to 10 minutes. Cool slightly before serving.

2 sticks margarine
2 cups self rising flour
1 1/2 cups chopped pecans
Filling
8 oz Philadelphia Cream Cheese, softened
12 oz Cool Whip
1 box confectioner's sugar, sifted
1 large can blueberry pie filling for topping

Steps:

  • Mix 1st three ingredients for crust. Spread in 13x9 pan. Bake 15-20 minutes at 350°F. Cool.
  • Mix 1st three filling ingredients. To do this, be sure to let the cream cheese soften. Cream together with Cool Whip. Slowly add in the sifted sugar. Mix together until smooth. Once the mixture is smooth, spread it over the crust. Pour blueberry topping onto cream cheese/Cool Whip mixture.
  • Refrigerate 2-3 hours before serving.
